Located near Donegal Town in the northern part of Ireland, it’s the only five-star hotel in Donegal County. And while the Elizabethan manor house was once at the center of a farm, today it’s fronted by a formal rose garden and surrounded by 43 acres of forest on the banks of Lough Eske, a 900-acre lake.

    The hotel has a glass greenhouse-style spa, an indoor pool with views of the grounds, and a restaurant, Cedars Grill, which serves fresh-from-the-sea oysters and filets of Irish beef. But best of all is the lovely, generous staff: Concierges in particular quickly arrive at a first-name basis with guests as they arrange outings and grant even somewhat-annoying requests. And since all guests do here is spa, stroll, and feast, the only real challenge is deciphering the staff’s thick Northern Irish accents.

    Built in the 17th century, Nymphenburg Palace is one of the largest royal castles in Europe. Planned as a summer residence for the Bavarian monarchy, it was expanded over time and now features additional pavilions and gallery wings, plus a French Baroque façade by Joseph Effner. The palace exterior and expansive, English-style gardens—complete with lakes, geysers, and waterfalls—are the real highlights here, but the interior, with its Baroque, Neoclassical, and Rococo era rooms, is also worth seeing. Be sure to check out the Steinerner Saal (Stone Hall) with its striking ceiling frescoes, the Schönheitengalerie (Gallery of Beauties) with works by court painter Joseph Karl Stieler, and the palace chapel of St. Magdalena. There are also a few interesting museums on site, including ones dedicated to royal coaches, porcelain, and natural history.

    Max Chocolatier, a boutique chocolate shop in the heart of Lucerne, creates exquisite hand-made chocolate that is meant to be savored. The store is located on a high-end shopping street near the lake. While I normally don’t gravitate to “fancy” chocolate boutiques, something about this place beckoned. It is an intimate shop and the friendly staff is happy to explain the types of chocolate that best suit your preferences. Max Chocolatier uses local, 100% natural ingredients, so the chocolate products vary by season: there are spring, summer, fall and winter “collections” with different ingredients and recipes. In addition to basic chocolates (milk, dark, hazelnut, caramel, orange, etc.), there are also more exotic types with ingredients such as pumpkin, chili, and edelweiss providing some international flavor. Beautifully, lushly-packaged boxes of chocolate line the shelves. Clearly these sweet tidbits are lovingly crafted to please all your senses.     If nature is a religion then Vall de Núria is mecca. Situated in a small valley with a lake in the heart of the Pyrenees mountains, not far from the border of Spain and France in Catalunya - it is best known as a ski resort but delights visitors year round because of stunning vistas in every direction and an abundance of activities to choose from no matter what month one visits. The resort now sits where once only a church stood. In fact, it is built around the Church of Núria. Accessible only by train, perhaps so as never to disturb the stunning landscape it is truly an escape from the more bustling cities of Girona and Barcelona. Ride horseback into the rocky terrain above the tree line for the best views of the natural surroundings and look out for native deer than roam the crags. At night, return to one of the many restaurants for a meal that is worth the trip alone.

Chef Stefan Hartmann, who once ran a Michelin-starred restaurant in Berlin, now captains these elevated spots along with founder Jason Sussman. Expect nuanced options like chorizo-kale, pork al pastor with pineapple, and chicken with pickled vegetables, all on soft wheat tortillas for six to seven dollars. Also noteworthy are the meat-free dishes like “vegetable scrapple”—a delicious fritter of squash and chickpeas, topped with herbed tomatoes. And don’t overlook the octopus tostada—Tacofino not only sources seafood sustainably but also participates in Vancouver’s Climate Smart program and is working toward being a zero-waste business.

    Regulars at this Little Italy joint (and there are lots of regulars) flock here more for the friendly atmosphere and the cheap drinks than for the two bowling lanes that gave it its name (“quilles” is “bowling” in French). Games do happen though, usually more as the night goes on, unless it’s one of the nights when a band uses the lanes as a stage. The drinks are nothing special except that most moments in this down-home haven end up being special, and they go wonderfully with the vegetarian burritos made on the spot. Take a spot at the bar to keep the pints coming, or find a nook in the back or in the turquoise-painted side room to wile away the hours.

    The name makes it sound like the driest place in Christendom, but the SAT, as it’s known by locals, is at the forefront of coolth. This giant building on Boulevard Saint-Laurent near Rue Sainte-Catherine is dedicated to electronic culture and entertainment, which means it hosts some of the best art events, dance parties and music performances in town. The top level of its four storeys includes the famous Satosphere, a dome structure that allows for mind-blowing, immersive 360-degree visual projections. Events include presentations and master classes in addition to dance nights by the likes of Borgore, Brodinski and MYD.
