    When it comes to safari experiences, South Africa is filled with luxury lodge selections. But what sets Jaci’s Safari Lodge, and the adjacent Jaci’s Tree Lodge, apart is their location in off the radar Madikwe Game Reserve (Big Five territory), their amazing hospitality and their perfectly on-point style. Magnificent Madikwe is located in the North West Province, on the border with Botswana, and the southern edge of the Kalahari Desert’s famed red sands. It’s a stunning landscape for a safari that looks quite different than what you find in the reserves like the luxe Sabi Sands around Kruger National Park and is just as accessible. Arrive via car on paved roads from Johannesburg in just about 4 hours or hop on a quick hour long scenic flight with the excellent Federal Airlines that will take you to an airstrip about 15- minutes drive through the park from the lodge — you’ll be greeted by a safari vehicle and on the way may just encounter a herd or elephant or pride of lions as we did.

    Upon arrival at Jaci’s Safari Lodge you’ll be greeted by the beyond friendly and professional staff and offered a welcome drink in the gorgeous, vibrantly colored lounge and dining room area while your luggage is whisked away to your tent or suite. Jaci’s Safari Lodge offers six vintage posh Tented Suites, two privat eFamily Suites and two ultra luxe Starbed Suites, which have the option of sleeping al fresco under the stars listening to the sounds of nature — a rhino was just below us against the fence when we stayed making noise as he stomped and munched. But if sleeping al fresco isn’t for you, don’t worry as the Starbed Suites are in proper glass, steel and concrete structures with interior bedrooms completely closed off from the outside. There are more options at the adjacent Jaci’s Tree Lodge, which offers eight Treehosue Suites on custom wooden stilts connected by raised walkways that appear to float above the ground.

    The food here is delicious and Madikwe Game Reserve is a hidden secret among South African parks and filled with dozens upon dozens of big cats (so many they had to remove a number of lions over the years) as well as two packs of rare wild dogs and a healthy rhino and elephant population. The guides are amazing and the bush dinners truly special. They even have a program that allows you to rent high end Canon DSLR cameras for your safaris that will bring out your inner wildlife photographer — we used these and the experience was a highlight of the trip.

    When people think of southern Arizona and its border with Mexico, cactus and sun-baked sand may come to mind — but a mountain canyon with fall foliage, homestead cabins, and deer? Go high enough, and you’ll find this and more. The Huachuca Mountains climb to over 9000 feet just north of the border in Cochise County, about an hour and a half from Tucson. Toward the southern edge of the town of Sierra Vista, the Nature Conservancy has set up the Ramsey Canyon Preserve, which is ideal for hiking and birdwatching. The deer are tame, wild turkeys are common, and fourteen species of hummingbirds have been spotted among the 150+ species of birds that find refuge in this “sky island” — a mountain range that rises high enough above the surrounding desert to provide a cooler and wetter ecosystem. By late fall, the cottonwoods, maples, and sycamores transform the canyon into a landscape that would be reminiscent of New England if it weren’t for the omnipresent agave plants. Watch your step, and stay alert for the occasional black bear, javelina, or mountain lion. Chimneys, log cabins, and apple trees remain from early homesteaders who found refuge from the desert in these mountains, which were originally named “Huachuca"—meaning ‘thunder'—by the Apaches.

    This industrial-chic eatery has a covered patio and floor-to-ceiling doors that welcome good weather inside, all overlooking the ocean on Dominica’s east coast. Pagua Bay puts a strong emphasis on seasonal, farm-to-table fare—a commitment made trickier by Hurricane Maria’s destruction in autumn 2017. Still, the restaurant continues to serve reliable American fare with Caribbean twists, including ceviche, goat tacos, chicken Creole, and mahi-mahi salsa. Wash it all down with a frosty beer or coconut rum punch.

    Driving down an old dusty dirt road near Vila Verde da Raia in the area of Tras-os-Montes in northern Portugal I could imagine the area in the 19th or 20th century.The region probably hasn’t changed very much. I have seen pictures of this road from the 1940’s and I can’t see any difference. The road was not paved then and still isn’t. There are no modern homes or strip malls. I loved the natural vegetation and the peaceful vista. After following the road for about 10 minutes, it curved to the right.There were huge sycamore trees on both sides of the road leading into a tiny tucked away village that dates back about 1,000 years or so. The village of Vilarinho had a small plaza and a well. There was a post office on one side of the square, a beautifully restored church ( I wished that I could have seen the original), and many whitewashed granite and concrete homes. I saw that most homes featured modernized interiors. Past the church was the cemetery and large fields of many crops. At first, the residents were very curious but warmed up and became very friendly offering stories of the village, the farming, and tales of the relatives buried in the cemetery. As I walked the village and farm grounds they kept their eyes on this “stranger”, but they were very happy when I expressed such interest in their lives, homes, and their lovely village. A side trip is always a travel bonus and is one of the rewards of going off on your own to mix with the locals.

    Opened in 1891, the city’s oldest hotel is a throwback to a bygone era. Individually decorated guest rooms combine old-fashioned details, like claw-foot tubs and antique wood headboards, with modern amenities like USB ports and Bose sound systems; other nods to the past include vintage brass keys with tassels and a second-floor writing desk with functional typewriter (rest assured the front desk will stamp and mail your letter faster than the Pony Express). Inspired by a bar on the Queen Mary, the Art Deco Cruise Room was Denver’s first drinking establishment to open after Prohibition; today it’s known for its collaborations with local distilleries and classic cocktails. Follow them up with the confit chicken pops at the Urban Farmer restaurant, or call it a night and wake early for a honey exfoliating scrub or chocolate-ginger wrap at the on-site spa.

    Getting to Onar Andros requires a fair amount of determination. A ferry from Athens or Mykonos takes you to one of the northernmost Cycladic islands (there’s no airport nearby); once you arrive at the port in Gavrio, it’s a slow 25-mile drive to the hotel. Your reward, however, is a tiny slice of Eden, an enclave of 10 stone-and-timber cottages set amid a lush river valley that’s only a five-minute walk to Ahia Beach, arguably the most beautiful in all the Cyclades. Built and maintained by the owner, Mateo, the accommodations are deliberately spare yet modern and comfortable, each with a pergola-shaded veranda with loungers and a hammock. Meals are served at a communal table, and what Mateo doesn’t grow organically, he sources from local fisherman, farmers, and bakers. Guests can even accompany him to pick fruits and vegetables to be used in that night’s dinner. After all, this is a place to ditch your devices and surrender to your surroundings.

    The brick-and-iron warehouses of the old Eveleigh Railway Workshops host a diverse lineup of experimental music, theater, film, and fine art. Located on the border of Redfern and Waterloo, Carriageworks was restored to keep the historical roots intact while providing a space for cutting-edge culture. Every Saturday, more than 70 stalls fill the former railyard outside with organic produce, artisan breads, specialty coffee, and exotic flowers as well as street food from the likes of chef Kylie Kwong during the farmers’ market. Fuel up at the market and then get inspired by whatever is on display inside this artist-run venue. Big annual events for Sydney Contemporary, Pacific Runway, Sydney Gay and Lesbian Mardi Gras, and the Sydney Festival are also held here throughout the year.

    Continue west beyond Boulder’s iconic Pearl Street walking mall, and you’ll find yourself surrounded by incredible restaurants. New to the block is Bartaco, a fun, hip South American–inspired eatery that always seems to be hopping; while there might be a wait for a table, keep an eye on the first-come, first-served bar seating. Choose from unique taco flavors like glazed pork belly with arbol chili sauce or tamarind-glazed duck, and sides like a spicy cucumber salad or fresh pineapple with lime—and make sure to save room for the fresh, hot churros. The Kitchen, self-described as an American bistro, is one of the fancier, albeit relaxed, eateries, offering brunch, lunch, and dinner that have been sourced as much as possible from local farmers. For delicious pub food, jump into the classic West End Tavern. Burgers, beers, ribs, BBQ, and more make this a place to satisfy everybody.

    Hawaiians once lived in harmony with the land: farming, fishing, and harvesting fruit. Today, the state imports 80 to 90 percent of its food. Visit Kaloko-Honokōhau to catch a glimpse of the Big Island’s ancient agricultural traditions, which residents are working hard to revitalize. The park’s landscape of rugged rock contains more than 200 archaeological sites, ranging from fishponds and elevated planters to petroglyphs, lava-tube shelters, and hōlua (toboggan-like slides). Watch for native species like the fragrant pua pilo flower and the endangered Hawaiian stilt, a subspecies of the black-necked stilt. A sugar-white beach stretches north from Honokōhau’s boat harbor and often attracts sea turtles.

    It sounds like a Portlandia sketch: the Northwest pizza joint with an on-site chicken coop, where you can get any pie topped with a soft-cooked egg. But Humble Pie is quite serious about their pizza (and their chickens); their goal is balancing Asian and Pacific Northwest architectural elements with sustainable urban farming. That means sunny wooden picnic benches right next to the outdoor coop, and sharing a table with new friends during their busy happy hour. The menu is heavy on local and organic ingredients, including the beer and cider selection. Our favorite was the pulled pork, pickled onion, and Beecher’s mozzarella cheese pizza — with an egg on top, of course.

With Tropical Trail Rides, in the northwestern municipality of Isabela, you can take a two-hour ride through the forest and by the beach as the sun sinks down toward the water. Make sure you take the opportunity to break for a hike or a swim along the way. On the north side of the island in Manatí, Kerry’s Horses designs personalized sunset rides by the beach or through nature reserves.

    It really doesn’t get more eco-friendly and organic than dining on freshly baked bread and pastries at Rosendals Trädgård Kafé and Bageri. Their breads are baked with biodynamic flour from the Saltå Kvarn mill in nearby Järna, and their dishes are cooked using seasonal ingredients and organic produce from KRAV-certified farms and growers. Don’t be surprised by long lunch queues. It’s extremely popular with locals who wait in line to dig into its minimal yet tasty rotating menu such as pan-seared Pike perch or Arctic char with roasted root vegetables or couscous. The café itself is inside an ambient glass greenhouse surrounded by flower gardens and fruit orchards.

    If you’re in Oahu’s North Shore area, stop for lunch at Fumi’s Kahuku Shrimp truck — it’s the one with a mural of a gigantic, rearing shrimp. They’re not rock-bottom cheap, but you get a lot for your money; $13 gets you a plate piled high with fat, juicy shrimp dripping with garlic butter, two big scoops of rice, and a (skippable) salad. Seating is outdoor-only on plastic tables and chairs, but it’s probably the best option for these messy, delicious peel-and-eat shrimp. The pond where they farm their shrimp is right next to where the truck is parked, so you can’t get any fresher than that!

    Located on the southern tip of the Istrian peninsula, this rugged nature park is the perfect place to set off with a backpack and be active for the day. You can follow in the fossilized footprints of the dinosaurs at Cape Grakolovac, visit an Istrian ox farm and have lunch at a family-owned agritourism operation, lounge at the funky seafront Safari Bar overlooking the Mala Kolombarica cove, ride a bicycle along the orchid trail, kayak or windsurf along the coast, or swim in coves with crystal-clear water. To learn more about the park, head to the House of Nature Kamenjak in the nearby town of Premantura.

    The whole family is welcome at Eikendal. While adults enjoy a pizza and wine pairing, children can partake in a juice tasting of their own. On a nice day, visitors can also take a 1.5-mile self-guided walk around the vineyards to learn more about the winemaking process and the farm itself.
