    The Saguaro Scottsdale is among the handful of downtown Scottsdale hotels that embrace the urban Southwest vibe. Although it began life as a 1970s chain motel—evident in its blocky structure and the compactness of most rooms—this now-hip address has blossomed into the visual equivalent of desert wildflowers at the height of a wet spring. Especially striking against the desert tan that coats just about every other structure in Scottsdale, both outside and in, are a riot of colors that go beyond orange and purple and pink and yellow to such wildflower shades as California Poppy and Red Desert Globemallow. Just as vibrant is the Saguaro’s pool-party scene, aided, no doubt, by water temps chilled or heated as the season dictates. A complete redo of the Saguaro’s rooms in January 2017 gave them a modern Southwest vibe (think pastel-colored prints of cacti and desert-hued furnishings), but not so much that guests will be asking the concierge where to shop for cowboy boots (which would be Saba’s, just down the street, in Old Town).

    This Nashville institution often has a line out the door and wrapped around the building. (“It moves fast!” everyone will tell you.) Once inside, the scene is no-frills, but it’s not the atmosphere you’re here for—it’s the people, the tradition, and the pancakes, of course. You can choose from flavors like traditional buttermilk; Caribbean with shredded coconut, banana, and powdered sugar; Swiss chocolate chip; sweet potato; and many, many more. Everything is made from scratch, including non-pancake dishes like omelets, sandwiches, and salads.

    At this stunning restaurant in the Grand Wailea Maui, Lahaina-born chef Alvin Savella wows diners with bright flavors and striking plating. Start with appetizers like Cantonese barbecue-style char siu pork belly, squid ink bao, and ulu (breadfruit) risotto with nasturtiums, then move on to impressive mains like lobster ramen in red miso–coconut broth and free-range huli huli chicken with garlic fried rice and charred pineapple relish. Set in a lagoon, the round, thatched-roof restaurant—named for Hawaii’s state fish, the humuhumunukunukuapuaa—offers spectacular sunset views, so plan your dinner accordingly.

    This industrial-chic eatery has a covered patio and floor-to-ceiling doors that welcome good weather inside, all overlooking the ocean on Dominica’s east coast. Pagua Bay puts a strong emphasis on seasonal, farm-to-table fare—a commitment made trickier by Hurricane Maria’s destruction in autumn 2017. Still, the restaurant continues to serve reliable American fare with Caribbean twists, including ceviche, goat tacos, chicken Creole, and mahi-mahi salsa. Wash it all down with a frosty beer or coconut rum punch.

    The Lobster Palace scores high on service, seaside ambience, and Caribbean charm. At this northwestern, coastal hotspot, the signature crustaceans are boat-to-bib fresh and served flambéed or pan-fried in massive portions. Note that, when the waves kick up and ground the fishing fleet, the restaurant can sometimes run out of lobster. Never fear, however, as the chef turns out other great dishes like tenderloin, moules frites, and shrimp in coconut sauce that are just as satisfying.

A few other natural remedies the group learned include lime can be a deodorant, coconut juice aids digestion and taro is good for strong bones and teeth.

    When it comes to traditional “made in Hawaii” dishes, cheese probably doesn’t come to mind. You might think of pineapples and macadamia nuts, which, as it happens, are also being enjoyed by the cows at Naked Cow Dairy, Oahu’s only dairy farm. Antibiotic- and hormone-free, Naked Cow makes a variety of butters (try the toasted coconut), yogurts, and hard and soft cheeses. The products are available at several farmers’ markets and restaurants, but for a real treat, visit the farm for a tour. Located on the leeward coast about an hour from Honolulu, tours range from basic butter tastings to hands-on cheesemaking classes.

    Madrid born and bred, DiverXO’s owner David Muñoz, has taken the food scene by storm. His schooling in Asian cuisine melds with his Spanish roots and has given birth to fusion food from the artist’s soul. It’s not uncommon to see smoked sardines lay next to young coconut on the same platter, bringing two culinary worlds together. Each dining experience starts with a letter of intention, a poem of sorts, from Muñoz stating his intention behind preparation of your meal -- and then you eat the menu itself as a fanciful starter! It’s best to get a reservation ASAP, with three Michelin stars, DiverXO is almost always booked!

Take a seat on a bench to give your feet a break and soak up some of the everyday comings and goings. At the Plaza de Armas in San Juan, buy the kids traditional treats like sesame-seed lollipops or coconut candies and check out the fountain with the four statues symbolizing the seasons. The Plaza las Delicias in Ponce is made up of two squares divided by a cathedral—one has a statue of journalist and governor Luis Muñoz Marín, while the other is home to the Lions Fountain from the 1939 World Fair.

    Foodies from all over flock to Mama’s Fish House for ocean-to-plate dishes in a postcard-perfect setting. At this tiki bar meets restaurant, the fish is delivered daily by local anglers and many dishes showcase regional ingredients like Maui onions, Hawaiian chili pepper, and Hana ginger. As a young couple in California, owners Floyd and Doris Christenson fell in love with Maui while on vacation. In 1960, they sailed back across the Pacific, navigating only by sun and sextant, and anchored back on their dream island, where they eventually opened Mama’s. Today, the hot spot can be crowded and pricey, but few begrudge the premium for the fresh fare and stunning panoramas. Make a reservation well in advance for an ocean-view table.

    If you didn’t know before you dug into your meal, you might not realize that every item on Sage’s menu is vegan (a nice bonus for parents eating with kids). The jackfruit or tempeh tacos are so good many devoted carnivores choose to get their Mexican food fix here over local nonvegan Mexican joints. Sage also makes excellent vegan burgers, potato flautas, and salads filled with great crunchy textures and pops of flavor. Follow lunch or dinner with a slice of coconut cake or vegan birthday cake ice cream.

    Bird Pick is my favorite place for tea. They have a lovely tea bar with specialty teas and creative drink options, and they have beautiful hardwood tables in their cafe. The shelves are lined with loose-leaf teas, and the windows display colorful tea pots and drink ware. Bird Pick is the perfect place to enjoy a refreshing beverage or pick up a last minute gift for a friend!

    If you’re in Granada, stop in for a meal or drink at Café Espressonista. Housed in a building from 1860, the café is owned by New York transplants Andres and Zoltan, who have created a fun, funky space with a true artisanal spirit. Chef Zoltan’s baked goods and ice creams are made in-house and the drink menu includes Espressonista’s own small-batch brewed beer. Thanks to relationships with the best coffee producers in Nicaragua, Espressonista’s coffee drinks are the best in Nicaragua. All ingredients are sourced from local markets or farmers, and the same attention to detail can be found in the design of the space and the plating of the meals.
