    Although Chile’s central coastline boasts a string of attractive beaches along with towns filled with visitors seeking relief from the heat, the truth is the water is freezing cold year-round due to the Humboldt Current that brings Antarctic water up the coast. You’ve got to go pretty far north to find temperate seas. Bahía Inglesa is a stretch of coastline where the turquoise waters are tranquil, the sand is white, and there are dozens of beaches—some are along waveless bays (perfect for children), and others are great for scuba diving, kayaking, and kitesurfing. The area has restaurants for all tastes, and while there are lots of lodgings, in summer crowds flock in, so reserve as early as possible.

    Chile’s national folk dance is a stylized depiction of the mating ritual between a rooster and a hen. Sounds silly? When danced with gusto—the man jangling his spurs loudly, circling his partner like a proud rooster strutting his stuff, and the woman, ever-resistant, flirtatiously waving her white kerchief—it can be utterly moving. Children are taught the cueca from an early age and dance in traditional costumes during the week leading up to the September 18 national independence observances. Establishments known as fondas are also set up for a week in September as temporary venues for traditional cueca (even as some complain there’s more and more cumbia, less and less cueca), and there are clubs open year-round where families—including Grandma—learn and practice the dance.
  • Around 700 people live in the only permanent settlement in the Juan Fernández Archipelago, San Juan Bautista on Isla Robinson Crusoe. Although no longer as isolated as it was when Alexander Selkirk, the likely inspiration for Robinson Crusoe, was a castaway in the archipelago, the village is still remote. It can take up to two days to make the sea crossing from the Chilean mainland (but less than two hours by plane). While most of San Juan Bautista’s residents rely on catching crab, fish and lobsters for their incomes, tourism during the summer season is an increasingly important part of the local economy.

    There’s a reason this Punta Arenas picada (like pica, a term for venues where food is both good and inexpensive) is almost always teeming with locals. Since opening in 1932, the soda fountain has been serving up classics in ways residents and visitors agree is perfect. Patrons sing the praises of the banana milkshake and Roca’s choripanes, sandwiches with housemade sausage. The decor is far from fancy but then, so are the prices. (The entertaining banter between staff and customers about the latest soccer match is included free of charge.)

    Founded in 1982 by local poet Rubén Derlis, this café once served as a meeting place for writers, artists, and left-leaning thinkers anxious to speak freely after years of fear and oppression under Argentina’s late-’70s military dictatorships. Order the picada, a charcuterie and cheese sampler; lubricate with a traditional local-favorite drink like a Fernet-and-Coke or a Cynar, the tangy artichoke liqueur mixed with pomelo, a sour, grapefruit-flavored soda. Wood paneling and exposed brick, walls covered in photographs, and shelves packed with antique objets make La Poesía an inviting space to linger over a book from the lending library or listen to the live tango music played on Tuesday and Thursday nights.

    La Casa de Don Juan knows how to do breakfast. An instant hit when it opened, the restaurant initially focused entirely on the most important meal of the day with dishes like pancakes, huevos divorciados (two fried eggs, separated on the plate by refried beans), chilaquiles (eggs, scrambled or fried with crisp strips of tortilla and topped with salsa), and several other Mexican favorites. Its café de olla—a traditional cinnamon-sugar coffee—might be the best in all Los Cabos. Everything tastes like the most incredible home cooking, and the space itself more resembles a two-story residence than a traditional restaurant. The menu and hours have now extended to include lunch. Opt for the prix fixe menu or à la carte on taquitos (rolled tacos), cochinita pibil (slow-roasted pork), or chile relleno (a poblano chile stuffed with cheese and then batter fried).

    If Codpa Village retains a bit of a mystical vibe, it’s with good reason: This was the residence of the chief of the Altos de Arica, who ruled a cluster of pre-Hispanic-era tribes. Somewhat unusual for northern Chile, Codpa’s land is quite fertile, thanks to the nearby Vitor River. Among the benefits of this fertility is a grape used to make a local wine, Pintatani. In addition to sampling the fruit of the vine, drink in local culture at a village performance: A shaman reads coca leaves and performers play music and dance, giving you a peek into an earlier era.

    This urban icon started as a hippie food truck housed in a surf shop parking lot on Vancouver Island. It has since blossomed into three restaurants, two burrito bars, a taco joint, and two food trucks, located everywhere from Hastings-Sunrise and Yaletown to Gastown and the Financial District. Chef Stefan Hartmann, who once ran a Michelin-starred restaurant in Berlin, now captains these elevated spots along with founder Jason Sussman. Expect nuanced options like chorizo-kale, pork al pastor with pineapple, and chicken with pickled vegetables, all on soft wheat tortillas for six to seven dollars. Also noteworthy are the meat-free dishes like “vegetable scrapple”—a delicious fritter of squash and chickpeas, topped with herbed tomatoes. And don’t overlook the octopus tostada—Tacofino not only sources seafood sustainably but also participates in Vancouver’s Climate Smart program and is working toward being a zero-waste business.

The owners, Armando de la Torre Sr. and Armando de la Torre Jr., aim to make every dish just how mom used to make it, and they succeed on every level. From humble beginnings in Boyle Heights to outposts in Echo Park, Downtown L.A., West Hollywood, Burbank, and a Koreatown location on the second floor of the Platform 35 food hall. Guisados has flourished thanks to handmade tortillas anchored by braised chicken breast, flank steak, or pork. The mole poblano taco is especially mouthwatering, and the quesadilla con chorizo is big enough to share—though you probably will want to keep it all to yourself.

    One of the last great free attractions in Las Vegas, the enclosed 15-acre Wildlife Habitat is home to a flamboyance of Chilean flamingos as well as a variety of other critters including exotic birds, turtles, and fish. Ring-tailed ducks and sacred ibises move through the knee-high grass, and hummingbirds dart from branches to feeders and back again. Two rescued brown pelicans are fed daily at 8:30 a.m. and 2 p.m.; the sight of their massive beaks opening fully to swallow the fish reliably delights visitors, especially kids. After you’ve watched some wildlife, you’ll find shopping mere moments away: The Habitat is steps from the stores of the LINQ Promenade.
