    It’s no coincidence that walking around Liberty feels as if you’re exploring someone’s grand home; the department store’s founder, Arthur Lasenby Liberty, wanted to create that very feel, and so in 1875 settled on a Tudor-style building that featured a jumble of interconnecting rooms. A wooden staircase at one end connects the six floors, and a paper room sells stationery in the store’s iconic floral Liberty print, fashion and beauty halls, a cafe, and multiple branded treatment rooms. Still, it’s the florist’s shop outside that seems to provide the main draw; as any passing tourist will attest, its colourful array of blooms is highly Instagrammable.

    Set in the UNESCO World Heritage-listed Banff National Park, the year-round Fairmont Banff Springs was the brainchild of Sir William Cornelius Van Horne, president of the Canadian Pacific Railway. On arrival at Banff, the tourism visionary made the canny observation, “Since we can’t export the scenery, we’ll have to import the tourists;” thus, he set about building a string of great railway hotels across Canada. The original wooden hotel that opened here in 1888 burned down in 1926, but was replaced two years later with the grander castle-meets-baronial-Scottish-hall structure that exists today. The public lobby spaces are vast, and there are countless nooks to curl up in with a book where guests will remain undisturbed. With its signature stone walls, turrets, and winding staircases, Van Horne’s gambit paid off: The Fairmont Banff Springs feels for all the world like an elegant and ancient castle, albeit one with all the modern conveniences.

The relaxed destination includes an outdoor café, a restaurant named Farmstead, and a general store with wine- and olive oil–tasting bars—as well as an open-air pavilion that is perfect for events. Start mornings at the café, where you can enjoy a cup of Stumptown coffee and freshly baked goods at picnic tables in the shade of a giant blue spruce. Later in the day, hit Farmstead for a lunch of salads made with vegetables grown on-site or for a rack of the restaurant’s signature Heritage St. Louis ribs.     The name of this restaurant gives a fairly big clue as to its culinary specialty—i.e., fish. But the market part of the name is equally important, since the kitchen espouses a commitment to fresh ingredients, which are usually purchased from local farmers and fishermen. Spread across two floors inside one of central Reykjavík’s oldest buildings, this smartly decorated spot is run by head chef Hrefna Rósa Sætran (part of the Icelandic National Culinary team), and serves not just fish and seafood but also meat and vegetarian dishes, all prepared in an open kitchen that boasts the country’s only robata grill. There is a separate raw bar serving up sushi and sashimi, and a surprisingly funky cocktail and craft beer menu.

    Given the civilized associations of the Côte d’Azur, the Massif des Maures may come as a surprise. This small mountain range that runs parallel to the French Riviera for some 60 kilometers (36 miles) is still, at least in areas, decidedly wild with its typically Mediterranean forests of oaks, pines and chestnut trees. Don’t expect the soaring peaks of the Alps—even the tallest mountains are under 750 meters (2,460 feet)—but on the plus side, that makes the area accessible even for casual day hikers. Well-marked and maintained trails lead to a more rugged Provence that feels far from the beach towns below. (Note, however, that some routes may close in the summer and autumn depending on the risk of fire.)

    There are times when only a bowl of pasta will do, and those are the times to head straight for Pepe Nero, with its romantic orange-tree courtyard for alfresco eats and warren of more-intimate dining rooms. Note, the latter can sometimes feel a bit cut off from the main hub, so it’s arguably a better summer jaunt, but you can’t knock the food. Chef Khalid Robazza Essafa makes all his own pasta. The roast veal agnolotti (stuffed pasta squares similar to ravioli) is sensational, as is the lasagna and the eggplant Parmesan. The king prawn risotto has earned Essafa a devoted, local fan base, although out-of-towners have been known to rave about his tandem Moroccan menu, too.

    Named for Singapore’s highest point, the 163-meter-high (534-foot-high) Bukit Timah, the nature reserve of the same name encompasses 1.64 square kilometers (405 acres) of green in the middle of the city-state. Some 40 percent of the nation’s flora and fauna is represented here, including the greater racket-tailed drongo bird and the crab-eating macaque. An “ecological bridge” allows animal life to pass over an expressway to an adjacent reserve.
