Varieties range from familiar orange blossom and lavender to more unusual treats like caper and carob. If jujube is available, note that it’s favored for its anti-inflammatory and antioxidant properties, is considered to be particularly good for the liver and is locally consumed more as a medicine than something to spread on toast. People travel from afar to take this honey home, so the proprietor, Mr. Hicham, is used to packing it for air travel. Pop around the corner to the spice shop on Rue Bouhaj to stock up on freshly ground spices, too, like lemon-scented cumin, rich red paprika, ground ginger, sweet and earthy turmeric, and heady cinnamon.

    For a glimpse of Sydney‘s high society, visit Vaucluse House, a beautiful villa and garden in the Eastern Suburbs near Watsons Bay. A gothic revival mansion built in 1803, Vaucluse House once belonged to ex-convict Sir Henry Browne Hayes, who was shipped to Australia from England for abducting a banker’s daughter. For a deep dive into the dish’s history, head to tiny fromagerie La Tzoumaz, where Yohann Magnin works for four months every summer making the drool-inducing cheese. Visitors can watch the entire process, from swirling and heating the milk to packing the cheese into a mold, then venture into the back room to get a sense for the aging process (don’t forget to grab a sample). Magnin is the only cheesemaker in town and his factory sits opposite Maison de la Forêt (House of the Forest) as you enter the village from the valley.

The four elements—wind, water, fire, and earth—are central to the hotel’s aesthetic, with different design details, such as fireplaces and candles, alluding to these elements. Rooms are decorated with some local crafts, and beds are dressed with colorful spreads. The hotel really is in the heart of San Cristobal, within easy walking distance of markets, restaurants, and the city’s main sights, many of which are architectural gems dating back to the colonial era.

  • While every major cultural group in Belize celebrates its own festivals and rituals, one of the most unifying festivities is Garifuna Settlement Day, which is also a national holiday in Belize. Celebrated on Nov. 19, the day marks the arrival in 1823 of the Garinagu people to the shores of Belize. Head to Dangriga the evening before, when vibrant celebrations begin in town. Locals and visitors from all over Belize and the world gather under the thatch-roof sheds to dance and chant to Garifuna drums until sunrise. Canoes are filled with cassava leaves and traditionally clothed residents, who paddle their way to shore while those waiting along the banks cheer. Once the canoes reach shore in the morning, the revelry continues in the streets of Dangriga all day long, with a traditional church service, followed by street parades and dancing.

    Referred to by locals as Bustani ya Mungu—literally, “the Garden of God"—this national park is a botanist’s delight, bursting with the colorful orchids, lobelias, and lilies that thrive in the fertile volcanic soil. This veritable Serengeti of flowers is also a bird- or butterfly-watcher’s paradise, with many endemic species swooping and fluttering amid the open and fertile grasslands. The plateau is accessible by 4x4 from Mbeya. Follow one of the hiking trails along the impossibly beautiful rolling plains or attempt a hill climb in the shadow of the looming peaks of the Kipengere, Poroto, and Livingstone mountains. The best time to visit is during the blooming season between October and April.
