    Today, Québec City is decidedly francophone. While 50 percent of Montreal‘s residents describe their mother tongue as only French, the figure is 95 percent for Québec City. This was not always the case, and for much of its history the city had a significant anglophone minority. The Morrin Centre is one reminder of that period. In 1868, the building, which had been used as the town’s jail (the old cells are included on tours of the building), was renovated to become Morrin College, an affiliate of Montréal’s McGill University. It offered instruction in English, though it would be forced to close in 1902 as the number of students interested in an English-language education dwindled. The institution lives on as an English-language cultural center, and book lovers should be sure to visit the elegant library, established the same year as the Morrin Centre by the Literary and Historical Society of Québec, Canada’s first learned society.

    The San Francisco Proper Hotel is the hottest new hotel in town. The reason why? International grande dame of maximalism, designer Kelly Wearstler, revamped a down-and-out tourist hotel deep in the heart of the city, and established the Proper as a magnet for trendsetting visitors and locals. When guests arrive at the 131-room hotel and step inside the flatiron building, they’re treated to Wearstler’s signature pattern-on-pattern aesthetic. In the ground floor lobby, Wearstler sets the mood with salon-style seating areas using richly reupholstered vintage furnishings and Cubism-inspired paintings. Michael Adams, formerly of Central Kitchen, oversees the hotel’s main restaurant, Villon. And while the Proper isn’t the place for those looking for a Zen retreat, it is the place to order a Fifi the Flea cocktail (Tequila Ocho Plata, Ancho Reyes, Ancho Reyes Verde, grapefruit, honey, vanilla, lime, smoked salt) at Charmaine’s, the stylish rooftop bar. Between the fire pits and the bird’s-eye view of Market Street all the way to the bay, it’s no wonder the Proper has become the destination to see and be seen.

    If chef David Barzelay’s Michelin-starred restaurant Lazy Bear is the dinner party, True Laurel is the after-party. Barzelay opened this cocktail bar just a few blocks from Lazy Bear, and while it’s touted as a drinking establishment, it’s hard to ignore the stellar food disguised as bar bites. And unlike Lazy Bear, which requires a hard-to-come-by ticket to get in, to score a spot at True Laurel, simply walk through the door. Barzelay teamed up with spirits-whisperer Nicolas Torres to oversee the bar program, and the cocktails go head-to-head with the food. Original, exotic concoctions such as the A-Dilla, which marries aquavit with makrut lime leaf, coconut, passion fruit, pomegranate, and dill, is just as complex and satisfying as the hen-of-the-wood mushrooms with a sour cream–allium dip. And while the entire experience is currently still first come, first served, keep an eye on the bar’s eerily analog website (or better yet, follow it on Barzelay’s preferred medium, Twitter) to find out when the eight-seat cocktail tasting bar, which is sure to be stocked with rare bottles, will start taking reservations.

    This small-production and boutique winery near downtown Sonoma has achieved cult status in recent years for the exclusivity of the experiences that owners (and brothers) Andrew and Adam Mariani have put together. Standard tastings run about 90 minutes and include four current-release wines paired with four food courses served family-style. On sunny days, the tastings unfold on open-air patios in the shade of big white umbrellas; when the weather is less than stellar, guests are greeted and served in one of the many rooms of the circa-1858 hacienda. Reservations are only accepted by phone and often book out weeks in advance, especially in summer. For an even more intimate experience, reserve seats for one of the many pop-up dinners pairing Scribe wines with multiple courses prepared by visiting chefs who come in for brief residencies. The Marianis espouse organic and biodynamic farming methods and non-interventionist winemaking techniques, which translates into distinct fruit-forward estate wines that rarely overpower. Pro tip: Most visits don’t include tours, but if you book an early morning tasting midweek, you might get the chance to explore the hacienda before the formal visit begins.

    English explorer and draftsman Frederick Catherwood and American adventurer John Lloyd Stephens were the first foreigners to rediscover Copán and numerous other Maya cities. Catherwood’s extraordinary lithographs, on view at the Catherwood House Museum, portray those monuments as they appeared when the pair first witnessed them; the institution’s Belle Époque setting transports visitors to Catherwood’s day and conjures the wonder he experienced as he wandered the Maya world of Mexico and Central America. A coffee enjoyed in the courtyard and a poke through the elegant gift shop are icing on the cake.

Enjoy the Spanish fanfare like a local: from a plaza bench with an ice cream cone.     With its domed greenhouses of epic proportions dotted across some 100 hectares (250 acres), the sustainable Gardens by the Bay are educational and fun. The Cloud Forest is a misty, 42-meter-high (138-foot-high) “mountain” that re-creates tropical highlands; visitors use ramps to explore around and through them. A biosphere of Mediterranean and desert plants, including huge baobab trees, makes up the Flower Dome. Outdoors, guests walk on suspended walkways between steel-frame “Supertrees” that are covered in solar-powered lights.

    While much attention is paid to the Japanese and Italian influences on Los Cabos cuisine, one of the very best spots in town is an Argentine entry. The low-key, low-lit courtyard restaurant Chamuyo features a dozen or so tables, a long bar, and a traditional Argentine grill. The steak-house menu sends you on a culinary adventure through Buenos Aires dance halls and the verdant pampas. Meat-stuffed Argentine empanadas (markedly different from the Mexican variety) are served oven-baked or fried, and make excellent starters. For your main course, try chef Marcelo Romby’s 22-ounce beef ribs, which he slow-cooks for more than four hours. Pair it with a bottle of Baja red and, if you can, save room for some first-rate alfajor cookies.

    Arabica coffee beans, one of Tanzania’s largest exports, are widely grown in the rolling foothills of Mount Meru, outside Arusha. The Arusha Coffee Lodge offers tours of its estate to show how these beans are farmed, harvested, and dried. The lodge offers accommodations in their 30 plantation cottages, tucked among the lush green coffee fields. A beautiful on-site bistro café, which opens out onto a garden terrace, serves full meals or just a cup of very locally sourced coffee. Don’t forget to stop in and browse or visit the workshops at Shanga while you’re here: This social enterprise employs people with disabilities to create handcrafted goods.

    Keswick Hall was originally built in 1912 as a family estate and was later a country club before being transformed into a country hotel in the 1990s, and it continues to evolve as a luxury resort in its second century.     The Riviera Maya’s most beautifully styled adventure park begins with a reception area inside a natural cave. Tours here include Latin America’s highest zip lines over the tropical forest, amphibious vehicles you drive through caves and jungles, and swimming and rafting through underground rivers. Though Xplor is a family-friendly attraction, it may be better suited to teens and adults because of the physical activity required. If you don’t have all day, book Xplor Fuego, the nighttime admission: Temperatures are cooler, torchlight adds an exotic touch, and you soar over the trees by moonlight.

    Baseball had nothing to do with the naming of Fenway Park: The stadium gets its moniker from the nearby Back Bay Fens, a stretch of saltwater marsh in the heart of Boston that was landscaped into a park by Frederick Law Olmsted. The Fens are among the wilder parts of the Emerald Necklace, 1,100 acres of parklands running from the Charles River to Brookline that include familiar spaces like the Boston Common and Boston Public Garden but also less-traveled (by visitors, anyway) sections like Olmsted Park, Jamaica Pond, the Arnold Arboretum, and Franklin Park. The arboretum, part of Harvard University and established in 1872, is one of Olmsted’s most unaltered terrains, with paths running up and around 261 acres of woodland interspersed with a curated collection of trees, plants, shrubs, and vines native to New England.

    Right outside the town of Teuchitlán, Jalisco—about an hour west of Guadalajara—is one of western Mexico’s most impressive archeological sites. Discovered in 1969, Los Guachimontones includes a series of unusual conical pyramid structures, built around 2,000 years ago by the relatively unknown Teuchitlán people. The largest pyramid is nearly 60 feet high, with 52 steps to the top. You can visit this UNESCO World Heritage Site for free but the on-site museum charges a small fee.

    Restaurants abound in the heavily touristed Gothic Quarter, but few of them are particularly good. Irati is one of the exceptions, a bustling spot popular with locals thanks to its excellent pintxos, traditional Basque tapas served on bread and speared with a toothpick. There’s seating in the back, but you’re really here for the experience of eating pintxos, which means standing shoulder-to-shoulder at the bar and helping yourself to the buffet of bite-size offerings. A sure bet is the jamón, lightly drizzled in olive oil, and the blue cheese topped with quince paste and walnuts. Save room for the hot snacks, like ham-and-cheese croquetas, which are brought out at regular intervals from the kitchen. And don’t toss your toothpicks—that’s how the bill is tallied.
