The Hong Kong-based Swire Hotels launches in the U.S. with their 352-room EAST, Miami, located in city’s bustling financial district. L.A.-based Studio Collective and New York’s Clodagh Design paired up to design the interiors, which mix intricate woodwork with sleek furnishings. Original artwork from notable names such as China-born Zha Songgang and Miami-based Alexander Mijares hangs throughout the hotel, along with photographs that highlight Miami’s colorful scenery and Modernist architecture. Quinto La Huella, an outpost of a famous seafood restaurant in José Ignacio, Uruguay, promises to draw locals and visitors alike, while the hotel’s rooftop space serves Asian-inspired tapas with views of the skyline. A belle epoque grande dame presiding over San Sebastián’s iconic La Concha Beach, the Hotel de Londres y de Inglaterra has been a palace, casino, hospital, and of course hotel since its construction in 1865. Before and after World War I, it was the kind of place where well-to-do Europeans went on seaside holidays for months at a time, enjoying direct beach access, the city’s renowned seafood, and the hotel’s elegant design. Nowadays, the society consists of a somewhat less star-studded lineup—once Toulouse-Lautrec, Archduchess Elizabeth of Austria, and Mata Hari were all guests—but the unobstructed Bahía de la Concha views, lovely rooms (all with private balconies), and pride of place at the heart of the city remain. The window-lined brasserie takes its cue from classic French bistros—it’s not hard to imagine that the well-dressed gentlemen at the next table are French aristocrats-in-exile—and its tables along the beachfront promenade are the perfect place to while away a few hours over pintxos, txakoli (a sparkling white wine from Basque Country), and people watching. If you were to spend a few months in a seaside town, this would be the way to do it.

Located next to Main Beach, the much-quieter Cleo Street Beach is a favorite of scuba divers, who come here to explore the Foss 125 Barge. The wreck, which sank just offshore in 1958, is submerged in a mere 55 feet of water, making it easily accessible to even the novice diver. Those up for the adventure will find an extremely well-preserved site, wrapped in coral and surrounded by Laguna’s Marine Reserve, which boasts everything from seals and otters to colorful fish and even some larger sea life. If you’re not a diver, Cleo Street Beach is still worth a trip to stroll the sand with a coffee from the nearby Orange Inn in hand. Just be sure to bring your four-legged friend along, as the beach welcomes dogs.

Just steps from the beach, Sapphire offers outdoor dining year-round on its cozy patio. Run by executive chef Azmin Gahreman for more than a decade, the restaurant is certainly a Laguna institution, but one that’s constantly evolving to stay fresh. Though Sapphire is worth a visit for every meal, it really shines at brunch, when such indulgent dishes as buttermilk pancakes, fried chicken and cheddar biscuits, and eggs Benedict with roasted jalapeño hollandaise are on the menu. Pair your breakfast with bottomless mimosas in flavors like orange, mango, and grapefruit and you’ll have the makings of a perfect morning.
