Chef Alex Seidel is more than a chef, he is the farmer of most of the fresh food being served. On his 10-acre farm, he tends to herbs, fruits, vegetables, flowers, pigs and bees. With the addition of sheep in 2010, he created Colorado‘s first Artisanal Sheep Dairy and Creamery. The Carbonara, which is the only item consistently on the menu, is infused with his delicious cheese. The cavatelli pasta is also topped with crispy pork belly and a poached egg for you to crack and mix into the meal. The rest of the rustic menu rotates seasonally and is a favorite among foodies.

Forget any notions you have about boring vanilla, chocolate, and strawberry milkshakes. At Holsteins in The Cosmopolitan, milkshakes are given an innovative twist, and many of them have a spirited, high-proof kick. At its roots, this is a diner-style eatery, so the menu consists of burgers and finger-friendly sandwiches, but none of these meals is made complete without a funky cool treat. Among the favorites on the menu are Drunken Monkey, Frozen Grasshopper, Black Cow Float and Cereal Bowl. If you’re visiting Nicaragua, you shouldn’t miss Matagalpa - a beautiful, mountainous, cool area where you can hike around the Selva Negra nature reserve and take coffee or cocoa tours. The Selva Negra also has an on-site restaurant with an outdoor deck overlooking a small lake, perfect for bird-watching. For one of the best views and best meals in Santorini, try Red Bicycle. Located at the tip of Oia on the northern part of the island, the restaurant is housed in a 19th-century Santorini mansion with a 180-degree view of the famed sunset and the volcano caldera. It was heavenly. Soft island breezes on the open-air terrace. The best food I had in Greece (fresh, local Mediterranean dishes with Greek/Santorini influences). A warm hostess who was incredibly kind to our two children. We ate here twice during our weeklong stay - I definitely hope to go back.

For our few days in Vis, a two-hour ferry ride from Split, we would drive our Vespa until we got to a beach—they are not hard to come by on this small island. This beach, right about in the middle of the south coast of the island, is mostly only accessible to boats. But we, boatless, scrambled down a steep cliff because it looked so perfect, and spent a few dreamy hours. We arrived on the ferry at Vis Town, walked into the tourist office and booked an apartment for a few days. Those days were spent going from beach to languid, four-hour meal, to beach again.

A local favorite since the 1990s, Bar Przystań is a straightforward fish-and-chips joint located right on the beach in Sopot. It’s always crowded, especially on weekends, with hungry visitors lining up to order cold beers, fisherman’s soup, and fried fillets of Baltic herring, flounder, cod, and more. After placing your order, you’ll receive an alarm tile that will buzz when your food is ready. At that point, head up to the counter, collect your meal, and make a beeline for the sand, then eat under the sun.

Fried chicken is arguably one of the most universally loved dishes anywhere in the world. But the people of Providenciales don’t need anything made by the Colonel because they have Sweet T’s. This unassuming walk-up counter in the downtown area has been a landmark for two decades, best known for its pink-and-white paint job and its subtly spicy chicken wings. Facing the impressive Jesuit complex in the Old Town, Kopun is just far enough from the tourist hot spots to elevate its already good food with a pinch of serenity. The menu here focuses on traditional delicacies from the region, including a buzara stew with mussels and a capon prepared from a 16th-century recipe with Eastern spices, honey, and sour orange (there’s also a 19th-century version sprinkled with porcini mushrooms). The wine list boasts several lesser-known local producers, so be sure to ask your server what pairs best with your meal.

On the edge of Zadar’s historic quarter, steps from Pet Bunara Square, this Slow Food–inspired restaurant invites you to linger over your meal. Grab a seat in the exposed-stone dining room or out on the olive tree–fringed terrace and dig into traditional Dalmatian dishes prepared with local, mostly organic ingredients. Pet Bunara even makes all its bread and pasta on-site. Try the orzotto (a pearl-barley stew with smoked mussels), the excellent octopus salad, and, for those with a sweet tooth, the divine fig cake.

The rooftop terrace bar of the smart Rinascente department store offers some of the most stunning views in the city and the in-your-face views of the Duomo from up here really help to put Brunelleschi’s monumental creation into perspective. It just about makes up for the not-very-exciting selection of drinks, snacks and light meals that make up the menu. Beware that you pay more to eat and drink on the terrace than inside the bar.
