    When hiking in parts of South Korea’s Seoraksan National Park, you won’t go thirsty. Spectacular crags all around, rustic restaurants dot some of the trails. Mountain spring water combined with rice from nearby paddies leads to fermentation...and voilà: “rice wine!’ Yeah, the milky-colored contents in the bowl look like porridge...but that chunkiness comes from the fact that the beverage is semi-frozen. Ladle some into your bowl and sample some of this very local “dong dong joo.” (If you’re familiar with Korean liquor, this is similar to ‘makkeoli.’ If not, there’s something else for you to try.) Slightly sweet, a hint of sour, and ice cold. It wasn’t my wife’s favorite, but I bottled up what she couldn’t finish--yep, the little establishment let me fill up my empty water bottle with it so I could take it ‘to go.’ Ahh, the alchemy of rice and mountains... [This particular ‘rest-stop’ for hikers is located on the trail to Biseondae in the Cheonbuldong valley. Avoid autumn weekends at all costs--the crowds are formidable.]

There’s no wrong choice on this menu, but the roasted marrow bone and alla ‘nduja pizza are favorites for first-timers. Without a reservation, expect to wait at least an hour, even on a weeknight. If you’re looking to dine in a big group or want a primo time slot (7 p.m. on a Saturday night, say), then you’ll need to plan ahead and make a reservation at least a month in advance.

The discrete, well-trained staff floats among the tables delivering tray after tray of delectable sandwiches, cakes and scones. A tea sommelier stands at the ready to help you choose the perfect blend. You while away the afternoon piling feathery scones with clotted cream and preserves, sipping tea from Wedgwood cups and enjoying the the relaxed luxury of afternoon tea in Palm Court. Just when you think you can’t eat another bite, the dessert tray arrives bearing sweets almost too beautiful to eat. Almost.

Much of Tucson, like most western U.S. cities, is devoted to strip malls and parking lots, but the historic core still has blocks of 19th-century Sonoran-style row houses. In the 1960s, acres and acres of the Barrio Viejo was razed, but fortunately not all of it. Today it’s a combination of gentrification and the pleasantly decrepit: attorney’s offices, student rentals, and family homes share this yard-less streetscape in a bilingual neighborhood. In reading about the history of the neighborhood, I came across this description, written back in the 1930s by Dr. James Harvey Robinson of Columbia University, who was visiting Tucson for the first time: “But this cannot be the United States of America, Tucson, Arizona! This is northern Africa - Tunis! Algiers! - or even Greece, where I have seen as here, houses built flush with the sidewalks with pink, blue, green and yellow walls, flowers climbing out of hidden patios and overall, an unbelievable blue sky. And the sweet-acrid smell in the air? Burning mesquite. Lovely! And the people - charming. But all this is the Old World, not America.” The Barrio Viejo is perfect for a bike ride. You do feel as if you’ve left reality-TV-obsessed Gringolandia...if only for a few blocks...

    Markets offer great insights into a country’s culture, and in Taiwan the night markets are a mandatory stop for observing local life. Sometimes spanning entire city blocks, the markets are an amusement park of sorts—complete with a midway of mahjong and basketball games—where friends and families gather at colorful communal tables to feast on gastronomic discoveries from a clutter of stalls. Whether you’re at one of the nine markets in Taipei (such as the famous Shilin market or the more intimate Ningxia market) or visiting the big Da Dong market in Tainan, you won’t go hungry! From savory pork on a stick and crispy chicken chop (chicken that is fried and then grilled) to sweet, custard-filled wheel cake and sugar cane lemonade, market fare surprises and delights. Distinctively Taiwanese grab-and-go snacks include stinky tofu (which tastes exactly as it sounds) and the surprisingly appealing pig’s blood cake—a hearty dessert-on-a-stick consisting of rice and pig’s blood dipped in a pork soy broth and coated with peanut flour. A cultural immersion at its finest, the markets and the surrounding scooter-filled chaos will create a memory of Taiwan that will stay with you forever.     Like a nautical version of the yellow brick road, illuminated anchors embedded in the floors of Ironside Fish & Oyster lead you to the Emerald City of raw bars, where the bounteous platters come in Big, Bigger, Biggest, and Holy Sh*t. This last assortment might include, say, 24 oysters, 14 shrimp, 14 mussels, two pounds of lobster, two ounces of sustainable royal white sturgeon caviar, a portion of rockfish ceviche, and some kanpachi crudo for good measure (the mix changes daily according to what’s fresh). Not that lovers of cooked seafood will go hungry at chef Jason McLeod’s Little Italy hot spot, where the catch of the day is a perennial favorite. There’s even a small yet mighty vegetarian lineup (think charred broccolini with dried chilis, garlic, and parmesan; and Japanese sweet potato with scallion chimichurri and puffed quinoa). It’s all rounded out by an impressive bar, where 11 categories of whiskey are represented. While the menu occasionally diverges from the strictly seafaring, the decor never does. The interior design features prow figureheads turned lighting fixtures and artful stacks of steamer trunks.
