    In Old Town, locals often frequent the inviting, friendly Monica’s El Portal, a 36-year-old institution, housed in an unassuming building. There’s a range of traditional homemade dishes like blue corn chicken and a hearty green-chile stew. The carne adovada (New Mexican pulled pork) chimichanga is immensely satisfying. Arrive hungry and leave full.

    Reachable only by boat, Puyuhuapi Lodge & Spa has incredible views of virgin forest, mountains, and water. The Aysén region is one of the least accessible, less touristy areas of Chile, and it’s really worth going the extra mile. The hotel was created by businessman Eberhard Kossmann, who in 1986 sailed with his family through the fjords south of Puerto Montt. He fell in love with this spot and by a stroke of luck was offered to buy the plot of land a few years later—and so began his first venture into tourism.

    Built from local wood, Puyuhuapi Lodge & Spa sits alongside the Termas de Puyuhuapi (Puyuhuapi Hot Springs), and all the hotel’s hot water and heating is sourced from the thermal waters. Guests spend days exploring this beautiful part of Chile on excursions that range from hiking and kayaking to bird-watching and trips to glaciers. Evenings are spent soaking in the hot springs and relaxing in this picture-perfect wooden lodge on the waterfront.

    For more than two decades, Chef Volker Romeike’s standout restaurant has charmed patrons at the Sheraton Grand Los Cabos Hacienda del Mar with its Pacific Rim concept, ocean views, and dramatic design. Pitahayas—both space and the menu—got an updated look in 2015. A newer focus on blending Mexican and Asian flavors has allowed Romeike to show off his culinary creativity. Duck lumpia (like a spring roll) is served with a papaya salsa; a taro tostada comes topped with carnitas (braised pork); and tuna poke comes with watermelon and chili powder. For special occasions, consider the Cava de Santiago wine cellar, which houses some 400 vintages. The restaurant’s bar also offers Social Fridays, when limitless drinks can be had for a not unreasonable tariff.

    A symbol of Rio itself, it’s been called one of the seven wonders of the modern world, but it’s only when you visit that you really cop to its true dimensions. Designed in 1931 to crown Corcovado Peak, the monument is accessed by a cog railway. The statue and its pedestal, 98 feet tall, stands 2,340 feet above sea level, with the entire city at its feet. Cristo Redentor isn’t just a sculpture—it’s also Rio’s most famous postcard view. Go weekdays and early, with the sun to your back and reduced tourist hordes.

    Pisa’s famous leaning tower (the campanile of the adjacent Duomo) is part of the Piazza del Duomo, a UNESCO World Heritage Site that also includes the Duomo, baptistery and cemetery. Begun in 1173, the tower began to lean almost immediately thanks to soil subsidence. To try to halt the tilt, cables and counterweights have been inserted. A spiral staircase with nearly 300 steps leads to the top of this unique, iconic building.

    I love mountain biking! I am basically obsessed with the activity, have been racing for half my life, and spend the majority of my disposable income on bike related activities. I would do it every single day if I could and at times I do. There are a lot of places in the United States that get a lot of hype for mountain biking like Fruita, Colorado and Moab, Utah, and I love visiting these places, but if you live in the south then I would recommend stopping over in Albuquerque, New Mexico on your way out west. Yes, there are some great things about the ABQ besides “Breaking Bad”! Just outside of Albuquerque is one of the coolest trails I have ever ridden called White Mesa. They call it White Mesa because of the gypsum that makes up most of the trail system. And gypsum makes for a great surface for single-track! Get ready to shred! It is also a paleontological experience because of the dinosaur bones sticking out of the eroded rocks here. There is also an amazing sinkhole at the top of one of the largest climbs on the trail. This place is hella cool! The geology here is amazing and the desert sky always sets a dramatic backdrop. The trail is single-speed friendly and the climate is great year-round! Although the trail is primarily geared towards mounting biking, hiking and horseback riding is welcomed here too. Don’t forget your mountain bike on your next trip to ABQ!

    If sitting in bubbling hot water on a winter night, surrounded by nature and with no disturbance save the sound of the wind in the trees, is your idea of paradise, the Pucón area has enough hot springs to keep your toes permanently wrinkled. The springs range from high-end to amusingly rustic, each with its own appeal, style, and atmosphere. The area itself is beautiful, but to contemplate it from the vantage point of a natural pool is one of life’s greatest pleasures. In summer, people begin arriving at Los Pozones around midnight, when the casino and clubs begin to empty (summer days are usually too hot to tolerate the water’s high temperatures). If you drive up at night, the headlights’ glare will catch hares jumping across the road.

The salad selection is varied and creative, in everything from an old-fashioned Cobb to exquisite local beets with goat cheese and avocado. Breakfast (weekends only before 1:45 p.m.) is also about greatest hits; think eggs Benedict and French toast or one of the very few bagels with gravlax you’ll ever see south of the Rio Grande. The place, in Roma Norte, is famed for celebrity sightings and generally crowded, yet the vibe is low-key, cool, and friendly.

Here, everything from the guest rooms to the restaurants to the events venues feature sweeping views of the Gulf of Mexico, putting guests squarely in a beach frame of mind. The 230 rooms and suites feature generously sized layouts, complete with deluxe bedding, spa-style bathrooms, and private balconies framing Clearwater’s famous sunsets, while common spaces come decorated with an impressive art collection both created and curated by Floridian master Christopher Still.

    When not taking in the vistas, guests can sunbathe by the zero-entry pool and hot tub, or rent a beach chair or cabana and head down to Clearwater Beach. Also available are a waterfront fitness center, a full-service spa, complimentary bicycle rentals, and a corn hole toss on the event lawn. There are even four dining outlets on site, from Sea-Guini (for freshly caught seafood and handmade pastas) to the Sandbar (for cocktails and live music right on the beach).

At Rio’s Lasai, he presents two menus—Festival and Don’t Tell Me Tales—both of which aim to take diners on a culinary tour of Brazil via local ingredients and garden vegetables. You can order your own wine bottle, of course, but the proposed pairings are highly recommended. The warm-toned surroundings and multinational staff ease you into the restaurant’s vibe. For these reasons and more, Lasai—one of seven Michelin-starred restaurants in the city—merits your visit.

    Rio lacks São Paulo’s strong Italian traditions. Perhaps that’s why some of Rio’s best pizza in fact comes from there—like Pizzaria Bráz, if you can judge by critics and mad-crazy crowds that pack into this spot on the Jardim Botânico district’s liveliest street. The pizzas start as a thin, wood-smoked dough and then are topped with mozzarella and a sauce made from a careful selection of tomatoes, and sometimes involve elaborate toppings that add up to capreses, the classic Braz, or even more daring recipes like those with wild-game cold cuts. Appetizers, too, keep ’em coming back (pão de linguiça, a divine sausage bread, for example); and you’re served a capital chopp at your table or even as you wait in line at the door.
