Copenhagen is one of the world’s most sophisticated cocktail cities. Bars as far afield as Tokyo and New York keep a close eye on what is shaking—and stirring—here. Ruby, among the more elegant of Copenhagen’s bars, opened in 2007 with a focus on classic cocktails. It can be hard to find, but look for the flag of Georgia to guide you there, as it’s in the same building as that country’s embassy.

Elizabeth street cafe is the charming outpost offering French breakfast bites & creative Vietnamese plates you didn’t know you needed in your life. The menu consists of everything from ho and bun bo hue to sticky rice, banh mi, and chocolate croissant and macaroons. It’s most known for its brunch, but they also server dinner.

One of my highest recommendations for drinks is the Grand Hyatt Shanghai. The Grand Hyatt occupies the top 36 floors of the 88-story Jin Mao Tower in the Jetsons-looking Pudong district, so at sunset (or anytime) you have a stunning view (with no cover charge!) of all of Shanghai. There are lots of choices for eating and drinking in the Grand Hyatt. When I was there at sunset, nobody else was in the Cloud 9 sky lounge (which is like a night club with a 360-degree view from the 87th floor), so I went down to the 53rd-floor Lobby Lounge, which still seemed plenty high, and enjoyed the view and the cocktails there.

Overlooking Chesterman Beach, the Wickaninnish Inn, or “the Wick,” as locals call it, offers 75 cabinlike rooms with Adirondack-style furnishings. Amenities include a library stocked with board games and movies, a spa that offers West Coast–inspired treatments, and guided hikes to nearby tide pools every Saturday morning. Lincoln Road is a pedestrians-only boulevard in the heart of South Beach and one of the most popular places to visit in the area. Lined with shops and restaurants in historic Art Deco buildings and shaded by tall trees and fountains, Lincoln Road Mall has some of the best people-watching in Miami. Every restaurant has outdoor seating, and there are street performers and a farmers’ market that showcases the local community, farms, and purveyors. Visitors come from all around the world, so grab a cortadito and take it all in.

Cal Anderson Park (named after Washington’s first openly gay legislator) is located at the Pike/Pine nexus of gay-friendly, hipster-filled Capitol Hill. With plenty of grassy lawns for picnics, reading, or playing bocce ball, it’s no surprise that crowds flock here whenever there’s a sunny day anytime of year. It’s also conveniently located near some great shops and restaurants: Molly Moon Ice Cream, Rock Box karaoke, Cure, Cupcake Royale, Unicorn, Elliott Bay Book Company, Everyday Music, and all the cheap eats on Broadway. Grab some takeout or a coffee to go and head to the park to admire the fountain or enjoy some people-watching. On Sundays, the Broadway Farmers Market is just a block away on Broadway.

English-speaking bibliophiles love Under the Volcano for its cozy, welcoming space, where shelves stretch from floor to ceiling and wall to wall, sagging under the weight of previously read and gently used books. Those that don’t fit on shelves sit in towering stacks on the floor. Don’t expect the kind of boring pulp that tends to get left behind at hostel book exchanges. These are quality reads, including some unexpected and even rare finds.

The timber-beamed ceilings, wooden floors, and brick walls give a cozy feel to this pub in the tiny village of Rossnowlagh in County Donegal. Overlooking the long golden Rossnowlagh Beach and Donegal Bay, the pub specializes in seafood, with tasty oysters, mussels, and crab claws appearing on the menu at the Conservatory restaurant and Gallery dining room. There’s a very popular Sunday lunch and, from June to October, live music every Saturday night.

Cozy Dolina serves a lovely breakfast spread with an Eastern European bent. Try the nutty granola atop Greek yogurt with fruit, ricotta pancakes, and a hearty breakfast burrito with organic eggs, hash browns, and asadero cheese (topped, in good New Mexican fashion, with red or green chile). There’s also robust espresso and coffee, local bone broth, and baked grab-and-go sweets like chocolate croissants, banana pie with a flaky, buttery crust, and Slovakian-style vanilla cream puffs.

Opened in 2011, this luxury hotel from the Malta-based Corinthia brand occupies a Victorian building (once home to the Ministry of Defense) in the heart of the city, not far from Trafalgar Square, The National Gallery, the London Eye, and the theater district. The overall vibe is one of a 21st-century grand hotel, with a series of elegant public spaces—some vast and high-ceilinged, others warm and cozy—unfolding along the ground floor. Find modern, British-accented fare and a decadent breakfast spread at The Northall restaurant; all-day dining and a recently reimagined afternoon tea service (complete with Champagne trolley) at The Crystal Moon Lounge; and, in good weather, al fresco drinks, bites, and cigars at the leafy Garden Lounge. In summer 2018, the Bassoon Bar re-launched as a 1920s-era, New Orleans-inspired hangout, complete with a creative cocktail and bubbly menu developed by award-winning bartender Marcis Dzelzainis and wine expert Michael Sager. Shortly after, the hotel also opened Kerridge’s Bar and Grill, the first London restaurant from Michelin-starred chef Tom Kerridge.

Beyond its common spaces, the Corinthia is home to 283 residential-style rooms and suites, which include chic London and Garden suites (launched in 2018) and seven themed presidential suites, all crafted by David Collins Studio. Amenities include free Wi-Fi, Nespresso machines, high-tech media hubs, and marble bathrooms with rain showers, bathtubs with built-in TVs, heated floors, and ESPA products. Some of the higher-level suites even come with private outdoor spaces, butler service, and expansive views. Further relaxation can be found at the flagship ESPA Life by Corinthia Spa, one of the largest in the city with 17 treatment “pods,” a 24/7 gym, a nail studio, and a vast thermal floor with multiple pools, sauna and stream rooms, ice fountains, and sleep pods for extra serenity. To engage both visitors and locals, the hotel regularly offers unique programming and partnerships, including hosting in-residence experts—from neuroscientists to “futurist” trend forecasters—who lead talks and events throughout their stays.

Glendalough, or Gleann Dá Loch in Irish (which means “valley of two lakes”), is a quiet, picturesque valley near the Wicklow Mountains. Its 6th-century monastic settlement founded by St. Kevin is one of the most important in Ireland, and it’s surrounded by dewy grass and heather, lush hills, mossy rocks, and an impressive variety of wildlife. Monastic City itself includes the remains of ancient stone churches, a priests’ house, a stone fort, and a 100-foot round bell tower. The cemetery is fascinating with its lichen-covered headstones tilted every which way amid unkempt vegetation. Generations of Irish family histories are contained in this small plot of land, which is an integral part of this site. Glendalough is about 90 minutes’ south of Dublin and makes for a worthwhile day tour that includes sightseeing and hiking followed by a visit to a cozy local pub.

Cozy, romantic, and right on the beach, this Sanibel restaurant is perfect for a special-occasion dinner. Book a table for the hour leading up to sunset, then linger over New American cuisine like lobster tempura, blue crab cakes, and roasted oysters with chorizo. Also available are meat-centric dishes like short ribs, grilled filet mignon, and Hudson Valley foie gras.

Auntie or Teta Smilja, as locals lovingly call her, opened her cozy shop back in 1994. Since then, her sweets—made using traditional and original recipes—have been featured in international magazines and won national awards. Packed to go, her klaštuni (walnut-filled dough) and amareti (almond cookies with lemon and orange) will make your walk around Korčula memorably sweet.

To get away from the crowds in Chobe, stay at Ngoma Safari Lodge. It’s located on the far western edge of the park. The eight thatched roof cottages are completely spacious but cozy and feature decks overlooking the Chobe River. In 2011, the African Wildlife Foundation helped support this community owned and operated lodge in partnership with the Chobe Enclave Conservation Trust (CECT) and African Albida Tourism. In exchange for their support, the community agreed to set aside land for conservation. The lodge provides the community with additional revenue through conservation fees plus employment opportunities. It has also created a larger corridor for wildlife to have room to roam freely throughout the region on their ancient migration routes.

Tucked down a long and bumpy dirt road on the way to Hopkins, Mayflower Bocawina National Park is a well-maintained nature escape offering a variety of adventures, from the casual to the extreme. Decide how brave you feel and choose from the options: hiking and birding along moderate trails to waterfalls; a two-hour, steep, adrenaline-pumping hike, with the occasional rope to climb, to the breathtaking 1,000-foot-high Antelope Falls; zip-lining across the park day or night; or rappelling 150 feet down a couple of waterfalls. Fill up afterward at the on-site restaurant before hitting the road, or book an overnight stay at the park’s cozy cabanas.
