    Rodney Dunn and Séverine Demanet, founders of the eponymous schoolhouse turned farm and the cooking school less than 10 minutes away, opened the Agrarian Kitchen Eatery in 2015 to share their produce and cooking with a wider audience. The light-flooded space, with original stamped tin reflecting off the high ceiling, is so beautiful you’d never guess it was once a mental asylum. The only mental hardship now is deciding what to order for lunch, whether it’s the wood-roasted southern lamb or the hot smoked bay trout. Still can’t decide? For $70 per person, the kitchen will feed you the best dishes of the day. If you’re road tripping up the Derwent River, at least stop in for a biscuit or a lamington with Agrarian Kitchen jam.

    Set on 4,200 secluded acres of hillocks, ponds, and gardens at the foot of the Tennessee Smoky Mountains, this award-winning resort, a member of the prestigious Relais & Châteaux brand, is awash in genteel luxury, from its splendid spa to its exquisitely appointed rooms, suites, and cottages. But make no mistake, the family-owned property takes the “farm” in its name to heart: Its James Beard Award–winning restaurant, The Barn, as well as the more informal Dogwood restaurant, were early leaders in the farm-to-table movement, welcoming guests who come to pay homage to the inn’s self-described foothills cuisine.

    In addition to several gardeners, the farm employs its own butcher, cheese maker, and beekeeper, along with a preservationist who makes pickles, jams, and jellies.     People in tiny towns deserve great food as much as city folk do, but it’s still a surprise when a town of fewer than 9,000 residents can sustain a restaurant as good—excellent, really—as Ludvig’s Bistro. Open daily during the summer months and for plenty of special occasions off-season, the restaurant has been one of Alaska’s best for more than a decade. Chef/owner Colette Nelson puts a Mediterranean spin on all the local ingredients she can get her hands on. The restaurant is all bright pops of color, too. Even Southeast Alaska’s rainiest days can’t knock the happy off of Ludvig’s. Don’t you dare show your face without making a reservation first—even if Sitka weren’t one of the world’s most magical little towns, Ludvig’s would make it a worthy destination.

    In 2007, hedge fund investor Jim Manley bought a working cattle ranch on the site of a historic silver-mining claim to stake as his bigger-than-life family retreat. In 2010, he opened up the Ranch at Rock Creek, a toy-filled haven in southwest Montana’s Big Sky Country, with 13 houses with one to five bedrooms, luxurious canvas cabins for “glamping,” or a nine-room granite lodge. All are decorated by designer Jet Zarkadas and feature Oriental carpets, deep leather chairs, cow skin and woven Navajo rugs, custom duvet covers, and period Western photos and memorabilia. Despite the remote location and 5,200-foot elevation, all accommodations have landline, working Wi-Fi, and cell phone coverage; some have moose antlers, a private sauna, outdoor hot tub, and indoor copper bathtub.

    Open year-round, the 10-square-mile property encompasses meadows, high country lakes, grassy ridges, and stunning vistas of the Pintler and Sapphire mountains. This self-contained adventureland offers horseback riding; heli-hiking; fly-fishing; river floating; high-tech mountain biking; rope courses; trap shooting; and archery on a 3D course using powerful hunting bows to shoot life-sized models of animals. Weekly rodeo and stagecoach rides underscore the Western theme; in winter, guests cross-country ski, ice skate, and snowshoe on-site. A kids’ club frees parents for spa time and other pursuits.

    Marilyn Monroe once proclaimed that her favorite swimming pool was at the Arizona Biltmore. And Irving Berlin, obviously a person who didn’t know how to relax, is said to have written “White Christmas” while a guest at the hotel. Other musical guests have included Frank Sinatra and Sammy Davis Jr., who were known to play on a piano in the lobby. But that’s history, and the Jewel of the Desert, as the 90-year-old hotel was once known, is now just one more sparkling gem in a treasure chest of Arizona resorts. To continue shining, the Biltmore underwent a major renovation that was completed in late 2016. Much of the update focused on restoring the hotel’s original main building, but the guest rooms, meeting spaces, ballrooms, and spa were also polished. The contemporary style that now dominates the Biltmore was inspired by Frank Lloyd Wright, who played a significant role in determining the hotel’s original look. In the guest rooms, Wright’s influence is most notable in the wall coverings, embossed with a design similar to that found on his “Biltmore Blocks,” used in the construction of most of the resort. Of course, for guests who didn’t come for the history, or the design lecture, there are still the eight swimming pools, seven tennis courts, and, next door at the Arizona Biltmore Golf Club, 36 holes of golf.

    Poschiavo is one of the last stops along the UNESCO-listed Rhaetian Railway before it descends towards Tirano, Italy. It’s also one of the few Italian-speaking villages in Switzerland outside of Canton Ticino. The seemingly untouched medieval town is a jolt back in time, with a full-on baroque piazza boasting a stone campanile and a museum stuffed with 16th-century furnishings and antiquities. Don’t leave without stopping for a nibble at its Wednesday market: Local specialties include pizzoccheri (a buckwheat pasta), burrata, local truffles, anise-flavored bread, wine from Campascio in the surrounding valley, and cheese from Caseficio Valposchiavo, a nearby organic dairy. The market is held every Wednesday on Poschiavo’s main piazza.

    A bucolic resort in the Virginia Piedmont, the Boar’s Head Resort is as deeply rooted in Virginia as its owner and neighbor, the University of Virginia. The land has hosted travelers since 1759, with the original Birdwood mansion dating to 1830. A short drive from downtown Charlottesville, Boar’s Head has plenty to keep a visitor occupied without even leaving the property, including an 18-hole golf course, a full-service spa, a fitness center with squash and tennis courts, and three swimming pools. The resort has 175 rooms spread over 573 acres; suites feature a seating area and balcony or patio, and some have fireplaces. Dining options range from healthy café fare (necessary fuel for all those tennis matches), to a grill overlooking the golf green, to an elegant meal in the restored Old Mill Room. The Blue Ridge mountains are renowned for their fall foliage, but visit in summer for fewer crowds (and UVA students) and the English-inspired grounds and gardens in full bloom. Be sure to ask for details on arranging a hot-air balloon ride over the countryside to appreciate all of historic Virginia.

    This lake filled with giant, translucent chunks of iceberg is one of Iceland’s most distinctive and photogenic sights. Featured in high-profile movies, including two of the James Bond series and Batman Begins (as well as many local TV commercials), the sight is reached via a scenic drive along the country’s main ring road (Route 1). The icebergs originate at the Breiðamerkurjökull glacier, which looms in the distance behind the lagoon, and look especially otherworldly when they reach the nearby black-sand beach. The area is also a paradise for bird lovers, with arctic terns and skuas nesting in the area (they may dive-bomb you if you get too close to their nests), and it’s possible to spot the occasional seal. A nearby visitor center offers simple fast food and drinks as well as souvenirs.

Instead, guests head to the barn to choose a noble steed and enjoy the 50 miles of riding trails that wind through canyons, past shaded hillsides, refreshing streams, and grazing cattle. Saddle up for the popular morning ride to enjoy a hearty cowboy breakfast featuring gigantic flapjacks at the historic Adobe Camp, which sits among giant sycamores in the nearby hills. If riding horses isn’t for you, you can fish in a spring-fed lake, hike through Deer Canyon, cycle the trails, play tennis, practice your swing at two championship golf courses, or unwind at the spa. Executive chef Anthony Endy expertly blends seasonal California cuisine with Western ranch cooking, whether guests are dining in the Ranch Room or having a meal by the pool. When you sit back in the evening with the distant sounds of the barnyard as the sun sets over the oak-studded hills, you might realize you haven’t checked your cell phone all day.
  • The stunning landscape of Salineras de Maras features salt pans that are still used exactly as they were at the time of the Incas. As you make your way through the region, you’ll see people doing the backbreaking work of harvesting salt on small family plots. The reward? The salt gathered here is some of the best in the world. Water, naturally salt-infused, flows down from the mountains and settles in the pans. As the water evaporates, salt remains, to be extracted with simple tools. Stop at a store or one of the many small-scale vendors selling the “fruit” of this labor in its pure form or mixed with herbs for use in cooking, bathing, or chocolate bars.
  • Described as an inland Ha Long Bay, this sublime area west of the town of Ninh Binh, about 60 miles south of Hanoi, was granted UNESCO World Heritage status in 2014 on account of its “spectacular landscape of limestone karst peaks permeated with valleys, some of which are submerged, and surrounded by steep, almost vertical cliffs.” While the description is accurate, it doesn’t adequately capture the experience of a visit. Boats tackle the waters of the Red River Delta, passing hulking karst mountains and stopping at grottoes along the way. Also popular are the boat trips that depart from Tam Coc, south of Ninh Binh, and wind up a twisting river flanked by limestone peaks and verdant fields.

    If visiting a miniature version of a country the size of a postage stamp makes no sense to you, stay away from Madurodam, a top tourist attraction in Den Haag featuring historic Dutch towns, ports, canals, roads and monuments re-created on a 1/25 scale. On the other hand, if you fancy learning about the history of a nation that would be underwater were it not for Dutch ingenuity, by all means visit this interactive park that tells the story behind the battle against water, as well as many historic venues that still exist in Holland today.

Legend claims the demigod Maui snared the sun here, freeing it only after it swore to inch more slowly across the sky.

    The 38-mile, two-and-a-half-hour drive up Haleakala climbs from sea level to 10,023 feet through several different ecological zones. One of the most popular ways to experience the volcano remains cycling down from the summit at sunrise. Do it yourself if you’re confident, or join a guided tour (Skyline Eco-Adventures offers one that includes a zip-line ride). Once you’ve mastered the motion—and the 21 switchbacks along the road—effortless downhill freewheeling rewards you with unsurpassed views of the island. If you’d rather savor the vistas from a lofty perch, drive to the top for the sunset or book an overnight at one of the park’s wilderness cabins, accessible only by hiking trail.

    Within the 18th arrondissement in Paris France, high atop the city, resides the wonderfully beautiful, hilly neighborhood of Montmartre. This diverse and eclectic section of the city can be a bit busy with tourists, but the views of Paris and the splendor of the Basilica of the Sacré-Cœur are certainly worth it. Riding the funicular is rather novel, but not necessary if you’re willing to climb the 300+ steps to the summit. This is an area to be explored on foot, as is nearly all of Paris. The shops, theaters, and forever famous Moulin Rouge should not be missed. The streets are intimate, the shops unique, and the overall feel of this place speaks of a youthful, colorful Paris.

    A National Historic Landmark, this park contains the remnants of World War II coastal defenses, including a pair of 203-millimeter Mark VI guns that could blast 109-kilogram (240-pound) shells a maximum of 32 kilometers, or 20 miles, offshore. Though artillerymen fired practice mortars, the battery never took aim at enemy planes, which only ventured to within 200 kilometers (124 miles). Don’t miss snapping the classic photo from inside one of the clammy concrete bunkers, which frame a slice of Monashka Bay.
