  • Of all the reasons to hike in B.C.’s Coast Range, visiting a train wreck would not rank high elsewhere. This is Whistler, though, where a train derailment becomes a canvas for artists and a must-see novelty that remains well off the beaten track (sorry!), even for many locals. A new bridge spanning the Cheakamus River makes the hike legal and considerably less treacherous. The trail’s steel-meets-seedlings design is reminiscent of New York City’s High Line, and among the many spurs are a boardwalk into the coastal rain forest and a longer trek that leads to the Sea to Sky Trail. Once a hush-hush locale for graffiti artists and mountain bikers, the Train Wreck hike and suspension bridge route are now well-marked at the Sea to Sky trailhead, just outside of Function Junction.

The earth’s largest natural crater (makhtesh), the site offers a range of activities from horseback riding and jeep tours to mountain-bike trails and family excursions. At the visitor center in the city of Mizpe Ramon, guests can learn about the area’s unique flora and fauna, such as ibex; participate in special interactive exhibitions; and take in a panoramic view of the expansive crater, which measures 25 miles long and 1,600 feet deep, from the observation deck.

    Spoken of in almost reverential terms by people that have traveled there, Sa Pa is often seen as a holy grail of destinations in Vietnam. Part of that is because of the environment—a cool mountain town that has lured visitors with its salubrious air and alpine scenery since the early 20th century, when the French constructed facilities for sick officers to recover—as well as its remoteness, located close to the Chinese border in the country’s extreme north. Most visitors come to Sa Pa for the hiking in the nearby valley peppered with minority-ethnic-group villages, or to climb Mount Fansipan, the country’s tallest peak, which is located just southwest of the town. Conquering the summit once required a two-to-three-day hike, but now can more easily be reached with the help of a cable car (opened in 2016) that gets you most of the way.

    Verspertine isn’t so much a restaurant as an experience—a collaboration between chef-owner Jordan Kahn and architect Eric Owen Moss. The futuristic four-level structure, wrapped in undulating steel with glass walls and minimal design elements, sets a dramatic stage for the art on the plates. The restaurant serves dinner only—and by reservation only. Pull up to valet parking and they already know who you are. Wait briefly on the garden’s heated benches for the elevator up, where chef Kahn—whose bona fides include French Laundry and Per Se—is the first to greet each guest by name. Tables seat four people at most, keeping things intimate for a sensorial multi-course meal that’s unique each night. Sculptural dishes could include delicate snowy white asparagus with sword fin squid and macadamia nut, or hirame (fish) served in a glittering black bowl that appears empty at first glance. (They do accommodate dietary restrictions and can offer modifications.) Essentially, get ready for a lot of surprises. One thing that doesn’t change: the layered, effects-heavy original score created by the band This Will Destroy You specifically for Vespertine. Pro tip: Opt for the I beverage pairing option (III features nonalcoholic juices and infusions), which offers a libation for each course.

    Opened by local restaurateur Lisa Wong in 1992, Rosario’s started as a neighborhood café, where San Antonio residents came to satisfy their Tex-Mex cravings. Today, it’s a city institution, known for its south-of-the-border specialties and house favorites. Don’t miss the tantalizing albondigas con arroz (Mexican meatballs braised in a spicy broth and served with rice and queso fresco), or the flavorful enchiladas Mexicanas (three queso-filled enchiladas smothered in a fragrant chile-infused sauce). And be sure to wash it all down with a perfectly crafted margarita.

These pastures surrounding a hilltop village (Gruyères) crowned with a castle (the Château de Gruyères), happy Swiss cows grazing with views of the Alps all around, producing the milk which, in time, arrives on grocery shelves as cheese around the world, stamped ‘GRUYÈRE’...and there’s a geometric garden in the castle’s courtyard, too.

    Historic Santo Domingo offers a unique look at how the New World was settled in the years following Christopher Columbus’s arrival in the Caribbean on his first voyage in 1492, as well as subsequent expeditions. The Colonial Zone sits along the Ozama River, where the settlement’s original layout, walls, forts and other buildings remain much as they were 500 years ago. With its wealth of colonial architecture, the area has not surprisingly been recognized by UNESCO as a World Heritage Site. Among the historic buildings is the first cathedral built in the Americas, the Basilica Cathedral of Santa María la Menor (also known as the Catedral Primada de América, recognizing its historic significance). The ornate church once housed the remains of Christopher Columbus until they were moved to the Columbus Lighthouse, in the eastern part of the city.

    Even before its designation as 2010’s best bakery by restaurant guide Gault & Millau, La Gambette à Pain drew long lines to buy its bread. The boulangerie bakes some of the best loaves in the city, working with carefully selected organic flours. You won’t find fancy Parisian pastries here—the focus stays on breads. There are some sweets, however: tempting viennoiseries (goodies made with yeast dough) like an orange flower blossom brioche and seasonal fruit tarts.

Rent a home and eat out often. The island’s restaurants serve lots of rock lobster, which is plentiful in these waters thanks to sustainable fishing practices.   • We live in the age of artisanal everything, from chocolate and coffee, to, you guessed it, water. At Mexico City‘s Casa del Agua, staff produce and bottle “local water” on-site. The bottles—designed artisanally, of course—are charming souvenirs that you can use over and over again (with your own, less expensive water) once you’re home. Be sure to go to the second level of the shop to see the filtration process, and to the terrace level to see where the water is captured.
