    Alongside an upbeat atmosphere and lots of local color, La Chaya Maya boasts an extensive menu that includes all of the Yucatán’s favorites. The restaurant has two outposts but the central venue, in a large colonial house, sets the perfect scene for sampling the region’s traditional delicacies. Pollo mukbil—chicken stuffed with baked corn dough and wrapped in a banana leaf—is definitely worth a try. Usually eaten only during Hanal Pixan (the Maya’s Day of the Dead), it’s on the menu all year round at La Chaya Maya. Anytime you go, you’ll see women in regional dress cooking corn tortillas fresh on the comal, or griddle; it could seem touristy, but here it merely adds to the restaurant’s vibrant feel.

    This popular Mexican-food mainstay in the heart of San Francisco‘s Mission District is one of two places in the city that claim to have invented the Mission-style burrito (the other is El Faro): a hefty, elephant-leg-size wrap distinguished from other burritos by its size and the inclusion of rice and other ingredients. The restaurant was first opened as a meat market in 1967 by Mexican immigrants Raul and Michaela Duran, who are said to have served their first burrito in 1969 after noticing that local workers needed a substantial yet portable meal. The Mission Burrito was born, containing most of the food groups: protein, vegetables, dairy, and grains. The Durans converted their meat market into a full-time restaurant in 1972. Taqueria la Cumbre offers a full menu of Mexican food, all made fresh. The burritos are made assembly-line style. (Fun fact: When the Durans first came to San Francisco, they hired a high school kid to make flour tortillas before school. The kid, Jorge Santana, would go on to be a popular musician, like his brother Carlos.)

Expect nuanced options like chorizo-kale, pork al pastor with pineapple, and chicken with pickled vegetables, all on soft wheat tortillas for six to seven dollars. Also noteworthy are the meat-free dishes like “vegetable scrapple”—a delicious fritter of squash and chickpeas, topped with herbed tomatoes. And don’t overlook the octopus tostada—Tacofino not only sources seafood sustainably but also participates in Vancouver’s Climate Smart program and is working toward being a zero-waste business.

    When you hear the phrase, “summer in southern Arizona,” naturally your thoughts will tend toward heat and sunshine. Most wouldn’t think of mounds of fresh produce at a farmers’ market in the desert city of Tucson. But the arrival of the monsoon coincides with nature’s edible bounty, even here in the desert. The nearby Santa Cruz valley is actually one of the oldest continually-farmed regions in North America, with agriculture dating back four thousand years! Heirloom beans, squash, chiles, and tomatoes are still grown. The nearby higher elevation lands near Willcox are known for their orchards and even a few vineyards. Mesquite flour is made into cookies and tortillas. Prickly pear cactus is made into jams and frozen treats. All this is available throughout the week at various farmers’ markets around Tucson. The biggest one is on Sunday morning in the neo-colonial courtyards of St. Philip’s Plaza. And, if you’re curious, you’ll get language and cooking lessons, too. On a recent Sunday morning, my wife and I asked what some curious looking greens were. The answer? Purslane, or “verdolagas” in Spanish. They grow like weeds once the monsoon rains begin, and they contain more omega-3 fatty acids (think fish oil) than any other leafy plant. In a salad, or sautéed or stewed, they’re great. Who knew? Farmers’ markets are always a great place to get a vibe for a city—a cross section of people and produce. And, even in the desert, it is possible to shop and eat local.

    Up a dirt road that feels more like someone’s private driveway, past the village cemetery with its handmade crosses framed against a dusty hillside, the Penitente Morada in Abiquiu sits crouched on the earth, a wonderful secret, discreet against one of Georgia O’Keeffe’s signature vistas. A simple bell and three wooden crosses hint to the secret society that gave rise to this chapel, recently restored but dating back to the 1700s. New Mexico‘s depth of history always astounds at these northernmost reaches of the search for Cibola. I like to remember I was hardly trying for a perfect shot when I framed this picture after a two-hour private tour of O’Keeffe’s home; my senses were already on overload. Everything is just clearer and crisper in the high desert light.

    There was some trepidation among locals when Rosewood first announced its plans for this 13 plus–acre resort—the largest in the UNESCO World Heritage Site’s cobblestone historic center. The cuisine is also a big draw: Savor reimagined Mexican flavors and learn about regional wine at the gourmet restaurant; try a tequila tasting at the bar, which turns into a sushi-and-craft-beer spot on the weekends, or join locals for the popular Sunday brunch.

    In October 2014, Chef Enrique Olvera opened his much-anticipated New York restaurant Cosme, which offers an inventive dining experience in the Flatiron District. The spacious restaurant is a short walk from Langham Place, Fifth Avenue, and features modern Mexican dishes with locally sourced ingredients and housemade tortillas. But guests should not come expecting standard chips and guacamole, Chef Olvera is known for utilizing creative and sometimes surprising ingredients in his dishes. Menu items include burrata, salsa verde and weeds, and occidental purple corn pozole, pork jowl, lettuce, radish, Mexican oregano. The eclectic menu items are meant to be shared, and certain Mexican specialties, like dried chiles, beans and heirloom corn are imported from Mexico. Chef Olvera’s Mexico City restaurant Pujol has gained world fame for his fresh take Mexican food, and Cosme offers more stellar options. The bar also pours a wide variety of mezcals and tequilas.
