    While cute souvenir shops and even haute couture boutiques exemplify the changing face of the retail scene in Siem Reap, the city’s famous Old Market remains a heady hub of traditional trade and commerce. Located right in the heart of town, Psar Chas is amply stocked with lots of things that you might want to buy—as well as plenty of things you probably do not. That said, perusing the labyrinthine aisles full of silverware, silks, handicrafts, spices, stone carvings, and other assorted ephemera is worth a couple hours of anyone’s time. Stay calm and haggle politely with a smile on your face, and you’re sure to find a bargain or two.

    A hotel with the words “gallery” and “art” in its name would be remiss not to include at least a nod to the art world in its decor (though more than a few establishments have been known to throw up a wall-sized painting by a well-known artist and declare themselves art hotels). As Florence’s pioneering design hotel, the Gallery Hotel Art doesn’t skimp. Virtually the entire ground floor, from the lobby through to the lounge and trendy Japanese-Mediterranean-Peruvian fusion restaurant, is one giant gallery, its sleek white decor acting as the calming, understated counterpart to the contemporary art and photography not often found in this city.

    Indeed, don’t underestimate the groundbreaking nature of this hotel. Design hotels may be a dime a dozen these days, but when the Ferragamo family’s Lungarno hotel collection launched with this modern getaway designed by Michele Bönan, its clean-lined furnishings and chrome, white, and natural wood hues were a challenge to a city outfitted in rich brocades and dark wood antiques. As such, the Gallery Hotel Art isn’t the flashiest stay, but it is the kind of place you can relax and unwind and feel like you aren’t living in the Renaissance days.

    The plaza of Place Seffarine, dominated by the entrance to the al-Qarawiyin Library and a sturdy old tree, is one of the most pleasing areas in Fes. As you approach, you’ll hear the sound of the copper beaters tap, tap, tapping away. It’s well worth perusing the stalls to find high-quality cookware to take home, such as pixie pans for boiling milk for your coffee, copper tagines and teapots, and prettily etched bowls for use in the hammam. Stop at the café for seriously strong coffee and to watch the world go by, or scoot around the corner onto Derb Chouara for hot, sweet mint tea spiked with various other healing herbs at a hole-in-the-wall where you’ll rub shoulders with local craftspeople taking a break from their labors.

    Chullpi is a top choice for haute cuisine Peruvian-style. Its chefs insist on Cuzco-adjacent ingredient sourcing that supports local economies, at the same time keeping traditional dishes like cuy (a regional guinea pig species) relevant through contemporary iterations. The flavors are fabulous and the presentation winningly incorporates local history, such as using a serving dish carved to look like the circular terraces at Moray or presenting a pressed guinea pig on skewers over a small fire made of palo santo, a local incense. Portion sizes can be small—the perfect excuse to order more.

    Since 1862, fresh flowers and plants have arrived by barge from the Dutch countryside to Amsterdam. While this assemblage of flora still shows up daily, it comes by van, not boat, to the Bloemenmarkt, the world’s only floating flower market. Here, you can browse 15 fragrant stalls on houseboats permanently moored on the Singel. Now the best-known flower market in Holland, this colorful attraction is packed with tourists on sunny weekends. Still, it’s a great place to pick up Dutch tulip bulbs in a plethora of shades and varieties, as well as many other types of bulbs, seeds, cut blooms, and houseplants. Ship a bag of bulbs home, or grab a souvenir at one of several shops hawking T-shirts, mugs, clogs, Dutch cheese, and other fun and inexpensive gifts.

    Limo offers Peruvian fusion par excellence that uses typical ingredients in daring new ways. It’s particularly known for fish, including many types of sushi, as well as a variety of entrées that feature tuna, shrimp, octopus, crab, salmon, or trout, some inspired by Andean recipes, others taken from the Japanese tradition. Not a seafood lover? No problem! Limo also has delicious options featuring chicken, pork, beef, and alpaca. This second-floor restaurant overlooking the Plaza de Armas is also a great place for sampling pisco cocktails. Reservations are a good idea, especially if you’d like to score a balcony table with a town-square view.

    Set on 12 lush, cloud-forested acres next to the Urumbamba River, this eco-resort (a member of the National Geographic Unique Lodges of the World) is practically a destination in and of itself. Here, 83 rustic-but-chic, whitewashed adobe casitas are tucked among a sanctuary of terraced hills, stone paths, and waterfalls that are home to 214 bird species and, at 372 cataloged varieties, the largest collection of native orchids in the world. Guests are encouraged to hike around the grounds (the hotel can also arrange for excursions farther afield), visit the resort’s Ecocenter, or relax in a naturally heated spring-water pool while listening to birdsong.

    The superior casitas are the simplest accommodations, but still come with plush robes, hand-crafted Andean slippers, and a separate dining area. Superior deluxe rooms feature fireplaces, while suites offer terraces with garden views. The most lavish option, the Villa Inkaterra includes an open-air shower, plunge pool, and 24-hour butler service. When not luxuriating in your room, visit the glass-walled restaurant, which has stunning views of the river, or head into Agua Calientes, which is just a few minutes away and offers several other dining options.
  • The 2.5-hour walk to Mandor Waterfalls starts out from the town of Aguas Calientes and follows railroad tracks along a river, past homesteads and orchards to the cloud forest. While the falls are not as dramatically high as some, the hike is easy and full of local sights with marvelous orchids and hummingbirds abound the trail. Another plus? The water is cool and refreshing, particularly in the region’s sticky climate. Pack a picnic lunch (and insect repellant) and make an afternoon of it.

    A Starwood Luxury Collection hotel in the heart of historic Cuzco, Palacio del Inka occupies a former palace, built by the Incans as part of the Coricancha (the centerpiece of their empire). Since ancient times, it’s had many lives—it was seized by the Spaniards in the 16th century, served as a museum in the 1800s, and finally became a hotel in the 1970s. Today, the property features artwork and artifacts from both the Incan and colonial eras, which guests can tour each day at 5 p.m.

    Situated around a large central courtyard, the 203 rooms are decorated in a colonial motif, with carved-wood furnishings, jewel tones, and gold accents. Also on-site is a small but very nice spa with a hydrotherapy pool, dry sauna, Turkish bath, whirlpool tub, and showers with lighting effects, as well as a small gym with cardio machines and weights. While Palacio del Inka is just a few minutes to Plaza de Armas and its many eateries, guests would be remiss to not dine at least once at the hotel’s Inti Raymi Restaurant, which serves Andean and international dishes made with locally sourced ingredients. Before dinner, grab a drink at the Rumi Bar, which offers excellent cocktails and a free pisco tasting each night at 6 p.m.

    Offering traditional Peruvian dishes as well as others with more of a gourmet-fusion twist, this restaurant is an object lesson in using a country’s gastronomical variety to the very fullest. In particular, it’s one of the best places in Cuzco to try alpaca steak, which is grilled to perfection and served with a variety of sauces such as mango and ginger, mushrooms, or good old salt and pepper. A lovely rooftop terrace with fabulous city views is a great spot to try some mighty tasty pisco cocktails. The bar also features a plethora of infused piscos (think fruits, spices, and even chili peppers), which are great fun.

    The open-kitchen, low-key vibe at El Mercado is Rafael Osterling’s take on the traditional cevichería, but he offers some modern twists guaranteed to keep taste buds active and delighted. The restaurant’s name—Spanish for “The Market”—alludes to a commitment to constant communication with providers, ensuring that only the freshest ingredients make it to your table. Though El Mercado is justly hailed for ceviche, there is much more on the menu, including a wide variety of tiraditos, causas, sushi, grilled meat and fish, chaufa (fried rice), pastas, and Osterling’s rendition of other Peruvian comfort foods. Along with cuisine grounded in what’s found at farmers’ markets, catch-of-the-day specials are wide-ranging and likely to be winners.

    Maido—in testimony to Japanese immigrants’ integration into Lima’s overall culture and, indeed, the positive benefits of a multicultural city—offers Peruvian-Japanese fusion food at its finest in a sleek, stylish dining room. Though renowned for sushi and other surfside delights, turf is also well represented on the menu in the form of steak, duck, chicken, and tofu. First-time visitors, especially seafood lovers, would do well to try the tasting menu, sure to offer unexpected taste sensations, courtesy of Chef Mitsuharu Tsumura. Fusion desserts range widely in taste and style and include such delights as mango-filled cannelloni, the typical arroz con leche as a crumble with passion fruit sorbet, and yucca cake with pineapple in ginger and azuki ice cream. The cocktails here are never boring, either. Reservations recommended, though bar seating can often be snagged at the last minute.

    Machu Picchu is located just fifty miles from Cusco. However, there is no direct road between the two cities. Unless you’re walking the Inca Trail, you’ll need to take a train from Cusco. The main operators are Peru Rail and Inka Rail, each of which offers a variety of budget and luxury options. Peru Rail runs a luxurious train, named after Hiram Bingham, that costs around $475 USD for a round-trip. Demand is high, so be sure to book the tickets in advance. You can also take any of the trains from Ollantaytambo to the small town of Aguas Calientes. From there, Machu Picchu is a 30-minute drive up the hill.
