    The beloved Cambodian breakfast dish of nom banh chok is a love-it-or-hate-it dish for most foreigners, who would probably prefer to have this cold to luke-warm noodle dish served hot. The process of making these rice noodles is depicted in bas reliefs on Angkor temples, suggesting that the dish dates back to the Khmer Empire and traveled to Thailand at the end of the Angkorian era. In Thailand, there is a similar noodle dish called kanom jeen. In Siem Reap it’s typically served at street-side stalls and by roaming women vendors who carry baskets of ingredients on their shoulders. Like anything in Cambodia, you can expect to find an array of versions but a favorite comes with a yellow kroeung curry, a mound of thinly sliced banana blossoms, pickled cucumber, and fresh fragrant green herbs.

    I hadn’t been awake for longer than a minute. I peeled back the tarp door to my room, walked out onto my deck, and leapt. It was an abrupt but purifying way to start the day. The cool, brackish water instantly defogged my mind, and my eyes opened to see the surrounding Tatai River and dense Cambodian rain forest. A lone sampan, anchored along an islet, was the only man-made object to interrupt the natural scenery. My chic bungalow lightly swayed on the calm water behind me, an incongruous encampment against the wild jungle backdrop.

    Located on the southern tip of the Cardamom Mountains, near the Gulf of Thailand, the 4 Rivers Floating Lodge lives up to its name. The retreat’s 12 landless suites all float on their own buoyant platforms, moored to the riverbank. Outfitted with a ceiling fan, armoire, and wood-paneled shower, each of the towering, safari-style tented rooms also provides a nearly 360-degree view of the tropical landscape. A boardwalk connects the rooms to a central lounge and dining area decorated in a muted variety of Miami Beach sleek.

    At first blush, getting to this secluded outpost might seem daunting. Guests can arrive by boat, drive, come by cab or take a bus from Phnom Penh: I took a five-hour bus trip from Phnom Penh, followed by a half-hour longboat ride from the village of Tatai. But the journey is well worth the peaceful reward. The Cardamom Mountains contain the largest and most intact evergreen rain forest in mainland Southeast Asia. For decades, the region was largely off-limits to developers because of land mines and fighting between government forces and the Khmer Rouge militia. This very isolation protected the area’s natural habitat, which is now home to scores of endangered species, including Asian elephants, hairy-nosed otters, and Siamese crocodiles.

    Mine-clearance efforts and the end of hostilities have made travel here safe for more than 10 years, but it remains a sparsely populated frontier. The area’s remoteness is remarkable in and of itself. In the afternoon, I took a boat ride to the Tatai waterfall with several other guests. Even our skipper, a young Cambodian man who leads visitors on these trips every day, was still in awe of the lush surroundings. “So quiet and beautiful,” he said, looking at the palm trees along the river’s edge. After we arrived at our destination, I spent the rest of the day sitting beneath the waterfall’s forceful but soothing cascades, letting nature’s masseuse relax my muscles.

    I returned to the lodge for dinner beneath an orange and purple sunset. On the restaurant’s uncovered patio, the only sound accompanying the clang of my utensils was the soft splash of kingfishers swooping to pluck fish from the river. I was less delicate, digging into skewers of mozzarella, watermelon, and fresh shrimp and a plate of steamed river fish topped with a basil cream sauce. In the lingering twilight, I sipped a gin and tonic on my private terrace before easing under my bedsheets. Gaudron is many things: a catering company, a restaurant, a party venue, a deli, and a relaxing terrace to grab a drink after work. There’s one question however, in which the name Gaudron inevitably comes up – Where to get brunch in Brussels? Gaudron was one of the first of Brussels’ restaurants to catch on to the Sunday brunch concept and they haven’t looked back.You can choose from delicate, fresh pastries, egg dishes, or lunchtime favourites, like salads, croques and hamburgers. There are fresh squeezed juices and homemade smoothies and milkshakes. It’s a loud, bustling sort of place that’s filled with groups of all ages and is family friendly. With a huge selection of salads in the deli, it’s vegetarian and vegan friendly too. If you want an authentic Brussels neighbourhood feel, it’s worth escaping the centre for a trip to Gaudron.

Literally, if you were ever stranded on an island, you could sustain yourself on what’s inside a coconut (just ask Les Stroud). There is a difference between coconut water and coconut milk. Coconut water is clear to translucent and not as sweet—you harvest this from a fresh green coconut that has just fallen, or is ready to fall from the tree. It might taste unusual at first if you have never tried it, but this is actually the best form of natural electrolytes to replenish yourself after a workout or surf session. Watch the roadsides for the carts and folks with machetes—because this is your hint that coco frios await you!

For $28, you get your choice of a garden-fresh breakfast plate with personal favorites including the basil, bacon, and avocado eggs benedict, large egg-in-the-middle brunch pizza and fluffy brioche French toast. The thick bacon served with syrup is a tasty side to cut into and their parmesan-sprinkled truffle fries are the perfect addition to share. For two hours, glasses of unlimited bubbly are served with elegant flavors like the addictive Austrian elderflower and fruity fresh apricot purée. While most all-you-can-drink brunches are a sloppy and sloshy whirlwind, Sonoma Wine Garden redefines the experience with their touch of gourmet class.
  • One of the most fascinating aspects of the BVI for beachgoers is the sheer array of sandy shores to explore. On Jost Van Dyke, the sand at White Bay skews more toward the white-gold end of the spectrum and gives way like piles of sugar beneath your bare feet. Hit the Soggy Dollar Bar to try the iconic Painkiller (a mix of rum, orange, and pineapple juices and cream of coconut, sprinkled with freshly grated nutmeg) in the place where it was invented. Just around the headland on the beach at Great Harbour, the sand skews slightly more golden, and the famed Foxy’s Tamarind Bar, another classic BVI watering hole, beckons. And for the most diamond bright, sugar-spun sands in the islands, make your way to Anegada, the northern and easternmost island in the BVI. Here, Cow Wreck Beach is a calm stretch with one mellow bar and a gentle slope of white sand leading to the water’s edge. On the far eastern end of Anegada, Loblolly Bay lures with an enticing crescent strand and a beach bar called Big Bamboo that serves up a mean piña colada, best enjoyed with a plate of conch fritters.

    The tree limbs were heavy with freshly fallen snow, providing a peaceful backdrop to this entirely eerie place. I had made my way outside Berlin, to the little community of Beelitz on this snowy Easter weekend, to photograph Beelitz Heilstätten, a sanatorium for tuberculosis treatment methods in the early 20th century. I took the photo tour to the women’s section of the sanatorium, and we were able to walk around the snowy grounds and inside three main buildings and photograph to our heart’s content. I love these tours, since they are a great setting to practice with lighting and composition. The tour information was provided only in German, but there were enough people there to translate for me. And honestly, I was there to do photography, so I didn’t need much guidance. The leader simply gives an overview of the history, buildings, and things to be careful of, or special things to see; he hands you a blueprint layout of the buildings; and then you are own your own for 4-5 hours to explore! Flavors range from classics like vanilla bean and strawberry to local specialties like Theo Chocolate or Stumptown Coffee (pro tip: get those two swirled together), with more adventurous rotating seasonal flavors (current offerings include blackberry bergamot and watermelon mint sorbet). Locally sourced, organic ingredients are the emphasis here. They also have vegan options and pints to go, as well as plenty of merchandise featuring their goofy-cute pug mascot, Parker Posey.

    Despite being northern Colorado, Steamboat Springs offers belly-filling home-style southern cooking at the Low Country Kitchen right on Lincoln Avenue. Dig into the classics (without the greasy coating), like fried okra and buttermilk fried chicken, or go for the jambalaya or hush puppies. For south of the border–style grub, pop into Salt & Lime and head for the rooftop seating. Start with some loaded nachos then choose from a range of classic tacos and burritos; finish off with fresh churros. The menu changes frequently, with new and exciting dishes becoming available.

    The first luxury lodge to come to Chile’s second biggest island, Tierra Chiloé opened in 2012 and became a member of the Tierra hotel group in 2014. Designed by Chilean architect Patricio Browne, the hotel looks like a boat on stilts and was inspired by the homes of local fishermen, which take the same form and are known as palafitos. The exterior is made from picturesque larch wood shingles—a building technique that’s very typical on Chiloé and is seen on the famous UNESCO World Heritage churches that dot the islands.

    Inside, guests find more wood. The hotel’s wood walls and ceilings are made from indigenous species . The decorations are locally inspired with plenty of handicrafts such as wicker baskets, handwoven rugs, and wooden carvings. The focal point is the meadow and Reloncaví Sound below, where the hotel’s boat is harbored. Large windows line the building on both floors and provide excellent views. Guests can relax in a small spa, a winetasting room, or a book-filled upstairs studio upstairs. The living room with fireplace makes a perfect spot for an end-of-day pisco sour.

    In Oporto, Portugal, you can take a river cruz if you want. There are several choices from 50 minute boat tours to several hours or even several days. I chose to go on the 50 minute “Six Bridges” river cruise. I started at the Cais da Ribeira where you purchase your ticket and board the boat. We passed under the six bridges of Oporto on a relaxing tour and took in the glorious view of the World Heritage site of Oporto up on the hills. The wine cellars of Vila Nova de Gaia were spread out on the opposite side of the river. The views were magnificent of many old historic buildings and old cathedrals and churches. At the mouth of the Douro, we viewed the waters beyond known as the “land of the fishermen”. The Douro River is a beautiful river that sparkles under the azure sky as the sun shines down on its pristine waters. I was rewarded with a serene and happy feeling as I disembarked from my short cruise. I definitely recommend cruising the Douro while in Oporto. The difficult part is choosing which boat cruise to enjoy. Of course, it depends on how long you are staying in Oporto. Plan ahead, of course, and work this adventure into your trip.
