Limonada, the three-squares restaurant run by Las Catalinas, does a number of things very well. There’s a frozen coconut lemonade that will knock your flip-flops off. There’s a selection of housemade dips, including black bean and a buffalo chickpea puree, served with fried plantains that will fill your belly after a long day of kayaking. But, fittingly for this seaside location, seafood is the star, especially the ceviche. Staffers say they love the coconut ceviche, a mix of chipotle and watermelon bathing in a cloud coconut milk broth, but I fell for the tropical ceviche, tossed with mango, avocado, and just the right amount of acid.
