    Located along a stretch of coastline that’s sometimes called the birthplace of jerk cuisine, the Boston Bay Jerk Center is hard to miss. Various meats are cook on open pits using a technique that may explain why jerk never tastes so good at home: Uncured pimento logs are placed over a bed of hot coals, and the meat is laid directly on the green logs. The whole operation is then covered up by a sheet of corrugated zinc and cooked until it’s black on the outside and tender underneath. You can place your order by the quarter, half, or full pound. Don’t forget to add jerk sauce, which you can also buy by the bottle as a souvenir.

    As the first boutique hotel in Koreatown, the Line might have been able to get away with cutting a few corners while still attracting a cool clientele. It probably didn’t need to get the hottest young Korean-American chef in L.A. on board (to run one of the most comprehensive and exciting restaurant and bar networks yet seen, by the way), nor did the Sydell Group—the arbiters of cool behind the Nomad Hotel in New York—have to put their stamp on it. The hotel would have been nice enough had the concrete midcentury building not been entirely reimagined by designer Sean Knibb, known for designing half the cool spots in L.A. and more than a few celebrities’ homes. There didn’t need to be a desert greenhouse–inspired pool deck that’s become a hangout for beautiful people at all hours, nor did the famously trendy Houston Brothers (of no Vacancy and Harvard & Stone) have to throw in a midcentury-inspired cocktail bar. Nor did the typical hotel gift shop have to be reimagined as a design and lifestyle store curated by Poketo. The rooms and suites would have been just fine had they not been turned into artsy, industrial-style lofts, outfitted with original commissioned artwork, a minibar of Korean and Western snacks, and Baxter of California toiletries. Of course, all of this did happen, and now Koreatown is home to one of the hottest hotels in L.A.

Here, the dishes dive deep into Mexico’s rich culinary heritage, like fall-off-the-bone tender garlic-marinated goat and lechón (roast pork) with crackling, crispy skin. But save room for dessert—options include churros stuffed with dulce de leche and flan topped with tangy passion fruit glaze, candied pistachios, strawberries, and whipped cream.

    No, you don’t have the wrong address—this is indeed a downtown office building and parking garage. But don’t be alarmed. Walk through the door, and Café Poca Cosa’s stylish interior tells you immediately that this is no boring strip mall Tex-Mex joint. Neither, fortunately, is it an overly precious nouvelle-cuisine bore. It’s been voted “Best Mexican” in Tucson by locals, who know that chimichangas were born in this desert town. That said: you’ll find no chimichanga combo-plate here. Chef-owner Suzana Davila changes the chalkboard menu twice a day. Her concentration is on fresh ingredients and innovative dishes that translate regional cuisines rather than betray tradition. National publications have sung her praises, but Ms. Davila still checks on her own customers and eats lunch in the dining room with everyone else. She’s a self-taught native of Guaymas who can concoct over two dozen varieties of mole. Complex sauces, refreshing drinks (such as pineapple-basil agua fresca), and Baroque masks in red niches await you. Come for a late lunch on a weekday if you want to avoid the justifiable crowds. Have an open mind (and mouth), and discover how great contemporary Mexican cooking can be. Tucson can be proud of its plentiful taco trucks and Sonoran hot dog stands, but Poca Cosa celebrates the variety of Mexican cuisine for when you want to sit down in style. Buen provecho!

    Situated along the bustling, tree-lined avenues of Gangnam, Hotel La Casa is a concept hotel created by one of Korea’s most popular lifestyle and furniture stores, Casa Mia. Known for clean lines and modern touches, the brand is the South Korean equivalent of Ikea. The welcoming lobby is decorated like a cozy study with book-lined walls, plush couches, and picture windows. The 61 rooms of Casa Mia’s flagship design hotel, which opened in 2011, look like pages of a catalog come to life. Rich wood, ample white space with pops of color, and kitschy decor items are meant to make guests feel right at home. Love your pillowcase, the bath towels, or the cute alarm clock next to your bed? The first three levels of the hotel are a massive Casa Mia retail store where guests can purchase items found in their rooms.

    Seoul’s War Memorial Museum is a massive complex that can easily eat up a history buff’s whole day. The big-ticket items—tanks, planes, missiles—are outside; inside is a complete history of military actions in Korea. One really cool thing is a replica of Admiral Sun-shin’s “turtle warships,” ironclad fighting boats used in the 16th century. The bulk of the place is taken up with the Korean War, with tons of films and photos that can get a little overwhelming for the unprepared. Korea was a suburb of hell from 1950 to 1953, and no punches are pulled here in showing just what it was like. It might be best to head for a park after your visit, to decompress and remember that it’s always business as usual for the trees.

    Did you know that only 25% of French people buy their cheese from a fromagerie? And of that 25, only 3-4% go to an affineur (cheese refiner). Both are the sad realities of a dying tradition in France of sourcing provisions from neighborhood artisans. Young affineur Baptiste Yapar doesn’t let the disheartening takeover of corporate food business dull his passion. The firebrand cheese master focuses his energy on running his shops Au Coeur du Marché (at the Marché d’Aligre) and educating the public. At La Cuisine Paris cooking school, he takes a small group through a complete background of cheese (it didn’t begin in France!), methods of production and the various designations and families of cheeses available. A copious tasting of 7-10 different cheeses (with wine) follows the contextual debut and is, as my friend and I agreed by the end, the closest thing approximating cheese heaven on earth. It is a fascinating two-hour experience that will not only inform how you consider the nuances of cheese in the future but will have you excited to seek out your nearest independent cheese shop for more.

Don’t let the plastic tables and chairs distract you from the superstar menu: Try the stuffed crabs or the catch of the day, often red or black snapper, kingfish, or mackerel. Finish your meal by sipping a cocktail crafted with feni, a local spirit traditionally made from cashew fruit. Feeling active? Order your meal and head out to the beach; the waiters will call you when your food is ready.

Recently designated as a UNESCO world “city of gastronomy,” Jeonju is definitely worth a several-day stay, and it’s an easy couple-hour-train-ride from Seoul. In addition to savoring local culinary specialties and wandering the traditional ‘hanok'-house neighborhoods with their galleries and boutiques, check out the chess and go-players on the benches just outside of the Gyeonggijeon shrine, on the corner about a block to the east of the venerable Jeondong cathedral. “Jang-gi” is the Korean version of Chinese chess, and “Ba-duk” is the local name of the game more widely known as “Go.” On sultry summer evenings, grab an ice-cream (red bean and melon are popular flavors) from across the street and then check out these neighborhood ‘haraboji’ (‘grandfather,’ the respectful term for older men), engrossed in strategy on the sidewalk of one of Korea’s most traditional cities.

    Union Market is the perfect D.C. destination if you’re searching for a weekend brunch spot, craving a snack on your way to visit the Capitol, or, you know, hungry. Oyster bar, bakery, taqueria, soda shop, sandwich shop, Korean taco grill—all of the food is here waiting for you. The 47,000-square-foot space is a throwback to the original Union Terminal Market, which opened in 1931 with more than 700 produce, meat, fish, and dairy vendors in airy indoor stalls. The market moved to a warehouse in the 1960s and closed in the 1980s before reopening in 2012. When you’re finished stuffing your face, you can shop for home goods and vintage finds at shops like Little Leaf and Salt & Sundry.

    Opened in 2004, the Leeum, Samsung Museum of Art seeks to bridge the past, present, and future of art. The sleek complex consists of two wings, one dedicated to traditional Korean works and the other to international contemporary art. The traditional wing is shaped like a reverse cone, with a spiraling walkway that winds through galleries of ancient paintings, calligraphy, and crafts. In stark contrast, the glass-and-steel contemporary wing was built without supporting posts, encouraging viewers to move freely among distinctive works by Basquiat, Olafur Eliasson, and Takashi Murakami. The experience continues outside on the parking lot deck, where there is a polished sculpture garden.

    I Kriti (Greek for “Crete”) has been serving some of Athens’ best Cretan cuisine long before the island’s hearty cuisine became fashionable in the mid-2000s. A charming, utterly unpretentious tavern tucked into a nondescript arcade passage near Omonia Square, Kriti serves fare that will leave you reeling with pleasure—dakos (barley bruschetta topped with grated tomato, crumbled myzithra cheese, olives, and pickled samphire), smoked Cretan pork, snails in garlic, Crete-made sausages, spicy cheese dip, and baked pies, all at excellent prices and with real Cretan hospitality (the owners don’t really speak English, but it doesn’t matter). Expect to wait for a table but then, once seated, to spend some time here. And don’t forget to wash each dish down with some Cretan raki, a strong grape distillate similar to grappa.
