  • Apoyo Lagoon, Nicaragua
    When I hear the word lagoon, I don´t envision it being a place I´m going to want to swim. Laguna de Apoyo, located between the cities of Masaya and Granada, completely changed my mind. This warm, fresh water lagoon (actually the size of a lake) with a stunning view of the Mombacho Volcano, is the perfect place to spend a hot day in Nicaragua. You can access the water either from the public beach or through a hotel like Posada Ecologica la Abuela. If you access it through a hotel you’ll either have to pay $6 or spend about $8 at the restaurant. It’s an easy trip from either Managua or Granada, and you can hang by the Apoyo during the day and make an afternoon trip to the Artisan Market in Masaya.
  • Not all the fun happens below the sea here. For fun atop the water, head to Lac Bay, the largest bay in the ABC Islands (Aruba, Bonaire and Curaçao, for the uninitiated). Kayaking through the resident mangroves, you’ll see all manner of birds and fish—particularly if you rent a glass-bottomed kayak. Meanwhile, the combination of consistent trade winds and sheltered shallows makes for some of the world’s best windsurfing—even if you’re new to the sport.

While Kontiki does not have a full-service spa, guests can book massages and manicures right on the beach.

    Captain Dave’s ocean safaris offer visitors a different way to see Laguna. Departing from Dana Point, the cruises take place on a high-tech, high-speed catamaran equipped with underwater viewing pods so guests can see marine life up close.     “This family-run restaurant on the fishing island of Pellestrina is quite far out—probably 45 minutes by boat. But in the summer months, it’s a lovely ride, breezy and fresh. Once you’re at the restaurant, you sit on a pontoon and see nothing but the spread of la laguna and the occasional boat speeding past. They do wonderful fish here. It’s incredibly fresh and they’ll bring you an array of mixed antipasti to start. The oven-baked turbot on potatoes with baby artichokes and baby tomatoes is fantastic. So, so good.”

    You can find stunning tide pools all along the coast of Laguna Beach, but the ones at Wood’s Cove are unique because they’re deep enough for swimming. Part of a rocky outcropping called Cactus Point—which is also home to Orange County’s only blowhole—the pools are full of exciting marine life, from hermit crabs and sea stars to colorful sea anemones. When swimming here, just be sure to leave everything exactly as you found it. The tide pools fall within a protected area, meaning that taking shells, rocks, sand, or other objects is strictly forbidden. And keep an eye on the tides—it’s best, and safest, to visit at low tide when the risk of crashing waves is minimal.

    Stroll through Otrobanda for more than five minutes and you’ll immediately understand why locals call it the cultural heart of Willemstad. Located across the bay from Punda—Otrobanda literally means “other side"—the district is a fascinating mishmash of restored colonial buildings and run-down alleys covered in fading murals. Along the Breedestraat, the neighborhood’s main shopping road, you can find rows of Chinese and Indian stores, bars, lotto shacks, bakeries, and hole-in-the-wall restaurants.     Once the haunt of writers, filmmakers, and Hollywood celebrities, this historic hotel on the Pacific Coast Highway famously hosted a lobby backgammon game between J. Paul Getty and Howard Hughes in the 1930s. Today, the pet-friendly property maintains its original grace with Spanish-style stucco and domed arches, but 10 of its 41 suites have moved on to a decidedly different sort of California cool. Created in collaboration with iconic skate and surf brands like Etnies, Roxy, and Billabong, the Casa Surf rooms feature hand-painted surfboards, underwater photo murals, and George Nelson furniture, fully immersing guests in Laguna surf culture. For something more traditional, book one of the Spanish rooms, which include wrought-iron accents and ornately carved dark-wood furnishings.

    La Casa sits just a stone’s throw from Cress Street Beach, where hotel guests enjoy access to chairs, umbrellas, and beach towels as part of their resort fee. Also included in the fee is daily breakfast, access to the nearby Art of Fitness gym and its juice bar, and reservations at the on-site Rooftop Lounge, where you can sip mojitos while watching the sun set over the Pacific. The menu here goes well beyond seafood, but while you’re staring at the ocean, you might as well try her delicious offerings.
