The interior is fittingly adorned with photos of sake and kimonos, and an oversize sakura tree sparkles with white lights. Though one of few Japanese restaurants in Goa, Sakana still works hard to stand out with traditional dishes like sushi, udon noodles, beef yakiniku, salmon rolls, and chicken katsu with pickled radish. The sake is flowing, naturally, and there are cocktails and refreshers like lemon soda on hand, too. If they’re available, order the amaretto or cherry ice cream for a light and sweet finale. Note: Sakana is closed during monsoon season, so make sure you eat there before the end of May.

    Hop on the free ferry from the city’s Central Station for the 15-minute ride to the NDSM wharf, an old shipyard that’s transformed into a hipster haven with restaurants, bars, and artists’ studios. The waterfront “beach bar” Pllek is a popular spot here; built out of old shipping containers, the soaring, dual-level space has an industrial vibe, with corrugated-metal walls warmed by bright artwork, an indoor fireplace, and huge windows looking out over the IJ River. But it’s the man-made beach that draws crowds in warm weather, with comfy beanbags and loungers where you can while away the afternoon. There’s a nice selection of beer and wine; the food is simple but surprisingly good, and it’s crafted with fresh, organic ingredients. Pllek also hosts live-music events, DJs, dance parties, films, and morning yoga classes.

Both of his passions come together at his 11-room hotel, which he crafted with teams of skilled artisans and furnished himself. Set in an 18th-century riad, it features a traditional central courtyard and pool as well as warm, intimate guestrooms, complete with rich textiles, carved wooden doors, and cushy, low-slung seating. The same welcoming aesthetic can be found in the hotel’s common spaces, which include a small plunge pool, various pillow-laden lounges, a rooftop terrace, and a courtyard where guests can enjoy live music. Riad Kniza is also known for its gourmet Moroccan restaurant, which features just nine tables and requires reservations at least one day in advance, as the chef purchases ingredients fresh from the markets each morning.

    From April onward, access to a pool is essential to your enjoyment of Marrakech—and canny entrepreneurs have ensured there’s something for every budget. The city has some mega-luxury treats within walking distance of the medina, like the poolside pavilions at the Royal Mansour’s Le Jardin and the pool that launched a thousand photo shoots at La Mamounia. Expect to spend upward of $80 just to get in. There are also plenty of accessibly priced options a little out of town. The top of our list are the ultra-deep, black-tiled, 115-foot long twin pools at the Beldi country club, where $40 gets you a pool pass, a sun lounger beneath the olive trees, and a slap-up barbecue lunch. It gets busy, though, so if you’re after something a little more serene, book a car to take you out to the Jnane Tamsna in the middle of the Palmeraie, where gloriously scented gardens and five serene turquoise pools are hidden away among the date palms. Pool access, including a three-course lunch that fuses Moroccan Mediterranean with more fiery Senegalese flavors, is about the same price. Out at the Fellah Hotel, up-close views of the mighty Atlas Mountains can be soaked up from a shabby-chic poolside terrace over lunch (not included) while rubbing shoulders with the foundation’s artists in residence.     Owned by the world-renowned art collector Dakis Joannou and smartly decorated by quirky Brazilian designers the Campana brothers, the New Hotel is the city’s coolest upscale design-centric property, with 79 rooms (including seven suites) and an intimate restaurant. Although centrally located, just a five-minute walk to Syntagma Square, it’s tucked back in a modernist building on a side street so it feels hidden and discreet. The interiors are both playful and smart; the Campanas created much of it with items recycled from the previous hotel. Imagine puzzlelike walls and chairs constructed of layered, repurposed wood intermingled with sculptural chairs of their own design. In the rooms, they had fun riffing on Greek cultural objects, like the Karagiozis, a shadow puppet, and multiple versions of the glass “evil eyes” used to protect against ill omen. Bottom line: stylish contemporary design, excellent location, and friendly service.
