    Separating the islands of Maui and Molokai—at little more than eight miles at its narrowest point—the Pailolo Channel is one of the windiest in the Hawaiian Islands. This means swimming and water sports in and around the channel are only for the very experienced. Some believe that Pailolo combines pai (lift) and olo’olo (shifting), while others say the name means “crazy fisherman,” in reference to the rough sea conditions. The annual Pailolo Challenge, held in September, is a 26-mile course from D.T. Fleming Beach Park on Maui to Kaunakakai Pier on Molokai—one of Hawaii’s best downwind runs.

    In France, many châteaux (a term that sometimes translates to “castle” but can also refer to an ornate, castle-like mansion) are open as museums. However, Domaine de Maffliers, a 19th-century château nestled in the countryside just 45 minutes north of Paris, gives travelers the rare chance to spend the night in one. Though centuries old, the bar, restaurants, and 8 guest rooms have been recently renovated after a fire destroyed much of the building in 2020.

    The interiors of each guest room are unique from one another, but all of them exude opulence and luxury—from the velvet chairs and curtains to the freestanding bathtubs—that allow guests to immerse themselves in the grandeur of its history.

    With the precipitous rise of gourmet street food and market-fresh neo-bistrots, it’s not surprising that Boris Leclercq’s eponymous steak joint ‘Chez Boris’ opened near the Champs-Elysées last year with little fanfare. The conceit of this steakhouse, however, deserves attention particularly for its unique, revivalist approach to steak-frites dining. Boris and his wife Leticia raise grass-fed Aubrac cows on their own farm in the Hérault region, follow a 21-day maturation process in a cold chamber within their own cutting plant (where they employ 2 dedicated butchers), and serve both traditionally superior cuts (filet, sirloin, etc.) and those most often neglected or typically reserved for tartares or hamburgers (flank or spider), accentuating their flavor as a result of their maturation technique and grilling process. What’s more, they won’t begin preparing cuts from another cow until those from the previous one have been entirely used and served. Each steak is served with a simple green salad and crispy fries cooked in beef fat, not in oil. This ‘home made’ from farm to plate approach is, effectively, all in an effort to control the provenance of the meat they serve and ensure quality at all times - crucial as the horse-meat controversy and trend in French restaurants toward using industrial ingredients had the public hyper-aware and concerned about what they’re consuming. Delicious and sustainable - more than enough reason to book lunch or dinner at Chez Boris.

Orient Express, the most expensive restaurant in Delhi and voted one the world’s best restaurants, offers a world-class dining experience alongside live jazz bands and fresh food flown in daily from France. The luxurious culinary journey begins in private booths on faux carriages that beautifully mimic the legendary train. The crisp menu offers cuisines of all countries through which the Orient Express traversed, with the classic French fare remaining triumphant. Revel in the seven-course meal, with an appetizer to whet your appetite and the signature dessert to perfect the extravaganza, and of course, succulent sorbet bites in between dishes to neutralize your overwhelmed, yet gratified palate.     The proprietress, her team, and the Mushroom Stand have become important staples at the Baltimore Farmers’ Market. With a huge following in Baltimore, she is known to many as the “Mushroom Lady” because she sells the most amazing mushroom dishes. The favorite (well, my favorite really) are the mushroom fritters: oyster mushrooms, beer-battered, fried, served over greens with sheep’s cheese, basil, and their special homemade hot sauce (if you like hot sauce, you should ask for a generous helping). Other equally great dishes include the portobello quinoa and portobello sandwiches. The portobellos are marinated and roasted on what looks like a big smoker. All dishes are served with the cheese and hot sauce. A logistical note: the wait can usually be a bit long, but you’ll make friends with fellow mushroom lady groupies in the process. Do a lap around the expansive market and you’ll run into a long line towards the back (not far from the pit beef stand) where people are waiting for their mushroom dishes. You’ll pay first near the fresh mushrooms and you’ll be given a number. Find a table or a parking block and don’t wait to eat. You’ll guaranteed be asked what amazingness you’re eating or bond with fellow Mushroom Stand patrons over the deliciousness.

    The date-night dinner-and-a-movie standard has been taken to a new stylish height at this acclaimed restaurant in the Mission District. Grab a table on the patio under the strings of lights to dine on seasonal California cuisine while films flicker on the back wall. It’s romantic, and easily one of San Francisco’s most unique dining settings. But don’t think of Foreign Cinema as just a gimmick. The stellar cuisine is the real scene-stealer here, which is why Foreign Cinema is consistently ranked as one of the city’s best restaurants. Chef Gayle Pirie and her partner, chef John Clark, have transformed this into a destination restaurant. Reservations are still tough to get, especially for Saturday night and Sunday brunch, but plan ahead and you’ll be glad. From fresh local oysters on the half shell to caramel pecan sticky buns to a popular sesame curry fried chicken, the food is always as stellar as the setting, making date night or brunch with friends an event you won’t soon forget. The adjacent wine bar, Laszlo, is perfect for predinner drinks or nightcaps.

    Located along the historic Chesapeake and Ohio (C&O Canal), this laid-back neighborhood bakery and coffeehouse is one of my favorite hangouts in D.C. Baked and Wired serves delicious food and drinks in a cozy atmosphere. The space is adorned with works done by local artists and photographers—as well as napkins scribbled with slogans, poetry, and pictures by visitors who wish to leave their mark. Owned by a husband and wife team, Tony and Teresa Velasquez, the shop has been whipping up handcrafted baked goods since 2001. To the delight of the young, the old, the college kids, hipsters, and the “power suit” crowd, the shop churns out a plethora of treats. You’ll find cupcakes (“cakecups”), brownies, cookies, pies, bars, muffins, cakes, quiches, breads, biscotti, and even “zilla bonez” (dog biscuits). They also serve the best coffees including Stumptown, Intelligentsia, Madcap, Barismo, and Ceremony. For tea, try the “Chaider"—a seasonal combo of chai and apple cider. Dine here like a local; upon entering, head to the left side for the baked goods (the “Baked” side) and then to the right for coffee (the “Wired” side). Signature baked goods include: — The Strawberry Cupcake: made from fresh strawberries mixed with vanilla cake batter topped with a swirl of pink buttercream (the local favorite). — Bee Stings: shortbread cookie topped with sliced almonds and honey. — OMG’s caramel s’mores: a layer of graham cracker crust followed by caramel, marshmallow, and chocolate.

    Hillside Farmacy is a farm-to-table restaurant in Austin built around a pharmacy theme. While it may sound odd, the execution is brilliant, with incredible food and wonderfully eclectic design. The restaurant space was formerly the home of a 1920s pharmacy owned by Austin‘s first African-American pharmacist. The decor features authentic apothecary items (from a different 1920s drugstore)—a vintage collection of medicine bottles, antique cash registers, tin ceilings, and wooden cabinets. But it’s the “F” in the deliberately misspelled Farmacy that nods to the emphasis on simple, fresh food. The restaurant works with local food purveyors and regularly changes the menus around the highest-quality seasonal ingredients. Local cheese, homemade pate, artisinal breads and pastries, raw bar, charcuterie are all available here. Dishes include bangers and eggs, buttermilk bisquits and gravy, and bison tartare. Other perks include an old fashioned soda counter and a shaded outdoor patio. If I were a local here, this would definitely be one of my favorite go-to places.

    No, you don’t have the wrong address—this is indeed a downtown office building and parking garage. But don’t be alarmed. Walk through the door, and Café Poca Cosa’s stylish interior tells you immediately that this is no boring strip mall Tex-Mex joint. Neither, fortunately, is it an overly precious nouvelle-cuisine bore. It’s been voted “Best Mexican” in Tucson by locals, who know that chimichangas were born in this desert town. That said: you’ll find no chimichanga combo-plate here. Chef-owner Suzana Davila changes the chalkboard menu twice a day. Her concentration is on fresh ingredients and innovative dishes that translate regional cuisines rather than betray tradition. National publications have sung her praises, but Ms. Davila still checks on her own customers and eats lunch in the dining room with everyone else. She’s a self-taught native of Guaymas who can concoct over two dozen varieties of mole. Complex sauces, refreshing drinks (such as pineapple-basil agua fresca), and Baroque masks in red niches await you. Come for a late lunch on a weekday if you want to avoid the justifiable crowds. Have an open mind (and mouth), and discover how great contemporary Mexican cooking can be. Tucson can be proud of its plentiful taco trucks and Sonoran hot dog stands, but Poca Cosa celebrates the variety of Mexican cuisine for when you want to sit down in style. Buen provecho!

    Given the lines you’ll almost inevitably find at the original Puesto—an authentic taqueria so beloved, it’s expanding into a small SoCal empire—you may well be discouraged. But don’t be: Simply put your name down, walk the two blocks to the beach at La Jolla Cove, and consider the seaside view your appetizer. Or the first of many appetizers. Back at Puesto, forget moderation altogether as you’re contemplating the house offerings—most dreamt up by Mexico City–born Luisteen Gonzales, who still loves to visit his father’s fish stall in the famed Mercado San Juan. Blending this inherited appreciation for seafood with an equal reverence for seasonal produce, Chef Gonzales has created an array of award-winning tacos, from spicy atún (seared ahi with avocado, jalapeno-cucumber salsa, and chipotle crema) to zucchini and cactus (crispy melted cheese with calabaza à la Mexicana, avocado, and cilantro-tomatillo salsa). Pro tip: If you’re a vegetarian, you’ll find some—but not all—of your options on the main menu. There’s also a separate plant-based menu available on request (don’t miss the Sikil Pak—a Yucatan pepita dip served with jicama, cucumber, and heirloom carrots).

    Set in the South Island’s Ahuriri Valley, on 6,000 pristine acres bordered on three sides by conservation parks, is your own slice of natural paradise. Opened in late 2018, The Lindis is a striking, contemporary lodge that blends into the landscape, with a sloping roof that mimics the mountain and river backdrop and, inside, floor-to-ceiling windows framing magnificent views.

    There are just five rooms to choose from—two master options and three lodge suites, all with private indoor and outdoor lounge spaces, fluffy king beds, and gas fireplaces. (Master suites also have separate living rooms and oversized bathtubs.) Beyond the accommodations, there are endless activities to choose from, from horseback riding, fly fishing, and e-biking to eco- and buggy tours and spectacular stargazing. Fuel up for your adventures with the lodge’s refined, contemporary cuisine, crafted by house chefs using locally sourced ingredients—think South Island crayfish, foraged porcini mushrooms, and Wild Fiordland venison—and paired with fine New Zealand wines from the well-stocked cellar.

Located in the Uptown neighborhood, the 401-acre lake is surrounded by parkland and trails, making it a favorite of locals for everything from ice fishing in the winter to swimming, biking, and volleyball games in the summer. Along the shore are rental options for nearly every water sport, from sailing and kayaking to paddleboarding, plus lockers for stashing your stuff when you’re out on the water. For those who prefer dry land, there are also several Nice Ride stations where you can access the city’s bike-share program, and a seasonal restaurant serving sandwiches, wings, and tacos.

    A stunning combination of rock formations, pristine beaches, sloping mountains, and the glittering East Vietnam Sea surround this dreamy resort—so it’s no surprise that many of its key activities revolve around nature. Depending on the season, scuba diving, mountain hiking, and sailing are big draws, but you can enjoy sunset cruises, kayaking, beach yoga, and early-morning fishing excursions with the chef any time of year. Excursions to Nha Trang, the countryside, the Cai River mud baths, and more can also be arranged, but there’s plenty on property to keep guests occupied—not least the spacious villas, many of which are set along the cliff tops or beach and feature private pools. The Six Senses brand (which also oversees a sister Vietnamese property in the Con Dao marine park) highlights wellness, holistic living, and sustainability, and you’ll find plenty of evidence of that here, from the local organic produce used in the restaurants and bars to the traditional therapies and integrated wellness programming offered at the spa. Other can’t-miss activities include a private dinner in the mountain-set wine cave and an aerial yoga session—but maybe not in that order.

Soon reports reached Scandinavia, like Ostenson Stine’s: “When you throw your eye upon Puget Sound, and behold the fleet of fish barges, rolling upon her briny breast, a reminiscence of the coast of Norway steals into your soul.” It sparked a wave of immigration, now celebrated in a new $45-million landmark-building near the Ballard Locks. The sleek, sophisticated design has a central atrium evoking a fjord, crossed by bridges and pierced by contemporary stained-glass bird sculptures. While some of the exhibits honor Olde Worlde crafts and tools, expect interactive innovations as well. A fan favorite: pillows resembling giant stones, strewn under birch trunks. Cuddle up and watch gorgeous film footage that could easily inspire a trip—or several—to Europe.
