In an all-white open-air dining room that spills out onto the sand overlooking Meads Bay on Anguilla’s west end, Jacala serves just 35 guests a night. Chef Alain Laurent’s French-inspired menu includes dishes such as fennel-spiked conch chowder, snapper meunière, and a steak tartare prepared tableside upon request.

La Bretxa shopping center houses the usual trappings of a modern-day shopping mall, but below ground one can find the city’s largest and best market for the fruits of the sea. Cold, wet and crowded, this is the spot where you will find both renowned chefs and housewives of the city vying for the best anchovies, calamari, and cod of the day’s catch.

Bideluze hits all the right notes. There’s nothing artisan or hoity-toity about it. Just a good, comfortable Irish pub style vibe, with pintxos that are big enough to qualify as sandwiches and a kitchen open all day long. Mornings in Bideluze are the best. The buzzy, warm ambience is the best to enjoy a big cup of Colacao, Spanish hot chocolate, which they make the RIGHT way here. The interior of the mug is coated with the paste before being filled with hot milk and served with four Maria cookies. Perfection.

Named among the best mountain restaurants in the world by The Telegraph, Chez Vrony sits on Rothorn Mountain, a short ski down from the Sunnegga Express in the hamlet of Findeln. Housed in a rustic-chic Swiss chalet, it’s been in operation for 100 years and continues to be extremely popular. Lunch reservations are a must; request a seat on the deck for Matterhorn views, then start with the charcuterie plate, which features house-cured speck, bresaola, salami, ham, cheese, and a scoop of homemade rosti. From there, move on to the burger—Chef Vrony’s family raises its own beef, hand-packs burger patties, and uses perfectly seeded buns slathered with coleslaw and a secret sauce, making this a must-order even if it is quintessentially American.

Offering something more immersive than classic resort dining, Banyan Tree Vabbinfaru has a four-course menu that can be served right on the beach. Watch a chef prepare your gourmet Maldivian lobster dinner right in front of you while you listen to the soothing sounds of waves lapping at the shoreline and enjoying the fresh sea air. Alternatively, choose the Sharkpoint option and tuck into sea scallops and lobster on a secluded stretch of sand. For a dose of culture, head to the open-air Naiboli Bar on a Friday night and take in a traditional bodu beru performance on the beach.

Since its opening along a dazzling stretch of sand known as Cabbage Beach in 1962, The Ocean Club on Paradise Island has been the preferred stay of old-money patriarchs and traditionalists. Lime Cay, an uninhabited island about two miles off of Port Royal, is a favorite destination of Kingstonians for white-sand beaches, sunbathing, and swim time. This is an ideal deserted escape on weekdays, and weekends are usually only a bit busier and bring a few vendors. Don’t count on the vendors, though: Bring your own food, water, sunscreen, and snorkeling gear. Wear water shoes, as there can be urchins. To arrange a trip over, ask at your hotel, or inquire at the bar on Morgan’s Harbour called the Y-Knot—they’ll help you find a boat ride or fisherman willing to take you to the island for no more than US$20.

Opened in 2010 by a Dutch couple, Baoase Luxury Resort is an intimate spot with fewer than two-dozen rooms. Despite its size, however, it has all the amenities of a larger property, including a spa, health center, boutique, and more. A 10-minute drive from the center of Willemstad, the Balinese-style spot feels secluded and tranquil, especially when swimming off the lagoon-like beach or sitting next to the banyan tree in the lantern-lit garden.

If all the privacy leaves you feeling extra romantic, you can even have the restaurant set up a picnic dinner to enjoy on the beach or under a gazebo.

Self-described as “your home by the sea,” L’Auberge Del Mar feels more like a mansion plucked from a Nancy Meyers movie. The immaculate property comprises 121 estate-style bedrooms set around a central pool and dining terrace just steps from a textbook SoCal beach. Rooms are full of welcoming touches—plush bedding, marble bathrooms, private balconies or patios, and carefully curated books on local topics—while facilities include several upscale dining and drinking options as well as two tennis courts, a 24-hour fitness center, and an award-winning spa. The hotel even welcomes dogs—and remembers them from previous visits—adding a personal touch to every stay.

Stop by the Living Room for cocktails and regular live music, savor fish tacos at the outdoor Shoreline restaurant as the sun dips into the Pacific, or end the night by the firepits at Bleu Bar. During the day, head to nearby Powerhouse Park and Beach for surfing, swimming and sunbathing, or Torrey Pines State Natural Reserve for hiking. Both Del Mar village and neighboring La Jolla offer upscale shopping and dining, and San Diego is less than 30 minutes on the freeway. Should you wish to stay closer to “home,” there are Electra Beach Cruisers available to rent as well as a village shuttle that covers a one-mile radius around town.

Mandarin Oriental’s first Caribbean resort has all the amenities you’d expect from the luxury brand—with the price tag to match. Nestled within lush greenery overlooking the white sands of Godahl Beach, the 26 suites and villas, which sit on the grounds of a 1,200-acre estate on the island of Canouan, are elegantly appointed with modern furnishings, marble baths, and rosy accents befitting the hotel’s name. Here, though, it’s all about the public spaces, including a Jim Fazio–designed golf course overlooking sparkling blue waters, a hilltop spa specializing in island-themed treatments, and four elegant restaurants serving every kind of cuisine, from pan-Asian to Italian. At Turtles, a cocktail lounge straight out of the Hamptons, opt for the Pepper Bliss, made with rum, bell pepper syrup, and pineapple juice.

Dum Pukht is not just a meal. It is a royal experience.
