It’s hard to squeeze side dishes in, but the cheese grits are worth that extra effort, and if you have room for pie, order it.

    The Blind Rabbit’s name is a wink to the Prohibition era, when some venues operated as theaters, doling out adult beverages alongside a “show” consisting of a real animal or statue. But actually, the hidden-away Anaheim bar is a hideaway that books reservations for Friday and Saturday nights weeks in advance. Walk-ins are welcome Saturdays and Sundays from noon to 4 p.m., and Monday nights are so mellow the bar feels like an friend’s place—albeit one with a dress code for men and women (no shorts, baseball caps, or rompers). Carefully acquired tchotchkes—including numerous rabbit figurines—put tipplers in a virtual time machine. At the copper bar, cocktails are served with care and plenty of pizzazz. The Drunk Night in Thailand, with a tamarind flavor and spicy finish thanks to Hellfire bitters and Sriracha, arrives in a plastic sandwich bag with straw, rubber-banded together. The fruity Wait For It cocktail is lit on fire. Don’t miss the popular Old Man & the Sea (bourbon, rum, Fernet, and cinnamon), which bartenders put into a custom-made cocktail smoker with applewood chips. And when you get hungry, don’t miss the fine bar bites, such as duck confit mac and cheese.

There are caviar flights and tiny sandwiches that amount to nothing more than bites. Among the many main courses available—rack of New Zealand lamb, chateaubriand, grilled octopus—the most famous dish is a suckling pig prepared in a Spanish cazuela so the skin gets crispy and the meat tender. For all the focus on flesh, there’s a surprising number of salads and vegetable dishes.

One of Dallas’s favorite BBQ spots smokes its meats over Texas post oak, serves them wrapped in butcher paper, and pairs them with cold draft brews—and the crowds go wild. Savor classics like brisket, sausage, pork chops, and ribs, plus the specialty Kreuz Market sausage (this is the only place in town that stocks it), all sliced to order, fresh off the smoker, and served by the half- and full-pound, so it’s easy to mix and match. The so-called TX Vegetarian section cheekily lists chicken and turkey, but there are several sides for noncarnivores, including mac-and-cheese, potato salad, and two kinds of slaw. The atmosphere is casual—think counter service and shared tables—but the clientele always leaves happy (and slightly perfumed by the smoker).

In the lively modern space—all blond wood, concrete, and industrial lighting—chef/owner Engin Onural serves a creative lineup of sushi, including the Sandfish (a spicy tuna and crab-meat roll topped with fried potato slivers) and zucchini flowers filled with tuna and cream cheese. Things get really interesting at the bar. Using all craft ingredients—house-made syrups, fresh juices, artisanal spirits, and local brews—the bartenders create inspired whiskey-centric cocktails. Try the elegantly layered Old Fashioned (made with Nikka Pure Malt, Pierre Ferrand 1840 Formula cognac, bitters, and Demerara sugar), and a play on a Spanish gin and tonic called Foraged, which features Death’s Door white whiskey infused with wild juniper berries Austin forages himself, plus fresh grapefruit, Szechuan peppercorns, rose petals, and yuzu.

Businessman (and jazz guitarist) Marcel Campion saved the historic spot from destruction, opening a jazz school upstairs, sponsoring master classes, and providing accommodations for wandering talent.
