Madeira Bistro, a burnt-orange corner joint, features a wide entrance and wall made nearly entirely of windows. The airiness invites breezes in and allows the intoxicating aroma of the rodízio-style grilled meats to waft out. Here, round after round of rib eye, hanger steak, top sirloin, and other preparations are served, along with sides of basil mashed potatoes, coleslaw, sweet potatoes, and more. The food keeps coming until you cry uncle. The knowledgeable staff is there to help with pairings and perhaps wheel you out.

    A recent addition to the Puerto Rican capital’s culinary scene are food hall–style spots where diners can choose among multiple kiosks, or stalls, each featuring a distinct kind of cuisine. Lote 23 is one such spot, located in the working-class neighborhood of Santurce. More than a dozen food entrepreneurs have fare on offer here, from pizza and tacos to bao and burgers. If you just need something to cool yourself off in the tropical heat, there are popsicles and cocktails, too. The alfresco eating area has plenty of picnic tables where you can sit and enjoy whatever you’ve ordered.

    The concept of a New Moroccan cuisine has only been taken seriously in the motherland over the last couple of years, and only very recently in Fes. Chef Najat Kaanache, whose résumé includes stints at trendsetting restaurants El Bulli and Noma, opened Nur in September 2016. Designed by Stephen di Renza (creative director at the Jardin Majorelle boutique in Marrakech), the space has a monochromatic vibe that’s offset by stunningly beautiful plates of food that include innovations like duck confit on herb “meringue,” cured shark on Moroccan corn bread, and grass-fed beef adobo and potato hearts. This is a bright new chapter in Fes’s culinary evolution.

Order the coconut shrimp (served with a spicy mango sauce) and the roasted pumpkin-coconut-green chili soup to start, and lobster grilled cheese (with cheddar, brie, and brunoise) or layered veggies (roasted potatoes, onions, and plantains with a tomato vinaigrette and jalapeño-tofu aioli) for a main course.

    Petra flourished more than 2,000 years ago, trading with Rome as an equal before being abandoned after a series of earthquakes in the 4th and 6th centuries C.E. It wasn’t until the 19th century, when European explorers “rediscovered” it, that the ancient city returned to the public consciousness. Now, visitors can walk down the narrow canyon of the siq to the city entrance—as dramatic an approach as any to a tourist attraction on the planet. The canyon opens up onto the carved facade of the Treasury, Petra’s most iconic site. From there, you can explore the cliffside tombs with their colorful bands of sandstone, the Street of Facades, and the amphitheater hewn from living rock. The ancient center lies some distance off, along with the splendid old Monastery, which sits at the top of a steep but rewarding climb. Consider buying a three-day ticket and visiting at different times of day to enjoy the changing light—early in the morning is best for the Treasury, while late afternoon is better for the Royal Tombs.

    If you want to travel back to the 1980s à la Stranger Things but still be able to order a drink, Ricky’s South Beach is the place to go. With air hockey, board games, and arcade games like the Terminator and Dance Dance Revolution, you can relive the unplugged past, or relive college days at the beer pong tables. The impressive whiskey collection is very adult, however, and bands and comedians perform on the large stage. Ricky’s also serves the no-frills bar food of your dreams: waffle mac ’n’ cheese, Korean frog’s legs, stacked chicken nachos, and funnel cakes.

    The Inca Trail is perhaps the most famous trek in Peru. This is the road to Machu Picchu, an ancient route that leads from the Sacred Valley into the heart of the Andes. You must obtain a permit and hire an official guide in order to hike the Inca Trail proper. There are plenty of tour operators in Cusco that offer trips up to Machu Picchu, so you should definitely look at reviews before you choose. For better or for worse, the tours are all-inclusive. The local tour operators employ porters to carry your packs and set up a camp. A team of local chefs will prepare three meals a day, and many hikers come back raving about the delicious meals. Keep in mind that the trek can be tough, especially in the first few days. The trail is often narrow, and it flirts with formidable heights. The mountains in this part of the Andes can rise well over 13,000 feet, and many hikers find themselves suffering from altitude sickness. Make sure to take a few days (in Cusco or the Sacred Valley) to acclimatize before you begin the journey. Finally: make sure to plan ahead! The Peruvian government limits trail access to 500 people per day, including porters. This regulation protects the local ecosystem and the delicate ruins, and it ensures that the trail won’t be too crowded. However, it also means that permits for the peak summer season sell out months in advance. If you aren’t able to get a permit for the classic Inca Trail, never fear: there are various other trails that lead to Machu Picchu.

    Running three miles along the Tulum coastline, this massive beach has some of the Riviera Maya’s best conditions: soft white sand, waves tame enough for a calm swim, plus incredible shades of turquoise water. The stretch is chockablock with restaurants and beach clubs offering on-the-sand food and drinks. Along the main coastal road that runs parallel to the shore, you’ll find rustic cabins and luxurious hippie-style hotels with plenty of amenities, whether you’re looking for a bed for the night or just somewhere to grab lunch. After dark, Tulum Beach has some of the region’s best stargazing due to its secluded location and absence of city lights.

    Set directly above rocky low cliffs of Negril and lit at night by torches and candles, Rockhouse Restaurant provides the setting for an elegant and romantic evening. (The setting’s pretty great during the day, too—breakfast, lunch, and dinner are served in this open-sided palapa and patio.) The New Jamaican cuisine means a refined and more health-conscious preparation of classic island recipes, with as many ingredients as possible from the hotel’s small organic garden across the road. Among the notable dinner offerings are the blackened mahimahi with mango chutney, snapper steamed in a banana leaf, and coconut shrimp.

    Kimana Sanctuary is special for a number of reasons. Not only was it the first community-owned conservancy in Kenya when it was established back in 1996, it’s also located in a crucial wildlife corridor that links Amboseli National Park with the with the Chyulu Hills and Tsavo protected areas, providing animals with a route though the narrowest part of the space between two settled areas. When elephants pass between the areas, they are able to use this corridor; sometimes they will just pass through the Sanctuary and other times they will stay for months.

    Accommodation for guests is available either by camping in a tranquil spot by the river or staying at the dreamy Kimana House, a four-bedroom self-catering property that comes with an on-site manager to do the washing up. Two notable organizations are involved: Big Life Foundation manages the Sanctuary in partnership with the Sheldrick Wildlife Trust.

    This brilliant, partially covered amphitheater offers views not only of the stage but of the stunning Sangre de Cristo and Jemez mountain ranges in the distance. The world-renowned opera company presents five works in repertory each summer. Book well in advance, and don’t miss the elegant tailgating in the parking lot (some participants go as far as white table linens and sparkling wine) before the performance. A picnic can be ordered (at least 48 hours in advance) for pick-up two hours before performances, or you can cobble together your own basket of goodies from local restaurants. Tablecloths not included.
