Tayrona National Natural Park has become such a popular destination during typical vacation periods that authorities have had to limit admission. But an off-season visit offers singular luxuries like miles of all-but-solitary beaches, jungle trails, and a unique way to observe a variety of monkeys and tropical birds in every brilliant hue. Tayrona can be experienced as a day trip from Santa Marta or as a several-night stay at one of the park’s accommodations. From the main entrance at Cañaveral (El Zaíno), visitors can take a leisurely hike to the ocean while a donkey handles the luggage; horses are also available for those who prefer not to walk. This same park entrance also leads directly to high-roofed, native-wood cabins known as ecohabs, a slightly fancier option for staying in the park.

Offering traditional Peruvian dishes as well as others with more of a gourmet-fusion twist, this restaurant is an object lesson in using a country’s gastronomical variety to the very fullest. In particular, it’s one of the best places in Cuzco to try alpaca steak, which is grilled to perfection and served with a variety of sauces such as mango and ginger, mushrooms, or good old salt and pepper. The bar also features a plethora of infused piscos (think fruits, spices, and even chili peppers), which are great fun.

What do Al Capone and Bruce Willis have in common? They both did time here at Eastern State Penitentiary. (OK, Willis wasn’t an inmate, but he did shoot the film 12 Monkeys here.) The facility’s first inmate was brought through these doors in 1829, and the prison was in use until 1971. After closing, it became a target for vandals and housed a sizable colony of stray cats. Real estate developers proposed repurposing it as condominiums (high-security, of course), but preservationists won out. They raised funds to stabilize the crumbling interior and remove trees that were growing inside some cells. Wander through its stark interior and learn about the fascinating history of this unique site and its previous tenants, including Capone. The Fish Deli, founded by Martin and Katja Wittneben in 2008, is a seafood shop and restaurant located in Swakopmund, Namibia. The restaurant—one of the first in Namibia to sell seafood—serves fresh fish, oysters, and other foods sourced directly from Namibia’s coastal waters.

One of the longest-standing restaurants in Chinatown’s Yaowarat Road area, Tang Jai Yoo fits the template of many of the dining venues in this part of town. The decor is faded and the harsh lighting would cast a sickly glow on even the most glamorous diner. Unlike glitzy restaurants elsewhere in the city, people come here solely to eat. Superstar TV chef Anthony Bourdain is among those to have lauded its signature whole roast suckling pig. Other choice items on the Thai-Chinese menu include steamed crab with black olives and ground pork, and deep-fried mantis prawns with chili and salt.

Even if you aren’t planning to take a cooking course during your visit to San Antonio, a trip to the Culinary Institute of America is worth a visit. It’s a great area to walk around in, and you can try coffee and pastries at the CIA Bakery Cafe. You can also eat at NAO, the award-winning restaurant at the CIA that’s also part of the student’s educational experience. Be sure to make a reservation.

This enormous underground mall is where locals come to shop for electronics, clothing, shoes and accessories at bargain prices. This is a great place to pick up souvenirs, from chopsticks to inexpensive qipao (traditional Chinese dresses). Among the hundreds of shops are inexpensive restaurants serving dumplings, noodles and bubble tea (milk tea with tapioca pearls).

Hungry customers line up and down the block for a seat at Café Sarafornia, without question Calistoga’s most popular brunch and lunch spot. The restaurant offers a California spin on an old-school diner, turning out pancakes, corned beef hash, and cheese blintzes. Breakfast is available all day—at least until the restaurant closes (at 2:30 p.m. daily). Café Sarafornia is particularly fun for kids, who can order off special menus and receive crayons and activity mats when they sit down. Local historians say the restaurant dates back nearly 120 years to when Calistoga was known as a resort town.

The Rome Cavalieri, like the Hassler and St. Regis, is synonymous with five-star luxury in Rome. The hotel, opened in the 1960s, channels a Versailles-meets–Dolce Vita vibe, and given its unbridled opulence, it’s a top destination for honeymooners and jet-setters seeking the ultimate comforts. There’s a reason this humble Indian-Malaysian restaurant is consistently packed: It serves mouthwatering curries, naan, dosa, biryanis and murtabak (a stuffed, panfried bread) at very reasonable prices. The extensive menu can be overwhelming, but you can’t go wrong with garlic naan with dal, tandoori chicken and an invigorating freshly squeezed juice.

On a hilltop perch overlooking 8,000 acres of grounds designed by famed landscape architect Frederick Law Olmsted, the Inn on Biltmore Estate’s 210 rooms and suites evoke traditional 19th-century manor houses, with dark mahogany beds and desks, billowing window treatments, and comfortable overstuffed chairs; book a room with a balcony to breathe fresh mountain air while appreciating views of rolling hills—or simply take in the vista from the hotel’s veranda. The formal dining room showcases seasonal specialties using estate-raised cattle and lamb, vegetables from the on-site garden, and wine from the property’s own winery, where you can participate in a free tasting, then ride back in a complimentary shuttle. If you’re looking for something more casual, the lobby lounge and library bar offer salads and sandwiches—and no dress code. But the main attraction is the 250-room Biltmore château, the Gilded Age mansion George Vanderbilt built here in the late 1800s, and its 16th-century tapestries, Renoir and Sargent originals, and 65 fireplaces.

Expect no less than over-the-top extravagance at Laucala, a resort island in Fiji with its own rental submarine. The Saguaro Scottsdale is among the handful of downtown Scottsdale hotels that embrace the urban Southwest vibe. Although it began life as a 1970s chain motel—evident in its blocky structure and the compactness of most rooms—this now-hip address has blossomed into the visual equivalent of desert wildflowers at the height of a wet spring. Especially striking against the desert tan that coats just about every other structure in Scottsdale, both outside and in, are a riot of colors that go beyond orange and purple and pink and yellow to such wildflower shades as California Poppy and Red Desert Globemallow. Just as vibrant is the Saguaro’s pool-party scene, aided, no doubt, by water temps chilled or heated as the season dictates. A complete redo of the Saguaro’s rooms in January 2017 gave them a modern Southwest vibe (think pastel-colored prints of cacti and desert-hued furnishings), but not so much that guests will be asking the concierge where to shop for cowboy boots (which would be Saba’s, just down the street, in Old Town).

Run by the famous Spanish shoe brand, Casa Camper is a stylish boutique hotel neatly situated in the middle of Mitte’s hip fashion and culture district. Designed by Jordi Tió and Fernando Amat—the founder of Barcelona’s iconic design store Vinçon—the devilishly good-looking interior is defined by clean lines and striking furniture set against rust-red walls. The rooms are deliberately minimal, with wooden floors and slick designer furnishings, but are decidedly comfortable and include eco-friendly touches such as water-recycling showers. Instead of an in-room minibar concept, the hotel offers a 24-hour buffet that is free for guests.
