    This is a reliable place to sample one of Hanoi‘s indigenous classics: banh cuon, or steamed rice rolls stuffed with minced pork and chopped wood-ear mushrooms. Less a restaurant, more a hole-in-the-wall with a few tables and chairs strewn around, this venue makes up for its lack of sophistication with giant-sized portions of the delicate rolls.

    Set among all the best shopping in the Midwest, the Thompson’s midcentury-style guest rooms with hardwood floors provide the perfect minimalist location to unbox those favorite finds from Michigan Avenue around the corner. Digital nomads can book their work meetings in one of the rooms named after the Chicago Seven: countercultural anti-war protesters charged by the U.S. federal government with conspiracy and intent to incite a riot to stop the Vietnam War. The Abbie Hoffman room is a favorite.

    This airy, elegant Richmond eatery celebrates the fusion of French and southern-central Vietnamese cultures in its look and menu. Chef/owner Lan Do and her team painstakingly bake baguettes daily and simmer beef bones for 12 to 15 hours for the pho stock, enriched by onion, ginger, shallots, star anise, cinnamon and cardamom. Another standout: the banh khot, petite savory rice crepes tinged with turmeric that cradle shrimp. Finish with macrons and a TWG tea from Singapore. Note: Bánh Mì Très Bon has slightly elevated prices for a restaurant tucked near the Walmart Super Centre, but that’s only because it sources as locally, sustainably and organically as possible—the same nutritious food Do would serve her own family.

    XBB, as locals call it, occupies a remodeled and brightly furnished former gas station in the Elliotborough neighborhood. Catering to its surfer clientele with Nicaraguan beer, the spot also offers a constantly changing menu of authentic Asian fare. Order the Vietnamese-style shrimp toast, a purée of local shrimp, fish sauce, garlic, ginger, lime leaf, and chilies spread on baguette slices, then pan-fried—crispy and satisfying.

    Hanoi is not, by any stretch of the imagination, a pulsing all-night city. People rise early and go to bed early here in the northern hub. Nevertheless, unrepentant night owls aren’t totally neglected. This institution doles out passable western and Asian fare 24 hours a day, meaning that it’s easy enough to soak up all those bias with some quality grub. The coffee is spot-on, while the breakfasts are a thing of legend in Hanoi.

    Skip the night markets if you’re after authentic handwoven textiles (most of what’s there comes from Thailand and Vietnam) and instead make a beeline for Weaves of Cambodia. Located in a sleek contemporary store attached to the Angkor Hospital for Children, the proceeds from your purchases go directly to the hospital, which provides free medical care to Cambodian kids an the disabled weavers of Preah Vihear who make these beautiful handwoven textiles, garments, accessories, and woven products, like cushions. I love the large vibrant textiles which make wonderful wall hangings and sideboard runners, however, there are also small inexpensive embroidered purses and wallets, like those above, that make great gifts that give back.

    Though the venerable Vietnamese leader asked to be cremated, Ho Chi Minh’s remains now reside embalmed inside this imposing, pillared, gray-granite memorial. His resting place is hugely popular, drawing Vietnamese in droves as they pay their respects to the most important figure of contemporary Vietnam. The mausoleum only opens in the mornings, and visitors must abide by a number of rules (these include no hats, no shorts, and no photos inside). Yes, it’s a chance to see the actual remains of a hugely influential leader, but the experience of queuing up for entry is also a way of mingling with ordinary Vietnamese.

    For something different from Laguna’s typical California fare, head to Starfish, where you can get dishes from Thailand, Vietnam, China, Korea, and India. The menu features Thai classics like tom kha gai soup and green papaya salad, as well as Vietnamese favorites like rice noodles and beef broth with galangal ginger and lemongrass, pok-pok wings, and bahn mi. The gastronomy is notable not just for proven comforts, or even because of freshly harvested ingredients from the garden they maintain in the town of Hidalgo, Morelos; you’ve also got Chef Somri “Anna” Raksamra’s hand when it comes to seasonings. Start out with chicken, beef, pork, and shrimp skewers that you charcoal-roast on a colorful, open-air cart (an homage to food carts that abound along Thai streets). For dessert you’ve got a sweet potato tart—something you won’t find anyplace, anywhere in Mexico City.

    This labyrinth of tunnels between what were North and South Vietnam during the war is a testimony to the defiance and ingenuity of the Vietnamese resistance. Vinh Moc was a village that the U.S. troops believed to be sympathetic to the Communist North, so when the Americans planned to remove the villagers, the locals dug tunnels to relocate their abodes underground. What resulted is a tight warren of underground paths stretching more than a mile in total, some as deep as 100 feet below the surface. The subterranean village included kitchens, rooms, and wells, and was home to more than 50 families; a number of children were even born in this subterranean hamlet.

    It took ages to find the (much acclaimed at AFAR) sunken B-52 bomber in Ha Noi. The twisted pile of metal hardly resembles a plane anymore, but it was interesting nonetheless. Even more fascinating to me was the ‘lake’ it had fallen into. This emerald green pool was literally bubbling from some mysterious living sludge... I half expected the three-eyed fish from the Simpsons to crawl out! It was awesome.

    The Sugar Palm restaurant is the first Cambodian restaurant that many visitors to Siem Reap try, and it often becomes a favorite. The food is some of the most delicious, traditional, home-style Cambodian food in the country. It also happens to be served in a very traditional, Khmer teak-wood house, with high ceilings and wide verandahs—oozing atmosphere.


    Everything on offer is scrumptious, from the amok trei or fish amok, to the hearty Cambodian chicken curry. If you’re not a fan of pungent and sour flavors but want to try one of Cambodia’s quintessential ingredients, prahok (fermented fish), then this is the restaurant to do it. The prahok k’tis (a minced pork dip made with prahok) is a fairly tame albeit still very tasty iteration of the dish. The owner-chef, Cambodian-New Zealander Kethana Dunnett, is often around if you have questions about the cuisine. Kethana is the go-to person for celebrity chefs -- from Gordon Ramsay to Luke Nguyen -- when they are in the country filming food programs, and she certainly knows her stuff.

    The main draw at this Australian-run spot is the convivial and bohemian atmosphere. Housed in a stunning 1920s colonial villa in a quiet part of the Old Quarter, the cafe has a rustic, warm vibe. While items from the simple menu can be hit or miss at other times of the day, the breakfast offerings are exemplary and the coffee is right on the money.

    Located on a half-mile stretch of white-sand Ha My Beach, a short drive from the UNESCO World Heritage town of Hoi An (a hotel shuttle can ferry you back and forth), the Nam Hai sits on the grounds of a former fishing village (a temple from that time is preserved on-site), and it still feels like a community. Guests bike between public spaces designed to evoke the high-ceilinged Tu Doc royal tombs found in the region, as well as 86 acres of tropical gardens and 100 villas, each outfitted with indoor/outdoor lounging spaces, king beds, lacquered bathtubs, and alfresco showers. The dining options range from a casual beachside spot to a fine-dining restaurant, and serve everything from Vietnamese and Western fare to Indian tandoori specialties; learn how to make some of your favorite dishes in a chef-led cooking class, or join the kiddos at the Junior Cooking Academy, part of the kids’ club.     Louise Loubatieres’ gorgeous light-filled little concept store on increasingly hip Hap Guan Street is one of those stores you can easily lose hours in. The fascinating shop is located in self-styled Kandal Village, a compact neighborhood of three parallel streets wedged between the French Quarter and Old Market area that has become an emerging shopping, eating and drinking district. The lovely Louise, who can often be found out the back of the shop baking or making a pot of tea, is of Cambodian, French, British, and Vietnamese heritage, and her ancestry is reflected in her impeccable taste and passion for arts, crafts, textiles and design objects from Southeast Asia, and her carefully curated selection of beautiful things. Unlike some of my favorite shops, Louise doesn’t limit herself to ‘made in Cambodia’ products, and won’t hesitate to source pretty things from places like Chiang Mai or the Mekong Delta if she discovers something special. Louise largely stocks homewares, from colorful lacquer bowls to textiles that can serve as table runners.
