    It’s not that vegetarians aren’t welcome at Costa Mesa restaurant Vaca. It’s that they may not feel the same unbridled excitement as those who enjoy expertly prepared meat and seafood. The innovative lunch and dinner hot spot owned by former Top Chef contestant Amar Santana celebrates Spanish cuisine, from Andalusia, Seville, Madrid, Barcelona, and the Basque region to be precise. The call at lunch is the $28 three-course prix fixe, which changes weekly. Dinner brings an almost paralyzing array of decisions: unparalleled dry-aged rib eye (the restaurant’s name, after all, is Spanish for “cow”), seafood paella, or a collection of tapas such as sea urchin with scrambled eggs, served in the spiky shell with caviar. To accompany it, pick from one of the three drinks on tap: a house vermouth, a red sangria, or a signature gin cocktail named after the restaurant. Tucked between the Segerstrom Center for the Arts and the South Coast Plaza, the restaurant is great for preshow dinner or post–shopping spree lunch. Pro tip: If you’re with a group, request a circular booth; if you’re a pair, go for the heated patio or the bar.

You can order your own wine bottle, of course, but the proposed pairings are highly recommended. The warm-toned surroundings and multinational staff ease you into the restaurant’s vibe. For these reasons and more, Lasai—one of seven Michelin-starred restaurants in the city—merits your visit.

    The Review:
    Romantic and luxurious, this tented camp transports guests to the Kenyan safaris of the 1920s and 30s. On the edge of the gorgeous Masai Mara, the secluded property was completely renovated in 2018 and now comprises two camps, each with nine tented suites featuring polished wooden floors, en-suite bathrooms with indoor and outdoor showers, and copper bathtubs with views of the night sky. Classically elegant, the tents also come with private wooden verandas overlooking the vast, game-filled plains; personal butlers who attend to every whim; and thoughtful details like handcrafted artifacts, map-inspired wallpaper, yoga mats, and a butler hatch for delivering morning coffee or tea.

    Elsewhere on site are two swimming pools; a common sitting area outfitted with leather Chesterfield sofas and fine antiques; a state-of-the-art gym with views of the Mara; a massage room; a gift shop stocked with local handicrafts; and a stylish bar for Kenyan coffee and top-shelf gin. Of course, guests are really here to see the Mara’s magnificent wildlife, and while they can spot several animals on site, they also enjoy twice-daily game drives, as well as night excursions and bush walks (permitted because the lodge is on a private concession). Additionally, guests have access to breakfast and sundowners in the bush, Maasai talks and fireside dances (much of the staff is from the local Maasai tribe), the educational WILDChild program for kids, and visits to nearby schools or villages for an authentic look at life in the African bush.

    The massive ruins of Caracol were once a major Maya metropolis in prehispanic Belize, during the Classic Period. The majority of the site is yet to be reclaimed from the forest, but the structures that have been uncovered are truly impressive. The main structure is still the tallest building in all of Belize and places you “on top of the world.” The jungle surrounding the site is teaming with wildlife, and a pair of binoculars come in handy. The ruins are located south of San Ignacio along the rough Mountain Pine Ridge Road. There are several worthwhile stops on the way, such as Rio Frio Cave and Rio On Falls, but the best stop is a cool libation at the Blancaneaux Lodge Bar.

    It’s fun to imagine that Xcalak, a sleepy coastal village south of Mahahual on Mexico’s Costa Maya, is what the entire Caribbean coast of Mexico looked like before the creation of the Cancún megaresort in the 70s. No Spring breakers, no cruise ships, no thumping beachside clubs, no big hotels. Just white sand and palapas, palm trees and pelicans, hammocks and fishing boats. Just you in secluded relaxation away from it all. Several clean and basic hotels are located on the old coast road and fresh, cheap seafood is abundant at local favorite Toby’s. Dive and snorkel trips can be arranged at XTC Dive Center (www.xtcdivecenter.com), located about 300m north of town.

    Tours of the Sacred Valley, and the entire Cuzco area, often feature side trips through gorgeous landscapes like Moray, an archaeological site with remarkable concentric agricultural terraces. It’s believed the Incas used these terraces—on which temperatures vary 59 degrees Fahrenheit from the top tier to the bottom—as a way to acclimatize non-regional crops for highland cultivation. Even if you don’t find that fascinating, it’s hard not to appreciate the beauty of the spot, and given that this part of Peru is not so heavily visited, it’s a nice escape from the beaten path.     A year ago I had dinner at the Clifton, then under the supervision of Tucker Yoder. Mr. Yoder was elsewhere that evening, but I spent several hours at the “chef’s counter” in the kitchen, watching executive sous-chef Jarad Adams work his own delicious magic. Naturally Mr. Adams was meticulous with his food prep, but he was also surprisingly generous with his time for me. Imagine my delight when I returned this year to find Mr. Adams had been promoted to Executive Chef. On this visit, Mr. Adams’s tasting menu showed the same attention to detail as I remembered, but with a greater sense of adventure — even whimsy. From the amuse bouche (a spoonful of polenta topped with pork belly, apple, and a sprig of fennel) all the way through to the sticky toffee pudding with candied pecans, dates, and caramel ice cream for dessert, I was enchanted. The tasting menu consists of four courses and varies by the season. My first course was a toss-up between the butternut squash and apple soup and the shaved winter vegetable salad with hazelnuts, black cocoa, and a buttermilk dressing. I had no regrets about my choice of the salad, especially as butternut squash was the foundation of my next course: the most perfectly seared sea scallop I can remember. From there it was onto monkfish with beluga lentils, with Brussels sprout leaves dancing on top. Mr. Adams knows what he’s doing in the kitchen, and the Clifton — and Charlottesville — is lucky to have him.

    Quinta da Pacheca is the poster child of an ancient winery being adapted to the modern demands of the modern wine traveller. The main houses in the centre of the estate was recently renovated into a chic - boutique - luxury wine hotel. It very elegantly mixes some modern and contemporary elements in a way that one can understand that the owners never lost touch with the Quinta’s heritage. The restaurant is proudly served by Chef Carlos Pires, a man from the interior Northwest of Portugal (Trás-os-Montes - my favourite part of the country) so traditional bold Portuguese flavours are in the main driver in an elegantly plated menu.

    A hot lobster roll from Neptune Oyster is summertime heaven on a butter-soaked brioche, and bivalve lovers queue up daily to sample the two dozen varieties of oysters chilling in the front window of this diminutive North End restaurant. Fresh-off-the-boat fish and creative takes on New England seafood are the draws here—the clam chowder is made to order, the fish-and-chips uses Acadian redfish (not cod), and it’s probably the only place in town where you can get lobster tacos. Yeah, it’s pricey—hot or cold, the lobster roll will set you back around $30—but share the Neptune Plateau raw-bar plate with your friends and you’ll truly feel like the king of the sea.
