    Coco frios are sold on every corner during the high season (fall and winter) in Puerto Rico. Cold, fresh coconut water is the lifeblood of island living. Literally, if you were ever stranded on an island, you could sustain yourself on what’s inside a coconut (just ask Les Stroud). There is a difference between coconut water and coconut milk. Coconut water is clear to translucent and not as sweet—you harvest this from a fresh green coconut that has just fallen, or is ready to fall from the tree. It might taste unusual at first if you have never tried it, but this is actually the best form of natural electrolytes to replenish yourself after a workout or surf session. Watch the roadsides for the carts and folks with machetes—because this is your hint that coco frios await you!

    Cocktail bar-restaurants typically excel at one or the other, rarely both tipple and nibble. Four month old Tales & Spirits, located in the beating heart of Amsterdam, manages to succeed on both fronts. The cocktails are both creative in name and flavor (I opted for a Fallen Lady with vodka, deep fruit flavors and a dusting of chocolate and pepper), affordable and strong for the initiated cocktail lover. Spa still water is offered on the house with each drink ordered- a nice touch when the alcohol bill starts climbing. While I enjoyed my drink, it was the food menu that caught and held onto my attention. My truffle and wild sautéed mushroom risotto was impeccable in taste and size, leaving me sufficient room to test out one of their desserts of the moment. Most of the dishes on the menu are small so prepare to order several to share. And, of course, given the spot’s short order popularity, it’s wise to book ahead.

    Marrakesh’s spice shops know how to attract custom – colourful pyramids of spices and herbs are proudly displayed outside to entice the shopper. If you want to take home a taste of Morocco, these are the places to come to. Ask for ras el hanout (‘top of the shop’, a special blend of up to several dozen spices) that gives Moroccan cuisine its distinctive twist. Every shop and kitchen has its own particular blend, but cumin, cinnamon, allspice and cloves are all essential ingredients. Moroccan saffron is also an excellent buy. Many spice shops double up as apothecaries. Herbs, bark, mineral and infusions are all offered to cure anything from headaches and skin complaints to impotency – a truly spicy offering.

Can Talaias, a large finca-turned-B&B, pushes its ‘agrotourism’ credentials and certainly the home cooking, with eggs and veg straight from the garden, is a powerful attraction. But it has a rather more glamorous draw too. The beautiful interiors of this 1960s villa suggest that someone with both money and taste had a hand in its making; and the photos on the wall reveal who. Comic actor Terry Thomas fell in love with Ibiza after his Hollywood pal Denholm Elliott introduced him to the island; this bohemian pad was his escape from an actor’s life. And his friends came to visit in their droves - Terry Thomas’s parties were legendary, and his swimming pool was one of the first to be built on the island. Somehow, that slice of history makes hanging out at this luxury rural retreat even more enjoyable.

    Not far from Kelowna driving along Lakeshore Drive and passing aging vines of lush with grapes for harvesting, sits the goats of the Camelis Alpine Goat Cheese Artisan. Exiting the vehicle you hear the playful singing of goats in the distance sensing the arrival of someone new. On a fall day the blue Okanagan Lake and the autumn colours create a visually robust cornucopia and you can’t do anything but drink it in. The gift shop is similar to an old fashioned western candy store as the entire building is a converted farmhouse. To my right is a display of local olive oils and vinegars. To my left is an enticing display of house made goat cheese gelato and before me is an array of goat cheeses that I didn’t know existed. From goat cheese with delicious ribbons of mouldy blue, a goat cheese that mimics a camembert and a yogurt cheese ideal for spreading there is a cheese to match all tastes.     Here’s a novel concept; markets that pop up around the island in different locations each day of the week. I shot this while wandering the Monday Market near Saladan Village (the main settlement) on the northern tip of Koh Lanta. Despite the market’s proximity to the island’s main tourist hub, it was surprisingly void of foreign visitors. The Monday Market is run by locals and caters to local tastes - which makes it a fantastic place to explore with a camera. I don’t often make images of children (I scare them, I guess), but I couldn’t resist firing a few frames of this girl in the fruit isle. It’s a departure from the grittier market fare I often come home with - perhaps that’s why I’m so fond of such a simple picture. Insider tip: a smile takes you a long way in a Thai market - and often leads to more free samples than you find at Costco on a Saturday. Be polite, and try anything your gracious host offers you, including roasted beetles and/or funky durian fruit.

    On weekend nights, The Palm Court at the Langham Hotel, London’s classic spot for afternoon tea, transforms into a speakeasy-style gin bar. Sipsmith’s Jared Brown (featured in the October 2012 issue) worked with the Langham’s mixologist, Alex Kratena, to devise a menu that gives drinkers a quirky history lesson and showcases the complexity of Sipsmith Gin. The journey begins with the story of how gin was invented to save the citizens of London from their contaminated water supply, fizzes through Jean Jacob Schweppes’s invention of carbonation (five different levels for different digestive ailments), and ends with modern mixology. Those who don’t care for history lessons might be swayed simply by the menu’s drink descriptions.     The wording is irresistible: “Get a taste of history.” On the grounds of one of the oldest Spanish missions (est. 1691) in Arizona, tortillas cooked over a mesquite fire, in the shade of mesquite trees, steps from an adobe church--this is Tumacácori. Drive about an hour south of Tucson. Just 20 miles from the Mexican border, this mission/Nat’l Historical Park was originally established by the Jesuits. The remaining structure (surprisingly intact) dates from the early 19th century, when Franciscans and the native Tohono O’odham stacked some ninety thousand adobe bricks together to build their church. Spaniards and Basques settled the Santa Cruz River valley, missionaries brought fruit trees and foreign religion...After the Colonial period, support from the government in Mexico dwindled, Apache attacks increased, and by the 1850’s, when the U.S. acquired this territory, the mission had been abandoned.     Opened in 1997, Jumeirah Beach Hotel is one of Dubai’s first modern resorts. The broad, wave-shaped tower sits next to a white-sand beach with a full flight of water sports, and it gets year-round traffic including many sun-seeking Russian package tourists and British families. Despite a capacity of more than 1,200 guests, the hotel has enough pools and restaurants to absorb the crowds. The guest rooms are still some of Dubai’s largest (that’s saying a lot), and the hotel is a convenient 20-minute taxi or free shuttle ride to the Gold Souk on Dubai Creek, or to the Mall of the Emirates, site of Dubai’s famous indoor ski slope. Kids will want to maximize their time at the Wild Wadi water park just up the beach, where Jumeirah Beach Hotel guests enjoy free entrance. Couples migrate to the 24th-floor Uptown Bar patio for cocktails and breezy views of the Persian Gulf and the lights of Dubai’s iconic skyscrapers, including the Burj al Arab and Burj Khalifa.

    Hytra serves nouvelle Greek cuisine at its finest, in a location inside the Onassis Cultural Centre (and, in the warmer months, atop it). The name “Hytra” comes from the ancient Greek word for a terra-cotta vase, but there’s nothing old-fashioned about this Michelin-starred restaurant: Chef Tassos Mantis reimagines Greek classics in his adventurous tasting menu (eight or fourteen courses, paired with Greek wines) or ambitious mains like milk-fed lamb served with quinoa and mastic yogurt. Incredible views and excellent service, too.

    With a bakery on every other corner in even the tiniest villages in Belgium, what makes one stand out more than another? The answer is threefold: hand selected organic ingredients; skills built on tradition, passed from generation to generation and, most of all, the passion to create the perfect loaf of bread. All three of these are present at the Boulangerie Legrand in Namur. Baker, Dominique Legrand, has been baking bread since he was 18, but the history of the Legrand Bakery runs much deeper. Six generations ago, in 1831, Dominique’s ancestors founded Boulangerie Legrand and little has changed since those days. Dominique and his wife, Angela, had a mission when they took over the Boulangerie Legrand and moved it to its current location in Namur. Their goal was simply to create the finest breads from the best ingredients they could find. This is the reason people drive all the way from Brussels and even as far as Northern France, just to buy their breads. Some of the grains come from as far away as Egypt and their natural fermentations take anywhere from 18 to 24 hours. These are live breads and we could taste the difference, as the flavours danced on our tongues. From deceptively simple baguettes to sweet brioches to rich loaves made of chestnut spelt, it was impossible to choose a favourite.     Opened in 2015, this colorful spot from NYC-based The Library Collection celebrates music—and music lovers. Set in the historic city center, near pedestrian dining and shopping streets, the restored 19th-century bank now houses 48 rooms and suites spread over four genre-themed towers. Each accommodation is named for musical legends in that theme, so think names like Puccini in the Opera tower, Billie Holliday in Jazz, Prince in Contemporary, and Chopin in Classical. The decorative style and details vary slightly depending on the genre (Classical rooms have Murano glass chandeliers, for example, while Jazz ones have Art Nouveau-inspired furniture), but aside from caricatures of the featured artists and related books and CDs, the vibrant décor isn’t kitschy or themed. Instead, guests can expect luxurious comforts like high-end (and customizable) bedding, home theater-grade entertainment systems (linked to a digital music library), onyx-lined bathrooms, and Handy 4G phones for complimentary international calling.

    By all means, eat some grits ‘n’ greens down South...but don’t fall into the trap of thinking that all local food is fried when traveling in the region. Check out Manuel’s--one of the culinary highlights along the Savannah River in Hammond’s Ferry, SC. Originally from Lyon, chef/owner Manuel Verney-Caron has created a neighborhood gathering place that features local produce from literally just up the street at “Blue Clay Farm.” This community garden is one of the centerpieces of the “New Urbanism” that has built this pedestrian-friendly neighborhood near the site of a late-18th-century water crossing. Jog along the river, stroll on sidewalks within ‘conversation-distance’ of front porches, kneel down among the chickens and ducks--and make sure to end up at Manuel’s. The residents of Augusta, GA have voted Manuel’s as having the best bread in the city--you can chew on his loaves in restaurants around town and buy them at the Saturday morning Farmer’s Market at the Riverwalk. Technically, though, Manuel’s is out-of-city and out-of-state--but it’s a quick jaunt to North Augusta, SC. Go to the source, and there’s much more than bread: duck confit and croque-monsieurs are served along with burgers and pulled-pork BBQ at lunch; a more substantial taste of France can be indulged at dinner in this bouchon-inspired interior. Most visitors to Augusta come for The Master’s Golf tournament; leave the chain-restaurants around the Augusta National--the drive to SC is worth it.

    It hardly seems like Hawaii could be a part of the United States without its own brewing company. The most popular brewery is the Kona Brewing Company on the Big Island. With its year-round beers including Longboard Island Lager, Firerock Pale Ale, and Big Wave Golden Ale, the brewery sells mostly within the Islands, though its year-round beers can be found elsewhere. Kona Brewing Company also produces three seasonal “Aloha Series” beers that include Koko Brown Ale, Wailua Wheat, and Pipeline Porter. Along with their selection of five “Island Only” beers, connoisseurs will have plenty to taste and may need an extra visit or two to the Brewery! Tours of the brewery can be booked from 10:30am to 3pm daily.
