  • Acajutla, El Salvador
    Los Cóbanos is a picturesque stretch of golden sand, framed by a fringe of palm trees, perfect for relaxation. The waters here are home to colorful reefs, which are protected by the government, so the beach is particularly popular as the point of departure for snorkeling and scuba trips with licensed outfitters. Expect to see sea snails and urchins, colorful tropical fish, and even some submerged ship wrecks. The best time of year to visit for snorkeling and scuba diving in the area is between November and February.

    On the other hand, the reefs mean it isn’t a particularly good place to visit for surfing. Even so, it is one of the most beautiful beaches to visit while you’re in the town of Los Cobanos, a small fishing community just south of Acajutla in El Salvador.

    Stretching a formidable 27 miles, Jasper’s Skyline Trail is a challenge for all but the most seasoned hikers. The journey is worth undertaking—nearly two-thirds of the route is above the tree line, which means you’ll enjoy stunning panoramic views as the rule rather than the exception. The path runs from Maligne Lake back to the town of Jasper at the foot of Signal Mountain, traversing the Maligne Range mountains in the middle. There’s a short window during which you can enjoy this trail, typically from late July until mid-September. The classic trip includes two nights of camping at Snowbowl and Tekarra campgrounds, but if you’re pressed for time, hike like the locals: Many Jasperites choose to start early and finish late, conquering the entire length in a single day.

    Each Saturday from October to July (and once a month in August and September), the marina of Cabo San Lucas becomes a stage for local artists, musicians, and performers to peddle their wares and showcase their creative skills in the Circuito Cultural (Cultural Circuit), an event started by local entrepreneurs. Artists display their work from noon to 10 pm and live music and dance keep crowd entertained from 6 pm to 11 pm. The performances aren’t just Mexican in inspiration or origin; recent highlights even included Scottish country dancing.

    A few years back, when Lima’s Central Restaurante was closed because of zoning issues, Peru‘s celebrity chef, Gastón Acurio, was one of many who petitioned for it to be reopened. I knew that meant the young chef at Central, Virgilio Martinez, must be doing something truly special. Virgilio’s restaurant is located in Lima’s hip Barranco neighborhood. I stopped in solo one afternoon for lunch and was dazzled by the dishes his servers put in front of me: charred purple corn with scented octopus, lentils, yuzu, and bok choy; “mask of the suckling pig” (or pig face) with tart green apple, baby tomatoes, and galangal; and suckling goat with chickpeas, goat cheese, and lemon verbena. Each course was plated like a work of art and was a beautiful riddle on the palette. My enthusiasm for my food earned me a tour of the open kitchen and the rooftop garden, where servers pluck flowers or clip herbs for dishes like the citrus gelée with edible flowers (pictured above). Chef also gave me a tour of his incredible chocolate cellar, where he shows off his favorite chocolate bars from around the world.

    While many area hotels offer a subtle interpretation of Southwestern design (adobe walls, kiva fireplaces, local art), there’s nothing understated about the Inn at the Five Graces. The inn is a showcase for designers Ira and Sylvia Seret’s far-flung finds: Navajo bedspreads, Uzbek and Pakistani rugs and tapestries, iron and woodwork from Mexico, Peru, and India. It’s the epitome of East-meets-West. First opened in 1996 as Serets’ 1001 Nights, the hotel is located on one of the country’s oldest inhabited streets and is comprised of 17th- and 18th-century adobe buildings connected by a maze of courtyards. In 2002, the inn was renamed to reflect Afghan and Tibetan artifacts in its collection and the eastern idea of the five graces (sight, sound, touch, smell, and taste). In 2009, it became a Relais & Chateau property.

    An intimate gem whose only shortcoming (in some eyes) is that it does not sit on Pink Sands Beach, the Rock House Hotel & Restaurant was a labor of love for the late Wallace Tutt, an interior designer to the stars who was best known for designing Gianni Versace’s Miami mansion. Ten individually decorated rooms in the 1940s private home turned boutique hotel echo that property’s grandeur with king size beds and seaside motifs, as well as sumptuous linens and stone lion heads mounted on the walls in the restaurant. But the real story here is the service: There is always a picnic basket on-hand in every room, a library of games and books is available for perusal on rainy days, and the concierge is happy to arrange in-room pampering treatments if the walk to the neighboring spa feels like too much trouble.

    Rooftop bars are a dime a dozen in New York and many of them offer great views of the city’s skyscrapers. For now, at least, none is taller than Bar 54, which sits atop the Hyatt Times Square on the 54th floor. There are aspects of the decor that scream “chain hotel bar” but who’s paying attention? The view is what it’s all about here, especially at sunset. And the drinks, developed by Julie Reiner, owner of the popular Brooklyn cocktail lounge, Clover Club, are attention grabbing, too. Try the Cucumber Jewel, with gin, Lillet Blanc, Cappeletti, pampelmousse, lemon, and cucumber.

    Guests who lounge too long on the Viceroy Zihuatanejo’s La Ropa beach can find instant relief at the resort’s six-room spa, which features a sunburn-soothing treatment of freshly picked aloe vera, Baja lavender, and organic chamomile. Nearby, the eco-conscious Playa Viva resort offers poolside yoga, healthy cooking classes, and body scrubs made with locally harvested sea salt. This appeared in the June/July 2013 issue.

    Below the hotel’s cottages, the Kerio Valley’s grasslands spread toward the horizon like an infinity pool. Take the plunge on mountain bike or on foot, or marvel from a distance while enjoying a goat barbecue. The restaurant also serves a hearty beef stew by the fire in the stonewalled lodge.     You don’t have to be a guest at El Fenn’s hotel to relish the eclectic surroundings of its gallery and boutique—all ruby red tadelakt around a gleaming silver bar, with a chest-high fireplace and a trompe l’oeil of strutting pink flamingos. As spaces go, it’s a work of art in and of itself. Put it on your list for lunch, dinner, or drinks so that you can also delight in the frequently changing exhibits of contemporary Moroccan and international artworks. Recent highlights featured a showcase of the best of Essaouira art naïf painters and the late, great photographer Leila Alaoui’s moving portraits entitled simply The Moroccans. Peruse the boutique for a carefully curated selection of made-in-Morocco housewares, fashion, and gift items by local designers and artisans before heading upstairs for a long, lazy lunch of market-fresh salads and grilled meat and fish served family style on the rooftop. If it’s too cold for dining alfresco, grab a perfectly crafted negroni from the bar and snag a spot by the fire for an intimate tête-à-tête.

    Tucson is predictably well-endowed with Mexican restaurants...But it’s still worth driving about an hour south to the little town of Tubac for a meal at Elvira’s. Upon entering the cool space, you won’t be surprised to learn that the chef/owner got degrees in design and graphic arts before going to cooking school. The restaurant, family-owned since 1927, is named after Ruben Monroy’s grandmother. Originally located in Nogales, Mexico, Elvira’s moved up to Tubac a few years ago... Have a welcoming “Hola-tequila-shot” (just fifty cents!) while perusing the menu...I had the pipián rojo mole—perfectly tender chicken under a vibrant sauce made with ground pumpkin seeds; my wife tried the day’s light lunch special of mushroom enchiladas with tomatillo salsa, and for out-of-town family, the squash-blossom-stuffed poblano chile relleno “Frida Kahlo.” Beef tongue with salsa verde and the other moles will have to wait for a return visit. Suspended from the ceiling are constellations of lanterns, blown-glass teardrops, flying cherubs—Mexican folk-art with a surreal twist. Your eyes will not be bored. More importantly, neither will your taste buds... (Tubac, incidentally, was the starting point of the 18th-c. expedition that led to the founding of San Francisco, Santa Clara, & San José, CA. Not much of the original Spanish presidio remains, but for the past few decades, “where art and history meets” has become the slogan of this ‘artists’ colony’ in the high desert.)

    We have lived overseas for many years, around different American bases but no matter where we are we can always enjoy a good fireworks show on the 4th of July. This time it was at the Supreme Headquarters Allied Powers Europe (SHAPE) that we got to see them. What is really great about this is that people from all the NATO countries got to enjoy them too, families and friends included. We were sitting on the grass and around us were people speaking so many languages and all celebrating America’s most special day. It was pretty neat. *SHAPE is not in Soignies but Casteau. I choose Casteau and then Soignies appears in the location. Not sure why.

    Housed in a refurbished building on a four-acre private peninsula, this all-inclusive luxury resort is far more expensive than most hotels on Lake Titicaca, but it’s well worth the splurge. Not only are all of your meals, cocktails, and most excursions included, but the lodge invests deeply in the local community—it hires more than three-quarters of its staff from the surrounding area, sources as many ingredients as possible from regional farmers, and turns to nearby artisans for its textiles and other crafts. Additionally, the on-site restaurant is one of the best in the area. If you’d prefer a more private dining experience, take your meal on one of the hotel’s wraparound terraces, or order 24-hour room service.

    All 18 rooms face the lake and feature heated floors (it can get chilly at night at 12,500 feet of elevation), a banquette overlooking the water, a free mini-bar, and deep bathtubs. King rooms are the most economical, but the two corner rooms—with their spacious layouts and panoramic views of the lake—are the most requested. For the best sunrise or sunset vistas, choose either the “Dawn” or “Dusk” rooms.

    Renowned Costa Rican architect Ronald Zürcher looked to his country’s colonial past when designing this hacienda-style property—witness its central courtyard, arched doorways, and terra-cotta roofs. Set amid a 30-acre coffee plantation just outside the capital city of San Jose, the hotel’s 308 traditional accommodations follow suit with dark wood furnishings, but a modern aesthetic pervades renovated guest rooms with streamlined furniture, intricately patterned bathroom tiles, and expansive views that extend from green lawns to forested mountains and urban skyline; some include small balconies that overlook the hotel’s two pools. On-site dining options include gourmet takes on Costa Rican fare at Hacienda Kitchen, Peruvian specialties at La Isabela, and fresh-made sushi at La Castilla, as well as a sports bar and café. The open-air great room invites reading and quiet conversations, but if you’re up for something a little more energetic, there are tennis courts, a driving range, a fitness center, and invigorating coffee scrubs at the spa.

    When the directions to El Huacatay lead you from an unassuming street into an overgrown garden, you may be surprised. When you taste the food here—at what is one of the top gourmet dining rooms in Cuzco and the Sacred Valley—you’ll be equally surprised. Whatever you choose from the menu, you’re unlikely to be disappointed, from the melt-in-your-mouth beef tenderloin to the delicious and fresh valley trout. Share appetizers like the ricotta cheese croquettes with tree-tomato sorbet or the alpaca carpaccio. The drinks are excellent as well, with top marks for the coca sour, made with coca-leaf-infused pisco. Reserve to assure a table in this tiny boîte.
