    For our few days in Vis, a two-hour ferry ride from Split, we would drive our Vespa until we got to a beach—they are not hard to come by on this small island. This beach, right about in the middle of the south coast of the island, is mostly only accessible to boats. But we, boatless, scrambled down a steep cliff because it looked so perfect, and spent a few dreamy hours. We arrived on the ferry at Vis Town, walked into the tourist office and booked an apartment for a few days. Those days were spent going from beach to languid, four-hour meal, to beach again.

This is not just any ferry: The historic green and white Star Ferries have been moving the masses back and forth for decades, with the origins of the company going back to 1880 with the service of a single steamboat, the Morning Star. Today, the classic wooden boats make the trip many times daily, and a ride provides a great view of the city’s famous skyline and a whiff of nostalgia to boot.

    The Frank A. Wacha Bridge is also called the Jensen Beach Causeway. This bridge connects the town of Jensen Beach on the mainland with Jensen Beach on Hutchinson Island. The bridge is named after Frank A. Wacha, Sr. who was a Martin County Commissioner. In 1965 the first Frank A. Wacha,Sr. Bridge was built. It was a modern drawbridge. In 2003 -2004 a new structure was built to replace the old drawbridge ( which I, for one, miss). The new bridge is especially beautiful to see at night as the structure is highlighted over the Indian River. The surrounding area is a breeding ground for many forms of marine life in the river and it’s mangroves. There are recreational islands under the bridge. There are picnic pavilions, a fishing pier, a park, boat ramps, and four docks. Every day, you can see fishermen fish right off the bridge. There is a sidewalk on both sides of the bridge and the walk is invigorating. I enjoy this walk into town from the island. The view from the top of the bridge is of the river and the ocean beyond. Quite a view!

    Waikiki and the North Shore get most of the attention on the island of Oahu, and for good reason. Oahu is the surfing capital of the world and has something to offer every skill level, but hiking on the island of Oahu is one of its best-kept secrets! One of my favorite hikes is the Lanipo Trail. It is a a strenuous 7.5 mile (12 km) hike that can take 4 to 6 hours depending on conditions (I would not recommend doing this hike when it’s wet), but the scenery and experience offered by this hike is definitely worth the effort! The hike along the Mauna Lani Heights ridge, above the neighborhood of Kaimuki, offers breathtaking views of the island and Honolulu. The terrain is diverse, and at times you are hiking on steep boulders, and others navigating thick jungle. There is one section of the trail that carves through tall bamboo that clank together when the wind blows—like a natural wind chime. You will not be disappointed with the summit and the sense of accomplishment that you feel when you get there!

Pele—the fire goddess who lives here, according to Hawaiian lore—is on a roll. Occasionally the lava flows spill into the sea, releasing stunning plumes of steam. Don’t miss the petroglyphs, lava tube, lush rain forest, and more than 150 miles of trail, including the four-mile Kilauea Iki loop. The drive here from Kona or Kohala can take two and a half hours, a bit of a long day, so consider reserving accommodations in the town of Volcano. You’ll have plenty of time to explore this otherworldly landscape, and even see the lava glowing in the dark!

    In the native Hawaiian language, the word “Lahaina” literally translates as “cruel, merciless sun.” Given the name, it should come as little surprise that not only is Lahaina the hottest place on the island, but it can be five degrees warmer than neighboring Ka’anapali, just three miles down the road. When walking around town, one of the best ways to beat the heat is to cool off with a syrupy shave ice. This sweet treat has become synonymous with Hawaii, and its origins date to Japanese plantation workers who would combat the heat by shaving ice off of blocks. Today, no visit to Maui is complete without enjoying a refreshing shave ice, and the best shave ice on the west side of the island can be found at Local Boys West. Conveniently situated across from the Banyan Tree, Local Boys is an island favorite for all of the free add-ons which accompany each serving. In addition to the soft, melt-in-your-mouth ice flakes that can be flavored with multiple syrups, Local Boys includes ice cream on the bottom and Kauaʽi Cream on top, completely free of charge. For those traveling with kids, you can even top the treat with gummy bears for exactly the same price. While waiting in line for your syrupy treat, take a moment to watch the surf films or shop for locally-made merchandise. This store was opened by a man and his young son who humbly sold snacks on the street, and it’s grown into arguably the best place in Lahaina to enjoy the island flavor.

    Set high above the St. Lawrence on Cap Diamant, overlooking Old Québec, this imposing yet inviting landmark is as much a lodging as it is a tourist attraction, borne out of its reputation as the most photographed hotel in the world. Opened in 1893 by the Canadian Pacific Railway to drum up luxury riders for its trains, the castle-like Fairmont Le Château Frontenac feels every bit as grand today as it must have when Roosevelt and Churchill secretly hatched plans for the invasion of Normandy here in 1943—and it continues to be the hotel of choice for A-list celebrities and other notables. A $75 million renovation in 2014 updated the 611 rooms with a more contemporary feel, draping spaces in chic furnishings and soothing shades of gray and cream, plus butter-yellow or soft turquoise accents. The spa features seven treatment rooms adjacent to an indoor pool, whirlpool, steam rooms, and a gym, but the hotel has become a destination for its food: Champlain restaurant is helmed by acclaimed young chef Stéphane Modat and offers a modern take on Québécois cuisine alongside magnificent views, while 1608 Wine & Cheese Bar highlights local wines, cheeses, and charcuteries.

    Located on the island’s unassuming south coast, down a street that doesn’t even have a name (which isn’t uncommon in Barbados) sits a little beach bar called the Carib. Wander up to the wood deck and smile at the Bajan waitress pulling double-duty behind the Mt. Gay Rum-lined bar, as she waves her hand at you, the universal sign for “just sit anywhere.” Pull up a non-luxurious plastic chair and soon you’ll find a cold Banks in your hand (the local brew - about the color of a Bud Light but with much more flavor) and a plate of steaming Bajan food on its way. The Carib, which I eat at almost daily during my time in Barbados (I’ve been to the island seven times), has the best flying fish on the island. Order yours platter or sandwich style, with sides of cou cou (a local dish about the consistency of mashed potatoes) and salad. Be sure and start your meal with a basket of pipping hot fish cakes - also the best on the island. Luckily when you’re done with lunch and ready for a nap, the beach is a few steps away. Grab a chair and an umbrella for $10 U.S. for the entire day. You probably have the beach to yourself, until school gets out when the local youth will stop by for a dip in the ocean and maybe a game of cricket.

Arranged around an umbrella-dotted pool area, the intimate 121 rooms have private balconies and lanais and island-appropriate decor (think shell-themed artwork and carpeting and coral-embellished drapery framing the sliding doors). Order in to sample sushi prepared with the day’s fresh catch, or head down to Red Salt, helmed by Kauai native Noelani Planas, whose savory vanilla-bean mahi-mahi and lemon-pineapple soufflé pancakes earn rave reviews.
