The Japanese-inspired Nobu Ryokan Malibu, located on the ocean just north of Los Angeles, sets the tone with its smooth teak exterior. An entrance gate leads to a garden where water flows over honey-colored rocks into a pond, and palm trees shade stone paths lined with black Japanese grass. In the 16 guest rooms, there are no exposed nails or screws, just smooth surfaces of teak and Jerusalem limestone and linen. The art on the walls is original—a watercolor of sparrows in muted tones, a panel of delicately carved black lacquer depicting waves and leaves. The furniture is oak, all right angles and brass fittings, and the bedside lamps look like lanterns. The bathrooms feature skylights, rain showers, and deep teak soaking tubs.

Hotel guests get first dibs on reservations at Nobu restaurant, just two doors down. If that seems too far away, you can get Nobu food delivered to your room: think scallop tiradito, salmon sashimi, and smoked duck with cherry and hibiscus. Another highlight of a stay here are the well being experiences, including yoga with partner studio ALO and an affiliation with Malibu Fit Concierge that offers private fitness classes and guided hikes.

Nobu has partnered with Surf Air to transport guests from various cities in California and Texas. Surf Air flies small planes out of regional airports (if you’re coming from the Bay Area, for example, it’s a 90-minute ride). A car in L.A. takes you on the 40 minute ride north on the scenic Pacific Coast Highway.

A 50-second elevator ride takes you almost 1,000 feet into the sky for a thrilling 360-degree view of the city, population over five million, with the snowcapped Andes as a backdrop. Guides are on hand to point out cityscape highlights. Not for scaredy-cats. Note: In case of rain, return first thing the following day, the best time to visit for the clearest view.

Bypass the roadside watering holes and take a boat ride to Floyd’s Pelican Bar, instead. This thatched hut stands on stilts out in the water, making it a dreamy spot for an afternoon of swimming and shooting the breeze, solo or with friends. It’s 30 minutes from Treasure Beach (arrange a boat ride through your guesthouse or resort), and you can arrive for lunch and stay until after sundown for the just-caught fish, rum, and chilled Red Stripe on the menu. Inside the tiny shack, the flags of various countries hang and previous customers have left messages scrawled on planks and benches. Sit outside and watch the pelicans flying in formation across the horizon.

A dream retreat for horse lovers, the 240-acre estate is 45 minutes from London and has an equestrian center and polo fields. Game of Thrones Keep an eye out for Prince Harry playing a match on the polo grounds. Competitions are held from April through September. Lesser-known ski fields are often run by clubs and have the benefit of thinner crowds and the opportunity for skiers and boarders to glide and carve where others haven’t. Rainbow Ski Area near Nelson on the South Island is great for boarders and offers lessons from novice to expert. Further south, Porters Ski Area outside Christchurch features such runs as the appropriately named Big Mama and other trails that cater to intermediate and advanced riders. In the North Island, try the Manganui Ski Area on Mount Taranaki for cheap no-frills skiing (meaning no gear rentals on-site). And on the eastern side of Mount Ruapehu, there’s the friendly club-run Tukino ski field, which is often open when the rest of the mountain is shrouded in clouds.

If mountain biking sounds a bit too extreme take to the trails on a monster scooter. The scooter version of a Big Wheels, it has extra large tires that provides stability but still allows you to pick up speed and brake like a mountain bike. From Saas-Grund, we took the gondola up to Hahsaas mountain station, which overlooks the Saas Valley. A nearly four-mile trail leads back down to the village (In the winter you can rent rodels, or sleds, and sleigh down). The views can be very distracting but we had to keep our eyes on the trail so we didn’t collide with any mountain goats.

In 2013, adventure company Todos Aventura (now known as The Hub) opened 15 miles of amazing mountain bike trails over dunes and around cacti and through dreamlike landscapes. Nothing beats a few hours of this kind of kickin’ around right before dusk. And it makes that cerveza afterwards taste so good!

Take one evening to skip the usual beach sunset. Instead, hop on a guided glass-bottom boat and ride down the Negril River. You’ll start where the river meets the sea on the edge of Seven Mile beach, and cruise down its banks. Take in the gorgeous scenery of mangroves and birds flying against a yellow sky. The ride lasts about an hour and you’ll likely be the only one there, away from the clamor of tourists.

If you’re going to take a scenic gondola ride, it might as well be up the side of a mountain, right? Crystal Mountain’s gondola costs a hefty $25 round trip, but it does come with some lovely views and a surprisingly smooth ride. About six people can fit into one, and leashed dogs are welcome in the gondolas. When you alight from your gondola, you’ll be on a high viewing point with plenty of deck chairs for lounging and admiring the 360-degree view. Hungry squirrels shamelessly beg for scraps, and ladybugs flit about in the air. The gondola is extremely popular in summer, so be prepared for a line and a wait for the ride back down.

The tram gives Portland visitors stunning views of the city, river, and mountains beyond. Grab the streetcar from downtown out to the waterfront. You’re delivered to the lower terminal for the three-minute ride carrying you 3,300 feet at 20 MPH to the upper terminal at OHSU. Linger for photo ops then head back down to explore. If it’s nice, skip the streetcar and walk back along the river. Daily workout, check. Roundtrip cost: $4. At the lower terminal, the Daily Cafe is an easy find in the atrium of the OHSU Clinical building as you disembark the pill-shaped car, built with precision by the Swiss. Head for the river and stroll along the shore in any weather. Double back along SW Bond Ave and consider lunch at Bambuza Vietnamese Bistro. Check out the pricey high-rise condos on the market in the real estate office windows, then relax in one of the pocket parks to people watch. It snows in Portland. A couple of times a winter, even downtown gets dusted and it’s a huge mess. I’ve dreamed about getting my ski gear on, grabbing my boards and heading for the PDX Tram at the South Waterfront. I’d casually climb aboard with the patients and medical folks heading up to “Pill Hill” and blow their minds.

Open from early April to mid-November, this resort pitches luxurious, cabin-style tents on the striking pink-and-scarlet desert. Even the basic Safari tents feature king-size beds and wood-burning stoves, though guests who opt for these accommodations must use the communal bathhouse for hot showers and flushing toilets. Suites up the ante with en suite bathrooms and private decks, while Stargazer options include king-size beds under arched viewing windows.

While Under Canvas goes light on brick-and-mortar amenities, it delivers plenty in the way of rustic charm and modern conveniences. Expect daily housekeeping, organic bath products, and USB battery packs in your tent, plus complimentary camp activities and a fire pit with nightly s’mores. The adventure concierges can also arrange hiking, mountain-biking, horseback-riding, and white-water rafting excursions as well as canyon helicopter tours and Jeep safaris in the Kaibab National Forest, during which guests can spot elk and turkey while exploring native petroglyphs, old stagecoach trails, and the area’s spectacular geology. Located along the Mississippi riverfront, the Mill City Museum rises eight stories from the limestone ruins of what was once the world’s largest flour mill. The historic and modern center of the city, the Piazza del Duomo (the square surrounding the cathedral’s base) remains a popular meeting place, hangout and hub of Milanese life. Local vendors setup shop (selling fresh coconut in the summer, toys and tourist wares), kids run and play (free from traffic) and shoppers trickle in from the walking street surrounding the huge plaza. The statue of Victor Emmanuel II, the first king of Italy, is the best place to meet, sit, recharge and watch the city go by.

Inspired by classic roadside motels, Calistoga Motor Lodge sits at the end of the Silverado Trail, offering guests a casual, quirky stay in Napa’s northernmost town. The boutique property features a design by New York-based firm AvroKo, with lots of midcentury-modern furniture, bright pops of color, and retro details to transport visitors back in time. Simple yet cozy, rooms feature bold carpets, vintage-inspired fabrics, and cheeky art (think needlepoint signs reading “No selfies in the bathroom” and fabric animal heads mounted on the walls), plus tiled bathrooms with rainfall showers and signature bath products from on-site MoonAcre Spa.
