The vibe is spot on, given the backstory: A Frenchman traveled to Lisbon looking for a vacation home in the Portuguese capital. He first saw the building from a taxi and thought to himself, “It has nine windows, just like my home in France.     The setting at Coyaba, which sits among the palms at the Caribbean Paradise Inn, is hardly shabby, but this restaurant stands out for its excellent food and very creative menu. The creation of Chef Paul Newman (no relation to the actor), the menu changes daily but always includes unique appetizers and entrees that mix locally sourced ingredients with international flavors with delightful taste. Try the lobster thermidor, which comes with a Dijon-mushroom cream sauce, and melts in the mouth. Or the crispy, whole, yellow snapper fried with Thai spices for a less heavy but equally tasty entrée. The appetizers could be turned into a meal as well, as these also show off Newman’s culinary skills and creativity. The coconut-shrimp tempura is excellent on the appetizer menu, as is the guava-and tamarind barbeque ribs. Oh and make sure to leave room for dessert. The homemade chocolate fondant and lemon meringue pie are both standouts.
  • The ire of Mount Kilauea reforges the world before visitors’ eyes. Nicknamed “the World’s Only Drive-In Volcano,” it’s produced serious lava every day since 1983 with no signs of stopping. Pele—the fire goddess who lives here, according to Hawaiian lore—is on a roll. Occasionally the lava flows spill into the sea, releasing stunning plumes of steam. Don’t miss the petroglyphs, lava tube, lush rain forest, and more than 150 miles of trail, including the four-mile Kilauea Iki loop. The drive here from Kona or Kohala can take two and a half hours, a bit of a long day, so consider reserving accommodations in the town of Volcano. You’ll have plenty of time to explore this otherworldly landscape, and even see the lava glowing in the dark!

    Never underestimate the power of shocking pink. The intimate but lively dining room at Dulce Patria—the smash hit by celebrity chef Martha Ortiz—feels not unlike a stage set. Soon after 2 p.m., it starts to fill with high-powered ladies-who-lunch types, cooing over a menu of updated Mexican classics with extravagant, architectural presentations that are at least half the fun. That said, chef Ortiz’s flavorful sculptures really deliver: Tastes are delicate, authentic, and quite delicious. The well-balanced offering presents ample choices without overwhelming, in favorites like the corn-kernel soup, a full portfolio of quesadillas, duck mole, and an extravagant dessert list (gelatin lovers rejoice) that really does drive home the dulce part. A recent seating included telenovela stars and a former Señor Presidente. And who knew there were so many edible flowers?

    My CIA educational experience continued in one of the culinary world’s most famous classrooms. Named after France’s greatest chef, Paul Bocuse, the restaurant utilizes modern cooking techniques on classic traditional French fare. The multi-course meal we shared, prepared and served by aspiring young chefs was truly a delight. They showed off their skills first with an apple squash soup with mushroom foie gras ravioli followed with an entrée of strip loin of beef with oxtail bordelaise, marrow-encrusted endive, smashed fingerling potatoes, chanterelles, and gruyére foam ending with a chocolate molten cake with vanilla ice cream.

    There may not be an assembly line at My French Factory, but there are griddles that turn out delectable crepes. Helmed by two Parisian chefs, this café in Pantai Cenang offers a number of sweet combinations, including homemade salted caramel and almonds, raspberries and white chocolate, and fresh lemon juice and sugar. You can also savor a galette, a buckwheat crepe that can be stuffed with such fillings as mushrooms and tomato sauce or ham, egg, and cheese. Whether it’s a crepe or something else, just don’t leave My French Factory without trying a dessert. Other worthy candidates include Nutella milkshakes, tiramisu, and ice cream-topped waffles.

    I awoke at 6:30 this morning to find this view greeting me from our 12th floor balcony. This is looking eastward across Memorial Drive and Buffalo Bayou Park toward the Houston downtown skyline just about an hour before sunrise. Waking up at this hour every morning to see what uniquely beautiful view the dawn has to offer has become my ritual. So far, no two have been quite the same.
