    This woman-owned artisanal aged-cheese producer was on the front wave of what is an increasingly vibrant local food movement. Wanda Otero, a microbiologist, decided to start her business in part to offer Puerto Ricans an alternative to expensive imported cheeses. She has since expanded into yogurt-making, and her products are now sold in supermarkets and found on the menus of the island’s finest restaurants. Travelers can visit the Vaca Negra facility for a tour, which includes the opportunity to make their own cheese.

    At Point Udall, on the east coast of St. Croix, a sundial called Millennium Monument was erected for the New Year’s celebration in 2000. The stark sculpture represents the azimuth of the first sunrise of that year, the new millennium, at this easternmost point of the United States. Point Udall also affords visitors panoramic views and marks the starting point of a hike that leads to the beach at Isaac Bay.

Purchasing a day pass to the property lets you access, for instance, its gigantic aquarium and marine habitat; shallow-water swims with sea creatures at Dolphin Cay; and a 57-hectare (141-acre) water park, which includes wave pools, swimming areas and—most famously—a six-story waterslide that plunges you into a lagoon seemingly filled with sharks (actually a glass-bottomed pool where sharks swim underneath).

    The vibe in Waikiki is the most frenetic of all the spots in the islands, but there is an escape. The scene at the current iteration of the classic Hawaiian hangout, Duke’s, is a step back even by Oahu standards. Best approached via the beach to enhance the original feel and avoid the mall-like carnival from the street entrance, this is the kind of bar that welcomes sand on your flips. Slip in for happy hour and be prepared to jockey for a spot. Even with the crowd, the music, the food, the drinks are all designed draw you back to a simpler time when Duke was still riding the longboard. I’m partial to the beers and french fries, but will never refuse a fish taco. With a long relationship with the Kona Brewing brand, I opt for the Longboard larger or Fire Rock Pale ale. The umbrella drinks don’t disappoint, but neither do the gin and tonics. The local musical talent that ply the stage at Duke’s are traditional Hawaiian in style and like to keep the island theme front and center. There is a family vibe to the musical community, much like the rest of Hawaiian culture, and it’s not unusual to get a sibling or cousin to come up on stage and do some traditional Hawaiian dance or help out on a song or two. There was an 8 year old girl that got asked to come up on one of our visits and she blew the crowd away! The strip a Waikiki can be a bit daunting in terms of relaxation, but Duke’s remains my refuge from the madness. Aloha.

    I hate wimpy hamburger buns--you know the kind: pickle juice and grill marks bleed through the sad white carbs...Downtown Flagstaff’s Diablo Burger rejects mushy bread in favor of hearty “db"-branded English muffins. Their beef patties are from just down the road a bit, where the cows are grass-fed, open-range, hormone & antibiotic-free...The cheese--local. Beer on tap? Almost always regional. The potatoes for their Belgian-style fries? From the local “food-shed” too. “Landscape-scale conservation that you can taste,” they say. Savor a beefy taste-of-place on your way to or from the Grand Canyon, or linger a while in this college-ski-town that defies Arizona‘s all-desert reputation. The outdoor seating area boasts a mural that is redolent of Hieronymous Bosch and Picasso. Chew on that at 7,000-ft. above sea-level... (Diablo Burger has also opened a second location a few hours south--down in Tucson...)

    Rick’s is probably the most touristy spot in all of Jamaica, but there’s a reason it’s listed in 1,000 Places to See Before You Die, so don’t miss experiencing it at least once. Get there around 4 p.m. to avoid the crush of tour bus traffic that happens closer to sunset, then order a couple of cocktails—Rick’s serves up a myriad of options—and stake your claim on a prime viewing spot for the sunset and cliff-diving. Local divers swing from trees and drop into the surf or plummet from the surrounding cliffs, some of which rise more than 30 feet above the sea. Even the occasional tourist will brave the jump into the water below. A reggae band adds to the animated vibe. Lest you feel like just another tourist sheep at the sunset very-happy hour, console yourself in knowing that locals enjoy it almost as much as visitors do.

    After hiking, skiing, or Grand Canyon gawking, what better way to spend an evening than in Flagstaff’s oldest microbrewery? Wood-burning stoves in the entryway will keep you warm if the wait is long in this family-friendly brewpub. In addition to the handcrafted beers, you will find wood-fired pizzas, fondues, and apple cake made with oatmeal stout. I opted for the “Brewer’s Platter": bratwursts and spicy southwest sausage braised in their Railhead Red Ale, with caramelized onions, red cabbage, cinnamon apples, and skin-on mashed potatoes. So glad I listened to the guys in the mountain-gear-store up the street who recommended the place. For two decades, Beaver Street Brewery has been a Flagstaff institution, its sign a beacon on foggy winter nights... (Just remember, at 7,000 ft. above sea level, the brews go to your head much faster...so eat up!)

    Housed in an Ottoman-era stone building beside an old lighthouse at the port of ‘Akko (Acre), Uri Buri restaurant has been serving fine fish and seafood for more than 30 years. Must-try dishes include salmon sashimi in soy sauce with wasabi sorbet, and a Thai fish chowder with coconut milk and basil leaves. Owner and chef Uri Jeremias has had a long-standing relationship with the sea: His first two jobs were as a diver and a fisherman. Jeremias also owns the Efendi Hotel nearby, as well as the ice cream parlor up the street from Uri Buri. So for dessert, stroll by and try some of the unique flavors on offer, such as date, cinnamon, and rose.

    Take in the atmosphere of Helsingborg’s medieval tower, which doubles as the best photo opportunity in the city. You’re made to work for it though, as you’ll have to walk across gravel paths and climb a steep wooden staircase to reach the top of the tower. Built during the early 14th century, the keep was formerly part of a much larger castle that played a key role in Swedish-Danish relations over the centuries.     La Poza del Obispo (Bishop’s Pool) is a hidden treasure near the Arecibo Lighthouse in Puerto Rico. This beach is loved for its contrast. You will find a calm spot (though it can get rough in bad weather) where you may float, swim, or simply stand around talking to friends. This area is surrounded by limestone rocks. On the rocks and beyond them, as you near the open sea, large bursts of water spray into the air. The water is so clear that a fish and I once became friends. He kept swimming by my side and stopping when I stopped. The tiny silver and blue fish amused me for quite a few minutes. It’s a clean little area where you can sift through seashells and, if you snorkel, you can take a peek at coral on the rocks. Feel free to bring food and have a picnic, since there are a couple of tables and trashcans around.

    America’s second-largest desert is an unlikely place to find some of the world’s freshest seafood. But anything is possible in Las Vegas, and when chef Paul Bartolotta opened Bartolotta Ristorante di Mare in the Wynn hotel in 2005, he was committed to offering only the best. Bartolotta serves sea bass, snapper, and lobsters 48 to 60 hours after they’re pulled from the waters that surround Italy. On any given night, the menu features nearly 50 species of rare seafood. “I’ve never heard of another restaurant having live slipper lobster or blue lobster in their tanks,” says Bartolotta. The chef speaks daily with his fishermen and tracks shipments using thermal microchips.     As a rule, Bermuda’s sense of sophistication includes a certain level of old-school formality. With the opening of this namesake eatery from the internationally renowned and somewhat hipster chef Marcus Samuelsson, the island’s approach to haute cuisine has taken a chic turn. Housed in the Hamilton Princess hotel with its landmark pink facade, the restaurant boasts a vibe that’s contemporary and airy with an emphasis on the turquoise sea. All tables have excellent views of Hamilton’s harbor, and the menu is—as might be expected—seafood-heavy, with dishes like Oysters with Black Rum Mignonette and grilled salmon. The local catch of the day and island-grown onions, along with other dishes, are prepared on a wood-fired grill that’s visible from the dining space.

    Cheeca Lodge manages to be upscale and relaxed at the same time. This duality is perhaps best embodied in Cheeca’s flagship restaurant Atlantic’s Edge, which offers a refreshed take on island cuisine (like the roasted red snapper with dragon fruit or the hibiscus swordfish) in an elegant but breezy oceanfront setting. The 27-acre luxury resort on Islamorada Key—one of the sport-fishing capitals of the world—was renovated following damage from Hurricane Irma in 2017. The revamped lobby, fully rebuilt fishing pier, 214 redesigned guest rooms, and new Italian restaurant have made Cheeca even better than before. Airy suites feature curated artwork, hand-tufted rugs, and rattan accents, and each suite opens to a private lanai with a partially enclosed open-air jacuzzi. A new point of pride is the refreshed 5,700-square-foot spa, which now has seven treatment rooms, a wet room with Vichy shower, hydrotherapy facilities with a steam room, and a fully equipped fitness center. Still to come in early 2019 is a brand new oceanfront pool (bringing the resort’s total to three, including a saltwater lagoon) and tiki bar, 25 South. If you must leave, book a fishing excursion, sunset cruise, or round of golf at the 9-hole Jack Nicklaus-designed course—and enroll the kids in the eco-focused Camp Cheeca.
