  • Often described as the Grand Canyon of the Pacific, this 10-mile-long Kauai valley is a kaleidoscopic array of scarlet earth, verdant valleys, and raw volcanic crags. Bands of color streak the corrugated landscape, each representing a different eruption and layer of lava. Waimea Canyon Drive has a series of lookouts; among the most popular is Waimea Canyon (past the Mile 10 marker on Highway 550), where a number of rivers once cascaded down the gently sloping shield volcano. When part of its flank collapsed, the rivers combined with dramatic results. Continue into the mountains to explore Koke’e State Park beyond. Its small, free museum contains a 3-D map, which sheds light on the canyon’s wild beauty, while the gift shop specializes in local art, crafts, and Niihau shell jewelry.

The building itself was originally a private waterside home constructed in 1652—some 40 years after the first English settlers arrived to Bermuda—and it has operated as restaurant for more than a century. The name comes from the married Irish poet who lived here and spent his days on Bermuda composing love poems to local women. However, don’t let the tavern in the name fool you: The cuisine and vibe here is haute, and the menu showcases French influences on island favorites, as well as traditional Bermuda fish chowder and grilled meats; if they’re listed on the day’s menu, the soufflés are a must-try. There’s no longer exactly a dress code (the emphasis is on “elegant casual”), but like everything in Bermuda, it is best to err on the side of formal.

    Wymara Resort Turks & Caicos (formerly the Gansevoort aims to be as much a scene as it is a hotel. Of course, with tots wandering through the lobby with sand buckets, it isn’t quite the party you might have in South Beach or NYC. But then, trendy urbanites don’t have this—the white-sand beach of Grace Bay, or an infinity pool with wood-deck islands that can be reserved for sunbathing, private dining, or just making everyone else feel less important. The 91 rooms are designer chic, with an open floor plan and plenty of space to stretch out. Also available for booking are seven luxury oceanfront villas, located on an elevated hillside overlooking the bay and Turtle Tail. Each features four to five bedrooms as well as two private pools, expansive indoor-outdoor living areas, sunken outdoor lounge areas with firepits, and over-the-water swimming platforms with direct ocean access. Stelle, the Mediterranean-influenced restaurant, has a DJ who spins on Friday nights. And Exhale Spa counterbalances the chill party vibe with sunset yoga in an outdoor pavilion.

    Within an hour, travelers can transport themselves from the lights and sounds of Central, Hong Kong, to the green hills and deserted beaches of Lantau Island. Opened in 2012, the Tai O Heritage Hotel encourages guests to immerse themselves in the natural beauty and history of Tai O, a colorful fishing village where stilted houses line the waterways of western Lantau Island. A collaboration between the government and the Hong Kong Heritage Conservation Foundation, Tai O Heritage Hotel was built in the former Tai O marine police station, from which officers defended Hong Kong from pirates for more than 100 years. Three buildings were transformed into nine guest rooms, an interpretation center, and a glass-roofed restaurant, earning the project a UNESCO award for cultural heritage conservation. Historic features such as cannons, guard towers, searchlights, and holding cells, as well as original architectural details like French windows, Victorian granite steps, a Chinese-tiled roof, and century-old fireplaces, were all restored in the process. The hotel also serves regional foods, employs villagers, and gives back to the Tai O community, demonstrating its commitment to celebrating the local culture. Beyond the historic walls of the hotel is a mystical landscape with dozens of butterfly species, Chinese white dolphins, and Hong Kong’s best sunsets.

It takes driving as far as possible (only about 40 minutes) from the tourists on the east side of the island in Nassau to find this moving piece of art, appropriately titled, “Sacred Space.” Located only a few hundred yards from the ruins of old slave quarters, and just above where the slave ships used to dock, these faceless carvings silently stare back across the ocean toward Africa. Trees that typically erode the coastline were cut down to create these powerful pillars that are still rooted in the ground.

    My first night at Galley Bay, I decided to take in their signature dining experience at Ismay’s. This is their top-of-the-line restaurant. Menu items include baked escalope of mahi mahi with olive and pine nut crust parsley; roasted cherry tomatoes, chilled caponata, sweet potato wafers, and balsamic reduction; and gratin of shrimp, crimson grapes, fresh dill, and champagne cream. Certainly impressive names, but perhaps the most impressive is the name of the restaurant itself. You see, when the then unnamed restaurant was being built in 2008, employees overwhelmingly suggested it should be named after one of their own: Ms. Ismay Mason. Ismay had been with Galley Bay for 45 years at that time during which she’d never called in sick and was a steadfast member of the team and community at large. Five years later, when Ismay finally retired, the tribute to her contribution toward the exceptional vibe of Galley Bay continued with the formation of The Ismay’s Foundation which provides for further career training and education within the community. Incidentally, I had the grilled beef mignon and sauté of shrimp, fondant potato, lemon, parsley and white wine emulsion.

    This woman-owned artisanal aged-cheese producer was on the front wave of what is an increasingly vibrant local food movement. Wanda Otero, a microbiologist, decided to start her business in part to offer Puerto Ricans an alternative to expensive imported cheeses. She has since expanded into yogurt-making, and her products are now sold in supermarkets and found on the menus of the island’s finest restaurants. Travelers can visit the Vaca Negra facility for a tour, which includes the opportunity to make their own cheese.
  • Descended from horses brought over in the 16th century by Spanish conquistadors, hundreds of wild horses rule the little island of Vieques. The horses, an attraction in their own right, dot the landscape wherever you go. With every encounter, I couldn’t help but slow down and admire their beauty. They are naturally intelligent and curious, so don’t be surprised if they approach you or your vehicle looking for little treats. For a guaranteed encounter, look no further than Sun Bay—where I snapped this picture. Here, they graze, take frequent sand baths, and (if you’re lucky) cool their hooves in the blue waters of the Caribbean.

    One of the top spots to watch the sun set behind the islands that make up the Bacuit Archipelago, Cadlao Resort is also one of El Nido’s most enticing resorts. Most of the 25 rooms offer views of El Nido Bay or the South China Sea--but, for those sunsets, consider taking them in while taking a dip in the inifinity pool. Decor is spare but elegant, with pops of color all around. If you find yourself antsy to get off property, there’s no better spot than the resort’s private beach, a 45-minute boat ride away. After? Perhaps a spa appointment before dinner at the on-site restaurant, where the catch of the day arrives wrapped in a banana leaf.

The stark sculpture represents the azimuth of the first sunrise of that year, the new millennium, at this easternmost point of the United States. Point Udall also affords visitors panoramic views and marks the starting point of a hike that leads to the beach at Isaac Bay.

    Guidebooks often lack the practical pieces of advice that could save travelers some rather unpleasant moments, in the Greek Islands one such nugget of wisdom I missed in my reading was that after a late night fueled by Ouzo it is not ideal to ride in a high speed ferry. Thankfully the ferry ride from Mykonos to Naxos is a short one at under an hour. I was greeted at the terminal by part of the family that runs Hotel Grotto, a small retreat perched on the edge of the Aegean sea that would be my home while in Naxos. After weeks competing for beach chairs and being corralled down tight marble alleys in some of the more frequented islands, Hora (also known as Naxos Town) proved the perfect place to relax and experience Greece at a slower pace. Upon arriving to the hotel, the bags were taken out of my hand and replaced with a glass of wine made by “Pappa” along with local olives as I was led out to the pictured patio. The view from patio of the hotel is of the Portara, believed to be the beginning of the Temple of Apollo dated back to 530 BC and is an ideal spot to pack a picnic from the local grocery, and watch the sunset before heading into town for the night. On the walk back to the hotel rising above the town is The Venetian Castle Kastro. During the day it serves as a museum offering tours, on Sunday nights after sunset it hosts traditional music and dance made easier by the accompaniment of Kitron,a liqueur indigineous to the area.

    The vibe in Waikiki is the most frenetic of all the spots in the islands, but there is an escape. The scene at the current iteration of the classic Hawaiian hangout, Duke’s, is a step back even by Oahu standards. Best approached via the beach to enhance the original feel and avoid the mall-like carnival from the street entrance, this is the kind of bar that welcomes sand on your flips. Slip in for happy hour and be prepared to jockey for a spot. Even with the crowd, the music, the food, the drinks are all designed draw you back to a simpler time when Duke was still riding the longboard. I’m partial to the beers and french fries, but will never refuse a fish taco. With a long relationship with the Kona Brewing brand, I opt for the Longboard larger or Fire Rock Pale ale. The umbrella drinks don’t disappoint, but neither do the gin and tonics. The local musical talent that ply the stage at Duke’s are traditional Hawaiian in style and like to keep the island theme front and center. There is a family vibe to the musical community, much like the rest of Hawaiian culture, and it’s not unusual to get a sibling or cousin to come up on stage and do some traditional Hawaiian dance or help out on a song or two. There was an 8 year old girl that got asked to come up on one of our visits and she blew the crowd away! The strip a Waikiki can be a bit daunting in terms of relaxation, but Duke’s remains my refuge from the madness. Aloha.
