To stay at the Verana, an eco-lodge outside Puerto Vallarta, guests take a 30-minute boat ride to the village of Yelapa. (Dolphins accompanied me on the journey.) Nashville may be known as Music City, but its reputation for inventive cuisine is catching up at a galloping pace that a rockabilly drummer would recognize. Southern staples like biscuits, fried chicken, and macaroni and cheese have been revisited by Nashville’s chefs and transformed into something divine.

In December 2017, one of the country’s oldest Ritz-Carlton properties was rebranded as The Whitley, and though the name may have changed, the property’s high standard of elegance endures. No doubt further renovations will ensure that this hotel remains an icon well into the next generation.

Inspired by his time in New Orleans, Chef Steve McHugh brought to San Antonio a vision of a modern, welcoming spot with a killer charcuterie program, and that vision became his buzzy restaurant, Cured. Opened in late 2013 and having survived an on-premise fire, the restaurant has drawn discerning carnivores in for plates like monster 2-pound pork shanks, pork cheek poutine and cabrito sliders, all served in a elegantly utilitarian yet warm space. Not to be missed is the fine in-house charcuterie program -- or the see-through curing room front and center as you walk into the dining room. The wonderfully curated beverage menu features craft beers and wonderfully inventive cocktails. Cured is a must-visit culinary experience on any jaunt to the Alamo City.

Founder’s Note: Travel Like an American

In France, sparkling wine isn’t just for special occasions, it’s an everyday luxury. At least that’s what you’ll learn after a sampling of some 130 vintages at Dilettantes, a wine shop/bar specializing in bubbly. The tastings are hosted by one of 25 winemakers and take place in a gorgeous, 17th-century vaulted cellar. For a more in-depth course on pairing champagne at different moments of the meal, Dilettantes also offers a private oenology workshop (minimum 8 people) that will leave you well-versed in taste.

This champagne bar looks like a mirage as you’re coming down the last stretch of the narrow Sunnega run back into Zermatt. A classic après-ski spot, it’s where the local instructors gather at day’s end. The Cuban-born bartender is always playing great music, from Bob Marley to Jack Johnson, while skiers stay warm with heat lamps, fur blankets, and, of course, multiple glasses of Veuve Clicquot.

The MacRitchie Reservoir is one of four reservoirs in the heart of Singapore at the Central Catchment Nature Reserve, where the surrounding forests are protected as national parks to ensure the quality of the water. Though unfortunately not accessible to the public, the ruins of a once-massive Shinto shrine built by the Japanese during their World War II occupation of Singapore are hidden in the overgrown, off-trail jungle near the northwestern corner of the reservoir. There is more to Singapore than meets the eye.

Obladee is the only wine bar in downtown Halifax. The bar has a casual atmosphere with an ever changing wine menu and a few other select drinks like beer and cider if that is what you would prefer. They feature wine “flights” that pair three wines together for a reasonable price, as well as cheese and charcuterie that is locally sourced.

A farm-style experience about an hour from Christchurch, Okuti Garden caters to travelers who love to create and play. An art box encourages crafting; “tree circles” are great for yoga and meditation; and a small lake features a boat popular among readers and small children. Bohemian accommodations include yurts, a tepee, a caravan, and a cabin. Each is homespun and handmade, decorated with drawings, wind chimes, and dream catchers left by former guests.
