    To get a feel for Kerala’s rich and layered history, head to Fort Kochi. Once a small fishing village in pre-colonial times, this area—now the historic old town neighborhood of the city of Kochi—belonged to the Portuguese for much of the 16th and 17th centuries, then to the Dutch for a little over a century, then to the British until India’s independence in 1947. For all that time, the waterside spot served as an important port along the spice route, with Chinese and Arabian traders sailing through to pick up sandalwood, cloves, cinnamon, pepper, and other local goods. Today, Fort Kochi features myriad reminders of all who have lived and worked here: the Dutch cemetery, Koonan Kurish Old Syrian Church, and the 16th-century St. Francis Church, the Mattancherry Palace (aka the Dutch Palace), colonial Parade Grounds, still-in-use Chinese fishing nets, and the painted tiled-lined Paradesi Synagogue, built in 1567 and considered the oldest active synagogue in the commonwealth. The Indo-Portuguese Museum and Southern Naval Command Maritime Museum provide more context, while Fort Kochi Beach—with its colonial-era bungalows, Arabian Sea strand, and food stalls peddling the day’s fresh catch—draws both locals and tourists. Architecture buffs will love historic sites like Thakur House, Bastion Bungalow, and David Hall, many of which can be spotted from a stroll along breezy Church Road.

    Both of Waikiki’s Outrigger hotels are a good value, but this one is a little bigger and a little quieter. It’s right on the beach, just north of the main resort cluster, and though a short walk to the middle of the action, far enough to feel out of the fray. The hotel itself is a quintessential Hawaiian family resort—big and friendly, with an unmistakable good-time vibe, old-school Polynesian decor throughout, and any number of activities on offer. The pool is set back from the beach and nothing fancy (no waterslides, no swim-up bar, and up against a giant wall), but it’s large enough for a serious game of Marco Polo, and there are plenty of lounge chairs to go around. Perhaps the best reason to stay here is the beach—a fairly narrow but sparkling white strand with more elbow room than its sister beaches; the rocky bottom may have something to do with that, but it’s a good place to learn to surf and a great place to catnap in the sun. One warning: the hotel lobby may feel overly commercial to some, what with a row of gift shops and a hard-to-miss timeshare desk, but it’s easy enough to ignore, if you wish.

    The 40 year old hotel has just undergone a $85 million renovation and is in tip-top shape. But aside from that, what makes this place so unique are the cool people that work there. It’s a place that values humans, and their ideas, including some of the more silly ones... For example, there’s Yappy hour (one of my favorites!), where you’re invited to bring Fido to the golf course for sun–downers. Drinks for the two-legged patrons, and a specially designed menu of snacks for the furry, four-legged ones, courtesy of Executive Chef Daven Wardynski!. Human food all over the resort was out-of-this-world amazing, too. I say that somewhat regrettably, as I put on 5 lbs in 48 hours. Here’s a chef, sort of a renaissance man, that makes some seriously good food, creates the Sprouting Project, and, if that’s not enough, engineers smokers for all sorts of things that never imagined they’d end up in one. Iceberg lettuce? Yep. Oh, and the really cool presentation pieces for deviled eggs? Chef made them, because he couldn’t find the right plate.     The most enviable address in Waikiki, the beachfront Halekulani is all about restrained elegance and pitch-perfect service. The hotel dates back a century, though it was entirely rebuilt in the 1980s—and the room decor—fifty shades of white and plantation shutters framing the turquoise sea—complements the scene outside. The beach itself is small and usually mobbed, but the pool is a dream—a giant oval big enough for laps, and quiet enough (few kids here) for a long doze under your chaise’s umbrella. The grassy courtyards and seaside restaurants are just as improbably serene; some might say stuffy, but for others, the reliably hushed atmosphere is a welcome tonic to the hubbub of Waikiki, just outside the Halekulani’s marbled entrance.

    Upon first entering the famed blue doors of Per Se, located inside the Time Warner Center overlooking Central Park, the dining room has the air of a wake, filled stiff collars and hushed tones. But no matter the attitude, the fact is that everyone in the dining room waited at least a month for this moment. At Per Se, you can only make a reservation one month in advance (maximum), and, if you procrastinate a day or two (say 28 or days or less before your desired date) you’ve likely missed your chance. (Do take note that you cannot cancel a reservation within seven days without being charged $175 per seat reserved.) This is an experience that will last up to four hours, where you are served from five to nine courses (depending on the menu you select), with many surprises in between, including personalized menus with your name and event (if you’re celebrating anything) on each. Now, if you’re still interested and not frightened away by the potential cost, then you’re in for an amazing afternoon or evening of small plates with the most amazing tastes you’ll ever come across. Do not be deterred by the portion sizes as you will most certainly leave full. It might even be best if you arrive on the borderline of famished, as it is a crime to leave anything behind.

    For much of its history, the western edges of Manhattan neighborhoods like the West Village and Chelsea consisted of small manufacturing buildings and warehouses that served the piers on the Hudson River. Over time, those factories were replaced with residential developments, and shipping largely moved out to Brooklyn and New Jersey. What remained, however, was an abandoned light-rail line, located above street level. After 10 years of lobbying the city, state, and federal governments, the first section of the High Line park opened in 2009. It now extends for 1.45 miles, from Gansevoort Street in the south to 34th Street at its other end. An innovative design by James Corner Field Operations uses native species to preserve some of the feeling the old rail line had when it was overgrown with weeds. It has quickly become one of New York’s most popular attractions, both with residents and visitors who stroll the length of it, as well as a model for other cities attempting to find new uses for old infrastructure.

    In many ways, the Fairmont Orchid is the quintessential Hawaiian luxury resort. Its big, elegant lobby is blooming with purple orchids and birds of paradise, its enormous, 24-hour swimming pool wends its way around black rock islands, and its 32 lush acres include tropical gardens and a white-sand beach that frames an aquamarine cove. The 540 guest rooms and suites, located in two six-story towers, all have lanais; half have ocean (or partial water) views, the others overlook the spotless grounds. It’s the dream Vacationland, and as such, the mood is jolly round-the-clock. Cheerful staff oversee the long list of activities—canoe excursions, petroglyph hikes, stand-up paddle-boarding, and about a zillion other options are available both on property and off (some activities are complimentary, others cost extra)—and the crowd tends to be a fun-in-the-sun bunch. On any given day, there might be a Canadian family in a heated volleyball game on the beach, or a group of Silicon Valley execs soaking in the hot tub.

    Carve out a day to spend at the award-winning Spa Without Walls, where the Hawaian-influenced treatments are performed in 17 treatments rooms, some with ocean views and private outdoor spaces. Them, fuel up on Japanese meats and sushi, fresh seafood, robatayaki (grilled) items, beachside classics, and more at the numerous dining outlets. Along with repeat guests, the hotel’s most frequent visitors are the giant sea turtles that regularly hang out at the Orchid’s beachfront. They’ve become such an integral part of the property that even guests at other hotels drop by for a peek.

    The two-story Binh Tay Market is an impossible-to-miss Chinatown landmark on the edge of Ho Chi Minh City’s District Six; it boasts a distinctive Chinese-inspired clock tower, yet it was a French patron who financed the construction of the market in the 1880s. It isn’t geared toward foreigners like the more popular (among travelers, that is) Ben Thanh Market, so there are fewer souvenirs for sale—on the upside, that means prices are already low. The focus here is more on fresh food, though items like bags, clothing, and handicrafts are also sold; even if you don’t plan on purchasing anything, it’s a fascinating place to visit.

    The system of canals and chinampas (cultivated artificial islands fashioned from the area’s swampy soils) that has survived in the far-south neighborhood known as Xochilmilco once stretched all the way to the Centro. To this day, the community is known for its plant nurseries and vegetable gardens. These ancient landscapes now contribute to what has become one of the most singular pleasure gardens in the world, where visitors hire “gondoliers” to propel boats known as trajineras as they sail these channels in the company of floating mariachis and food vendors, partying teens, and extended families out for a picnic lunch. Since a tour is usually a four-hour-plus investment (it flies by), ask your oarsman to take you to Xochimilco’s more-rural precincts, where you’ll enjoy marvelous quiet, far from the madding crowd, in the company of cranes, curs, and picturesque cornfields.

    These meticulously manicured formal gardens on the edge of the medina were planted over a century ago. Inevitably, somewhere along the way they fell into disrepair, but after several years of replanting, renovation, and the odd scandal (reputedly, a pile of human bones were dug up here during the process), they reopened in 2011 as a glorious version of their former selves. In a city that’s near desert much of the year, the gardens represent the only proper green space, a literal breath of fresh air just when you need it most. Straddling the medina and the Mellah (the Jewish quarter), the gardens are the perfect picnic pit stop on a sunny day of exploring Fes, and provide a balm to the frenetic energy of the souks. You’re not allowed to throw down your picnic blanket just anywhere, but you can sneak a sandwich on a shady bench.

    Amble through, taking in the zellij-tiled water gardens, festooned with roses and lulled by tinkling fountains. Admire the towering palms and poplar trees before circling back around the pond to the ancient waterwheel. Hit the kitschy, slightly-down-at-the-heels-but-charming-anyway Café La Noria for a pot of mint tea. Or try Mezzanine, a rooftop terrace lounge, for a cold beer or a glass of chilled Moroccan rosé with lush views of the garden’s canopy. (The park is closed on Mondays.)

    John Besh, the acclaimed chef and New Orleans restaurateur, has opened his first Nashville outpost on the ground floor of the Thompson Hotel in the Gulch neighborhood. He brings with him a love of fresh seafood and the distinctive taste of New Orleans—including his mother’s gumbo recipe—through dishes like red snapper court bouillon. The menu includes options from land, too, such as duck confit dirty rice, a Tennessee pork chop with collards and grits, and Mississippi rabbit over hand-cut pappardelle with wild mushrooms. The restaurant, accented with deep blue and touches of Nashville-casual denim, has a relaxed bistro vibe and a menu for every meal of the day. Don’t miss pastry chef Lisa White’s biscuits at breakfast or her after-dinner desserts like Cruze buttermilk cheesecake.

    From mid-May through early October, an Asian-inspired street market springs up in the Lower Mainland on Friday, Saturday, and Sunday nights—and holiday Mondays, too. Just steps from the Canada Line’s Bridgeport station, the market also offers more than 1,000 free parking spots. Adventurous eaters can graze from 100-plus food stalls, serving everything from poutine and spiral-cut “potato tornado” on a stick to creamy octopus takoyaki (a circular-shaped Japanese snack). Finish with Mango Yummy’s shaved ice desserts or a box of Dragon Beard candy—similar to floss halva and spun sugar—to take home. Then, shop over 200 retail stalls or hit the carnival rides and live entertainment.

    Housed on a 1,100-foot stretch of beachfront, Grace Bay Club is as stylishly current as it was in 1993, when it became the first luxury hotel to open on the then nearly empty sands of Grace Bay. From its original 21 rooms, the upscale property has grown to 82 suites, each of which features ocean views, a private veranda or patio, and chic interiors by renowned designer Thom Felicia. Guests can also look forward to superior service, including a personal concierge available day or night via a provided cell phone.

    When hunger strikes, there’s the oceanfront Infiniti Restaurant & Raw Bar, which boasts sea-to-table fare and the longest bar in the Caribbean, as well as several other family-friendly venues, including The Grill. If it’s pampering you seek, make time to visit the spacious Anani Spa, where you’ll find six treatment rooms, including one just for couples. A spa tent is also available for beachfront massages.

There is an emphasis on art at this sleek hotel, with museum-quality pieces on display in both the common areas and the spacious, light-filled rooms. A rotating art program in the hotel’s Avenue Gallery space features rotating exhibits with emerging artists from around the world.

    If you’re in Madrid and in the mood for tapas, you might not know exactly where to go or what to taste. The Mercado San Miguel (metro Sol) takes away all that decision-making by providing you with a taste experience all under one roof. The old, derelict market was renovated just a few years ago and turned into an upmarket culinary emporium of sorts. It has more than 30 food stalls, each selling something different. My favorite is the bellota ham sold at Carrasco, but there is plenty more. You can sample sherries and Rioja wines at the wine bar, or do as Spaniards do and pick away at tapas as you make your way through the market. I highly recommend the croquettes, or croquetas, in one of the outside alleys: they have ham, chicken, shrimp, cheese and a variety of others. The more standard tapas area easy to find, like tortilla, and seafood is beautifully laid out for you to pick and choose. Right in the middle is my top-rated tapa place. I couldn’t find a name for it but it’s the largest counter, shaped like a U, and has everything from potatoes aioli to steamed razor clams, with everything in-between.
