In 2013 Hincapie opened Hotel Domestique in South Carolina’s Blue Ridge Mountains. Guests can sign up for multi-day “Climb with Hincapie” retreats that include morning rides, recovery massages, and trainer-led core building classes. The hotel can supply Trek road and mountain bikes and guests can send in measurements or get fit on site. More of a leisure rider? Cruise the area’s scenic bikes trails, which pass vineyards and forest. Even if you don’t ride, you can enjoy the hotel’s excellent restaurant or sign up for its cooking classes.

On Magazine Street, Casamento’s is an institution for its oyster loaf and fried seafood platters, plus it’s fun to watch the hulking shuckers tackle piles of just-off-the-boat bivalves.

    Kaplash is located on the curve of Road 115 as you head toward the town of Rincon. The little unassuming orange and blue building boasts a beautiful view of the ocean and—in the opinion of myself and others—the best empanadillas on the whole island. Kaplash was featured in an island-wide food photography book by a local writer who ventured to all the great known local spots. That’s how I decided to try them, and I wasn’t disappointed. They are now the only place I stop for empanadillas (turnovers) and the only place I take family and visiting friends. Try all of them—they specialize in seafood—but I can’t get enough of the pizza one.

As you swim through turquoise Mediterranean waters, keep your eyes peeled for blue-spotted rays, painted combers, damselfish, sea turtles, and myriad colorful corals and sponges. From the à la carte menu, order the river snails with chorizo sausage and exotic, sweet-and-sour aguaje fruit, followed by the smoked duck with cacao sauce, avocado, and blue cheese. Or opt for the seasonal tasting menu featuring organic heart of palm salad with chestnut flour and paiche jungle fish with black hot peppers and nutty dale dale. In a city addicted to meat, Schiaffino’s vegetarian tasting menu is a delight. It includes black quinoa, Amazonian honey, and a starchy-sweet tuber dish translated as “seven textures of yucca.”

    Third Man Records, the Nashville outpost of musician Jack White’s record label and store, is hard to define. It’s both a retail outlet for vinyl and offices for his label, sure, but it also includes a “novelty lounge” with coin-operated video jukeboxes and whimsical contraptions. What draws the crowds, though, is Third Man’s music venue (decked out with curved blue walls adorned with taxidermy), which regularly holds live performances, shows movies, and hosts record-release events. Visitors also can step into the tiny Record Booth, a refurbished 1947 Voice-o-Graph machine, to record up to two minutes of audio that they can take home on a 6-inch phonograph disc.

    An almost daily occurance in Park City: colorful hot air balloons dotting the big blue skies. The propane flame filling the balloons’ envelopes sounds like a dragon breathing his fiery breath. You might hear it from your condo or hotel room before you see it. Multiple balloon companies offer rides, all year long, which usually include a champagne finish (hot air ballooners traditionally carried champagne with them to appease farmers since they landed in their fields so often). The rides are a unique experience, the views of town unbeatable, but even if you only gaze at the color in the sky from below, it’s another beautiful element of the Park City landscape.

    If chain stores aren’t your cup of shopping tea, head to the quirky boutiques of the Marolles neighbourhood in Brussels. The main shopping street is Rue Haute (high street) and it’s lined with vintage shops, antique stores, and home decor shops with plenty of restaurants and cafés so you can refuel. The colourful street was traditionally home to Brussels working class and still has a blue-collar neighbourhood feel. Little ethnic grocery shops sit side-by-side with exotic furniture shops. Take one of the side streets to the lower Rue Blaes for more of the same types of stores and follow it to Place Jue de Balle for the giant flea-market held each morning.

If you had the same meal at Blue Ribbon expect to pay at least 75% more. And they have one of our favorite sakes—Wakatake—a Daiginjo. Come before 7pm and you won’t have to wait in line. (If you do get stuck having to wait, then head across the street to Bar Veloce and have them call you.)

Taking inspiration from his own heritage and his international kitchen staff, Italo-Argentine chef Mauro Colagreco is making a name for himself for colorful cuisine that plays with contrasts of flavor and texture. Dishes often include an uncommon ingredient—the chamomile broth, for instance, or a combination of oysters, pears, and caviar; the bread served with a poem. The food is both pretty on the plate and a pleasure for the palate.
