    Check your traditional hotel notions at the door of this Russell Street lodging. At QT Melbourne, guests are greeted on arrival by cheery Directors of Chaos, who sport the same black wigs, heavy makeup, and bold black-and-white outfits, but the lobby itself makes an equally striking first impression: old-school French hip-hop competes for attention with colorful video installations, a giant stuffed peacock, and a towering wall of 1,700 recycled books. Upstairs, the 188 rooms give off an industrial-chic vibe with concrete-slab ceilings, timber flooring, and bathrooms set behind sliding partitions of aluminum-framed glass.


    The hotel’s seemingly never-ending food and drink offerings include the Pascale Bar & Grill, where French bistro influences combine with produce farmed on the rooftop garden; Hot Sauce, for Asian-accented bar food (think steamed baos stuffed with fried chicken and kimchi); and the Cake Shop, for warm pain au chocolat in the morning, plus an array of pastries, cakes, and snacks throughout the day.     After 30 years at the forefront of Sydney‘s fine-dining scene, Quay Restaurant underwent a multi-million-dollar renovation and reopened in 2018. The restaurant swapped white linens for Tasmanian spotted-gum wood tabletops and exchanged the previous purple-and-gold palette for blues, grays, and browns that better reflect Quay’s harborfront location facing the Sydney Opera House. Executive chef Peter Gilmore loosened up his menu, too, offering either six or 10 inventive courses such as the Oyster Intervention—a crumble of oyster cream, crushed fried dehydrated oysters, chicken skin, tapioca, and caviar served in a ceramic oyster shell—creating a dish that’s all bivalve flavor without the slippery texture. Fans of the old Snow Egg dessert will be won over by White Coral: a multitextured masterpiece of aerated ganache, coconut cream, and ice cream.

    The Verandah makes up the restaurant section of 40 North, a small food outlet in the unlikely location of North Bragar, on the west side of the Isle of Lewis. It’s less than 25 minutes from the town of Stornoway but feels much farther when driving the windswept coastline. Opened in 2017, the intimate eatery features just 20 seats for dinner service only. Reservations are essential to enjoy such delicious dishes as roast ginger sea bass with crab, and lamb loin in a sauce of mint, rosemary, currant, red wine, port, and brandy.

    This unusual contemporary art museum is located in a series of dimly lit caverns and tunnels built into the side of a cliff in Berriedale, a Hobart suburb. Inside, mind-bending installations include a stinky model of the human digestive system that poops daily at 2 p.m. Founder David Walsh, a professional gambler turned art maverick, displays more than 400 edgy works from his private collection. The new Pharos wing that debuted in late 2017 is heavy on light spaces by James Turrell. MONA also stages two standout annual festivals: Mona Foma (which stands for Festival of Music and Art, sometimes further shortened to Mofo) in January, curated by Brian Ritchie of the rock band Violent Femmes, and Dark Mofo, the disturbing winter version held in June.

    Since bursting on to the scene in 2013, this Chippendale hotspot has multiplied its loyal fans along with its awards—chef Mat Lindsay was even named Australian Gourmet Traveller’s 2018 Chef of the Year. Surrounded by stucco archways and strung with pendant lights, the dining room provides a subtle backdrop to dishes that are rustic yet refreshing. The wood-fired oven is put to good use, sometimes in surprising ways, like for charring cauliflower or lightly roasting rock oysters to warm, gooey perfection. There are also beautifully baked meats and breads, and a baby blood sausage “sanga” for those craving comfort food. For dessert, order the burnt pavlova, a classic meringue that takes a trip through the flames before being dusted in elderflowers.

The wild venison with wasabi and zucchini is something wonderfully different, and so is the cuttlefish roasted pigeon. Beets with goat cheese, barramundi with leeks, and funky desserts like coconut with laksa-leaf ice cream make an indelible impression on foodies who think (and eat) outside the box.

    Jaffa, the oldest seaport in the world, is home to a vibrant multiethnic community of Muslims, Christians, and Jews next to Tel Aviv. Archaeology and ancient documents show that Jaffa has been in existence as a port city for more than 4,000 years and is where Jonah (of Jonah and the whale) set off from. Until recently, the port had become derelict, but after major renovations, it now teems with life and culture, from seafood restaurants and organic-coffee cafés to bookstores and theaters. The Old Port (known as Namal Yafo) is also a sort of artist colony, with numerous art galleries and studios. The views are breathtaking, especially at sunset.

Walking along the bay, heading South, you will easily reach Salir do Porto, a former salination village; with low tide, you can cross the river and go up the Salir dune, so that you can then slide or run down…or in another way. Heading to the North side of the bay, you will reach the port. There are many small anchored boats and it is possible to go sailing or canoeing.
