At Robert Sinskey winery, cookbook author and Chef Maria Helm Sinskey pairs bites made with ingredients from their garden with the new releases of Pinot Noir and the excellent Abraxas, a blend of Pinot Gris, Pinot Blanc and Gewurztraminer. Round Pond Estate takes it a step further — the four-course lunch served on the terrace uses all biodynamically farmed produce, vinegar and honey from the estate as well as olive oil that is crushed by stone just a stone’s throw from the winery.

I’ll never understand why most visitors cluster together to climb one pagoda when the plains are littered with thousands of others that afford anyone willing to visit a wholly new perspective on an oft-visited place. This is the way I look at every destination, whether new, old, untamed or untrammeled.

    Spoken of in almost reverential terms by people that have traveled there, Sa Pa is often seen as a holy grail of destinations in Vietnam. Part of that is because of the environment—a cool mountain town that has lured visitors with its salubrious air and alpine scenery since the early 20th century, when the French constructed facilities for sick officers to recover—as well as its remoteness, located close to the Chinese border in the country’s extreme north. Most visitors come to Sa Pa for the hiking in the nearby valley peppered with minority-ethnic-group villages, or to climb Mount Fansipan, the country’s tallest peak, which is located just southwest of the town. Conquering the summit once required a two-to-three-day hike, but now can more easily be reached with the help of a cable car (opened in 2016) that gets you most of the way.

While many of the dishes have witty, pun-inspired names, like Lust in Translation (tuna rolls with seaweed) or Chasing the Chick (grilled chicken breast with house-made Asian pesto), the combinations of spice and texture are spot-on. In addition to the chow, expect delicious cocktails, Pasteur Street brews, and live music.

    Located inside the rectory building of the former St. Vibiana’s Cathedral, Redbird pays homage to its historical walls by keeping decor simple and minimal. The patio outside was practically built for brunch, which features an impressively deep set of cocktail options alongside frittatas and ricotta-blueberry pancakes. The real draw of the place, though, is its fabulous dinner menu, which offers American-inspired dishes like California sea bass, Day Boat Scallops, and a thyme-heavy chicken potpie. The wine list is extensive when it comes to both bottles and sips by the glass, so follow your server’s lead when it comes to picking the perfect one for your meal.

    The municipality of El Nido, on the northern tip of Palawan, is known for the jagged limestone cliffs that spike up from the turquoise waters and that are home to the island’s endemic swiftlets. Known locally as balinsasayaw, these birds use threads of their saliva instead of twigs to build their nests in crevices on the cliffs (El Nido means “nests” in Spanish). Climbers called busyador scale the cliffs each day to collect the edible birds’ nests, which are mostly sold to China, where the nests are believed to contain a high level of natural minerals that provide health benefits. But the recent decline of the swiftlet population has caused the deterioration of the industry, and many busyador have shifted to tourism instead. El Nido attracts millions of visitors each year to its beautiful white-sand beaches and unspoiled natural landscapes, which include caves and hidden lagoons as well as the legendary cliffs. Activities here include hiking, sea kayaking, snorkeling, and diving, and everything is a lot more low-key than at busier destinations like Boracay.

One of the best, of course, being a journey by boat along the coast trying to find one’s own special paradise. Will it be the glamorous Marstrand, the charming Käringön or the lush, green Orust? There are several boat companies that sail along the coast, so with a bit of planning you can go from Gothenburg in the south to Strömstad in the north. You can also buy a prearranged package, complete with overnight stays and activities along the route. If you want to bring a bike so you can cycle on the islands, be sure to check if bikes are allowed on board and on the islands.

    From the Adirondack chairs lazily spread across the pier and the seafood restaurant’s waterfront deck, it’d be easy to confuse the Hotel J for somewhere in New England. Even the rooms are decked out in a healthy dose of Americana, with tasteful white cotton and stars-and-stripes accompanying the natural wood furnishings and nautical memorabilia. And the seafood-focused restaurant—which, frankly, feels like a luxury yacht—channels American favorites in its brasserie-style menu.


    But, fear not, the Hotel J is also very Swedish. Located on Nacka Strand 20 minutes from Stockholm, it capitalizes on the Swedes’ love of boating, especially in the summer months, when the archipelago’s 30,000 islands become day trip and vacation destinations for the entire city. Not only is it affiliated with a local kayak and canoe rental center—just ask if you’d like to spend a day on the water—but the ferry to and from Stockholm stops in front of the restaurant, allowing city dwellers to make pilgrimages to the eatery at will. The hotel’s sprawling, wooded grounds, too, are exceptionally Swedish, especially with the 19th-century summer mansions that dot them; most are used as event spaces now, but don’t let that curb your exploring.

    Maybe the most stunning of the many palatial mid-19th-century commercial edifices around the Freyung section of Vienna’s Inner City, the Italianate Palais Ferstel hosts the ground-floor Café Central and its tiny outdoor terrace. Fittingly, as it is perhaps the landmark among Vienna’s old-world coffeehouses, Central is, well, central: It boasts a prime location by the Hofburg Palace, meaning it’s touristy for sure. But one look at the forest of Gothic Revival columns and vaulted ceilings in the cathedral-like interior of this former bank building, and you won’t mind if you have to wait a few minutes to be seated. Central has an extensive menu and a huge periodical collection to peruse before you head back out to tour the Inner City’s treasures.

    Conveniently located a few miles from Florence, this estate has been producing wine and olive oil for over 1200 years, making it one of the oldest in Tuscany—though the current owning family has been involved for “only” about a century. Today, in addition to producing beautiful wines using sustainable and certified biodynamic farming methods, the estate includes a few accommodation options (including a restored farmhouse), a noted cooking school, a restaurant and wine bar, and acres of organic vineyards and olive groves. Book a guided tour to visit the historic cellars, the crushing area, and the wine bar, where you’ll get to taste some of the delicious homegrown products, including wines, olive oil, and Vin Santo. Wine-paired lunches in the bar or main villa can also be arranged, and if you’re there in the summer, take a glass onto the terrace, which boasts views out to Florence’s Duomo.

    At the edge of the Baja Peninsula, One&Only Palmilla was originally built in 1956 as a 15-room hideaway for Don Abelardo Rodriguez, son of the then-president of Mexico. Today, it’s one of the region’s most luxurious resorts, composed of 174 oceanfront rooms and suites and two villas decorated in neutral hues and splashes of red; many have infinity pools and patios that face the Sea of Cortez.


    One&Only Palmilla has one of the area’s few swimmable beaches, plus three private rocky coves complete with floating beds, lounge chairs, and dedicated butlers. Activities include snorkeling, surfing, parasailing, and golfing the award-winning 27-hole course designed by Jack Nicklaus. The massive spa’s wellness garden features a juice bar and 13 treatment villas; several have private plunge pools, rain showers, and swinging daybeds.



    One&Only Palmilla is a member of EarthCheck, a scientific benchmarking certification program, for its sustainability efforts, which include a state-of-the-art water purification system that produces and bottles filtered water on site. The resort works with the Red Committee for the Protection of the Sea Turtle by helping with daily patrols of nearby nests, an activity guests can join.

    One of New York’s loveliest historic districts, Brooklyn Heights sits along the East River to the south of the Brooklyn Bridge. Its streets are lined with beautifully preserved and restored 19th-century town houses while a promenade along its western edge offers views of the skyline of downtown Manhattan—especially stunning when the sun is setting over New York’s harbor. Simply wandering its streets, you’ll feel transported back in time, but there are some buildings of special interest you may want to seek out. The celebrated 19th-century preacher Henry Ward Beecher (brother of Harriet Beecher Stowe) presided at Plymouth Church (57 Orange St.). Truman Capote finished Breakfast at Tiffany’s and wrote In Cold Blood during the 10 years he lived at 70 Willow Street, and novelist Thomas Wolfe lived at 5 Montague Terrace from 1933 to 1935. Grace Church (254 Hicks St.) and St. Ann & the Holy Trinity (157 Montague St.) are outstanding examples of 19th-century Gothic Revival architecture. After you are done exploring, Atlantic Avenue, which marks the southern edge of the neighborhood, and Montague Street have a number of restaurants to choose from if you are ready for a meal.
