  • Mount Liamuiga, St Kitts & Nevis
    Standing at 3,793 feet, this towering, verdant peak is the island’s highest point. The dormant volcano is covered mostly in rain forest and capped with a cloud forest, making it ideal for a beautiful hike. The climb is an arduous one, however, and shouldn’t be attempted without a guide. If you manage to reach the top, you’ll be rewarded with sweeping views of St. Kitts, the Caribbean Sea, and neighboring islands like Nevis, Antigua, and Saba.

    Lying off the northern Freguesia de Santana peninsula, Ilha Grande’s Blue Lagoon (Lagoa Azul) is not a proper lagoon despite its name but rather an area of shallow Caribbean-colored waters. From Abraão, schooners bring you there to snorkel with striped and colorful fish. An old whitewashed church is all that remains onshore from the colonial era, and over a post-snorkel lunch in the small village that sits on Japariz Beach, you might spot dolphins swimming in the sea.

    Centrally located on Parque de los Novios, Ouzo serves the city’s best Mediterranean dishes, including brick oven pizzas, seared octopus and roasted lamb with orzo. The chef and owner, Michael McMurdo, began his culinary career in New York City at the Michelin-starred Greek restaurant Anthos. On a visit to Colombia, however, he was charmed by Santa Marta and decided to make his home in the city, opening Ouzo in 2011. The result is a celebrated Greek restaurant in an unexpected corner of the Caribbean.

    It’s fun to imagine that Xcalak, a sleepy coastal village south of Mahahual on Mexico’s Costa Maya, is what the entire Caribbean coast of Mexico looked like before the creation of the Cancún megaresort in the 70s. No Spring breakers, no cruise ships, no thumping beachside clubs, no big hotels. Just white sand and palapas, palm trees and pelicans, hammocks and fishing boats. Just you in secluded relaxation away from it all. Several clean and basic hotels are located on the old coast road and fresh, cheap seafood is abundant at local favorite Toby’s.     Dieppe Bay is ringed by black sand—a reminder that St. Kitts was formed by volcanoes. It’s also the site of the first European settlement in the eastern Caribbean, a French colony established in 1538 that was destroyed by the Spanish just two weeks after its founding. Beyond its historic significance, however, Dieppe Bay is simply a peaceful, palm-lined beach on the north end of the island. An offshore reef keeps the water calm for swimming and snorkeling, and Arthur’s restaurant is nearby for when you’re craving some fresh fish and vegetables.

The Caribbean menu is just as special: Dishes include christophene au gratin, grilled fish of the day, fish cakes, lamb curry, and more, all served on the owner’s handmade ceramic plates.     Modest in keeping with the sometimes understated influence of its namesake, the Camille Pissarro Gallery is a rare treat in Charlotte Amalie, St. Thomas. One of the original French Impressionist painters, Pissarro was born on the island in 1830. The gallery is located in his childhood home, the loft section of a merchant’s building at 14 Main Street. Several of Pissarro’s Caribbean-inspired works are on display at the gallery, along with those from about two dozen other artists, including Jenine Wesselman and Sylvia Kahn.

At the Christophe Harbour dining destination, guests gather on a palm-shaded deck overlooking White House Bay for craft cocktails and Caribbean fare, served from a corrugated steel bar that manages, like the menu, to project both a casual and sophisticated vibe. Live music and full-moon parties make this the place to be for sunset and beyond.

One must-try is the callelle, a local specialty of mashed green bananas with cheese, sour cream and homemade sausage. The alfresco seating on a large deck is a plus even on warm days, as it’s cooled by ocean breezes.

    The Maya Beach Hotel’s bistro is hands down one of the best restaurants in Belize—in fact, it’s been named Belize‘s restaurant of the year not once but twice. The food is a French spin on traditional Belizean fare, and the outdoor seating area is right on the beach, just steps from the Caribbean Sea. Order the coconut shrimp (served with a spicy mango sauce) and the roasted pumpkin-coconut-green chili soup to start, and lobster grilled cheese (with cheddar, brie, and brunoise) or layered veggies (roasted potatoes, onions, and plantains with a tomato vinaigrette and jalapeño-tofu aioli) for a main course.

    This tiny hideaway overlooking the sea near Port Antonio originally served as a live-in recording studio for performers such as No Doubt, Alicia Keys, and Amy Winehouse. Although recording sessions still go on, Geejam is now a seven-room hotel, its guests often honeymooning couples acting out fantasies having nothing to do with rock and roll. Geejam’s cabins, especially, are very private, and guests sometimes spend days taking meals on their veranda and splashing in their outdoor Jacuzzi without being seen by anyone but the staff, who appear only when called. Of course, who wants to stay hidden forever when the Bushbar restaurant promises convivial chitchat, an occasional game of pool, and even live music? Not to mention that the hotel beach, in a cove across a road at the bottom of the property, promises four-poster sunbeds and, yes, Wi-Fi.
