    Some visitors to Santa Fe are surprised to find this Gothic revival structure in the middle of all of the adobe buildings in the historic district, like a piece of medieval Paris transplanted to the Wild West. The French connection is real—the 19th-century Loretto Chapel was designed by a French architect who modeled it after La Sainte Chapelle in Paris. According to legend, though, the plans failed to include access from the chapel floor to the choir loft. So, the nuns who ran the girls’ school for which this stone structure was built began praying, and after nine days, a mysterious carpenter arrived. Neither nails nor glue nor any visible external support were used in this doubly-twisting staircase, and no one ever found out the name of the carpenter, who left without seeking payment. It must’ve been St. Joseph himself...so goes the legend of “the miraculous staircase.” The physics of the structure can be explained by architects today, but that doesn’t stop about a quarter-million visitors every year from marveling at the elegant spruce spiral. Open to the public as a privately run museum, the Loretto Chapel hasn’t been a church for decades. It can, however, be rented: a spectacular setting for a private wedding.
  • Umm Qais, Jordan
    Tucked into the hilly northwestern corner of Jordan, Umm Qais (or ancient Gadara) commands grand views of the Sea of Galilee and the Golan Heights from the edge of its plateau. It was here that Jesus is said to have performed the miracle of casting demons out of men and into pigs. The town has existed since the Hellenistic period, but is best known for its Roman ruins, which once sat along a prosperous trade route. Many ancient streets and buildings are still intact, as are several Ottoman-era stone houses, which remained occupied all the way until the 1980s. Grandest of all the ruins is the black basalt theater, located along the wide Decumanus Maximus that still holds its original paving stones. Visitors should also be sure to check out the small museum in what was once the home of the Ottoman governor, as well as the celebrated restaurant in the old Ottoman school. In recent years, Umm Qais has become a pioneer of community tourism in Jordan, and it’s even possible to take cooking classes, nature walks, or tours with a local beekeeper after enjoying the ancient ruins.

    Tucson is predictably well-endowed with Mexican restaurants...But it’s still worth driving about an hour south to the little town of Tubac for a meal at Elvira’s. Upon entering the cool space, you won’t be surprised to learn that the chef/owner got degrees in design and graphic arts before going to cooking school. The restaurant, family-owned since 1927, is named after Ruben Monroy’s grandmother. Originally located in Nogales, Mexico, Elvira’s moved up to Tubac a few years ago... Have a welcoming “Hola-tequila-shot” (just fifty cents!) while perusing the menu...I had the pipián rojo mole—perfectly tender chicken under a vibrant sauce made with ground pumpkin seeds; my wife tried the day’s light lunch special of mushroom enchiladas with tomatillo salsa, and for out-of-town family, the squash-blossom-stuffed poblano chile relleno “Frida Kahlo.” Beef tongue with salsa verde and the other moles will have to wait for a return visit. Suspended from the ceiling are constellations of lanterns, blown-glass teardrops, flying cherubs—Mexican folk-art with a surreal twist. Your eyes will not be bored. More importantly, neither will your taste buds... (Tubac, incidentally, was the starting point of the 18th-c. expedition that led to the founding of San Francisco, Santa Clara, & San José, CA. Not much of the original Spanish presidio remains, but for the past few decades, “where art and history meets” has become the slogan of this ‘artists’ colony’ in the high desert.)

    If walls could talk, you’d be stuck in conversation with the Fillmore for hours. The building was a dance hall when it opened in 1912 and a roller rink during the 1940s, and led its first concerts in 1952 with artists like James Brown and Ike & Tina Turner. But in the mid-1960s, the venue really had its moment. Concert promoter Bill Graham made the ballroom a hub for psychedelic music and brought would-be legends like the Grateful Dead, Big Brother and the Holding Company, Jefferson Airplane, and Santana to the stage. Needless to say, there’s history here. Learn it best by attending a show. The standing-room-only ballroom still brings in big-name artists—think Lorde and the 1975—at budget-friendly prices, along with a constant stream of smaller acts. There’s a full-service restaurant and a bar, and the vibrant collections of old photos, artwork, newspaper clippings, posters, and billings will school you on the club’s colorful past.
  • During the many years I lived in Dubai, I must have sipped drinks on the wide, breezy veranda of Bahri Bar hundreds of times. It was the bar I took my many visitors to Dubai—from my Mum to my old school friends—on their first night in the city and on their last. On the first night it was all about setting the scene and creating an impression and on the last it was about making my guests already start to miss Dubai—and thereby ensuring they returned again to visit me! Although an expat favorite, it’s undeniably touristy. But there are few lovelier ways to start a vacation in Dubai than settling into a cushioned chair on a deck strewn with Oriental carpets and dripping with lanterns, sipping a glass of wine, a cocktail or icy cold beer, and feeling the warmth of sun on your face and a breeze wafting in from the Arabian Sea. The interior of the colonial-inspired bar is sumptuous and that’s where you’ll want to retreat during the warm (i.e., scorching hot) months of spring and summer. But in the cooler months (i.e., the beautiful stretch of weather from November to April) you need to snag a table on the veranda for views of the abra boats cruising on the man-made waterways, the striking sail-shaped Burj Al Arab, and the sublime sunset. Make sure you book a restaurant for dinner somewhere else, or you might never leave.

    From New York to Tokyo, the world’s food scene is heavily informed by outside influences. In Paris, this translates to cuisine that isn’t narrowly French but rather brimming with ethnic flavors. That includes the unequivocally popular and omnipresent tastes from Italy, though they tend to vary drastically in price and quality. When I learned about Come A Casa (literally, like at home), which is located just off of the Place Léon Blum near Voltaire in the 11th, I knew I needed to see whether it ranked among the city’s few worthy Italian joints. This 15-cover jewel box of a restaurant fits the bill perfectly. The menu is compact, dominated largely by fresh antipasti and a lasagna and pasta dish that changes daily. The wines are Italian and should absolutely be paired with the meal. But what’s on the plate is only part of the charm of this Tuscan trattoria. Owner Flavia Federici is not only credited with turning out flavorful dishes capable of transporting each diner straight to Tuscany but as the mastermind behind the standout design. Trained as an architect, Flavia left no detail unconsidered when laying out the small space. The elevated, open kitchen lords over the tiny dining room, appointed with vintage furnishings (including school desks), serving dishes and shelving to house wine, pasta, sauces and other goods that guests can purchase to take home. Come A Casa is warm, welcoming and guaranteed to delight. Just don’t forget to order the stracciatella.

In the heart Naramara is the historic Naramata Heritage Inn & Spa. Built in 1908, some say it’s haunted with its history of being a school and the first cultural hub upon Lake Okanagan. Today it functions as an ideal getaway with nearby beaches, over 100 wineries and the variety of adventure activities nearby. I always make time to stop in during my wine tasting trips to sit in the sun with a glass of local wine and a variety of local cheese and charcuterie selections. This is foodie stop one shouldn’t miss while visiting the area if not staying with the hotel. Take a tour through the chefs garden, tour the quirky town of artists and vintners, or enjoy the cycling, zip lines, hikes, fishing and water sports all within the Central and Southern Okanagan.

To hone your surfing skills, visit the Tura’I Mataare Surf School in Paea, which offers both single and multi-day lessons by qualified instructors that include equipment rentals in the fee. Located on the southern half of the island, known as Tahiti Iti, the monster wave at Havae Pass, also known as Teahupoo, is the wave that experts make pilgrimages to ride – please don’t attempt unless you know what you are doing. This is where the Billabong Pro Championships are held each year over a week in August.

    On arrival at Terranea, it’s natural to release a big, tension-melting sigh. The resort occupies 100-plus acres along the bluffs of the Palos Verdes Peninsula, providing expansive views of the Pacific and a sense of spaciousness that’s rare in the city. The Mediterranean-style resort hotel spent $40 million in 2017 to upgrade the property, which includes 582 guest rooms and suites, eight bungalows, four swimming pools (take the kids to the 140-foot waterslide at the Resort Pool), and one acclaimed golf course. At its upscale wellness-minded spa, ingredients grown on the grounds go into the treatments, which are designed and timed to improve the body’s circadian rhythm.

    Pure pampering aside, regulars return in part for the unparalleled access to dozens of postcard-pretty hiking trails, including a naturalist-led walk (there’s also a falconry program). One of the resort’s nine restaurants can meet virtually any craving that hits, but the mar’sel‘s scallops with basil risotto should be non-negotiable. Pro tip: Book a visit in December or January to watch the sun rise and set from the same vantage point—and maybe even spot some humpback whales.

    Did you know that only 25% of French people buy their cheese from a fromagerie? And of that 25, only 3-4% go to an affineur (cheese refiner). Both are the sad realities of a dying tradition in France of sourcing provisions from neighborhood artisans. Young affineur Baptiste Yapar doesn’t let the disheartening takeover of corporate food business dull his passion. The firebrand cheese master focuses his energy on running his shops Au Coeur du Marché (at the Marché d’Aligre) and educating the public. At La Cuisine Paris cooking school, he takes a small group through a complete background of cheese (it didn’t begin in France!), methods of production and the various designations and families of cheeses available. A copious tasting of 7-10 different cheeses (with wine) follows the contextual debut and is, as my friend and I agreed by the end, the closest thing approximating cheese heaven on earth. It is a fascinating two-hour experience that will not only inform how you consider the nuances of cheese in the future but will have you excited to seek out your nearest independent cheese shop for more.

    In Istanbul, the most authentic place to smoke nargile (also known as hookah and shisha) is Corlulu Ali Pasa Medresesi. The 300-year-old Medrese evolved from a religious school and dervish lodge during the Ottoman times to bazaar stores in the mid-20th century to its current form—a respite for locals and tourists from the bustling Grand Bazaar district. Relax amid the bubbling sounds of the nargile while indulging in the wafting aromas of fruity tobacco. Alcohol is not served; instead, savor a Turkish tea in a tulip-shaped glass or try “boomba” tea with lemon, hibiscus, and mint at the café on the left as you enter the complex. In winter, the warm milky cinnamon drink called salep is a local favorite. The customers are mainly men, but ladies, don’t feel intimidated. It’s a great place to people watch and meet locals who speak many languages. Corlulu Ali Pasa Medresesi is open till 2am and located on the tram line between Cemberlitas and Beyazit/Grand Bazaar stations. If you want my recommendation, try the apple and mint or rose and mint nargile—best shared with old and new friends. Afiyet Olsun (bon appetit)!

    Pescheria Mattiucci is a fish store by day that transforms itself into a small standing-room-only restaurant a few nights of the week. Mattiucci is an old family operation, but this place is the brainchild of a young son, Luigi Mattiucci. Luigi speaks to me from behind the counter as he preps plates of fish. “There’s a tradition of eating raw fish in southern Italy,” he says. “But it wasn’t a restaurant thing. It was something fishermen did because they couldn’t store all the fish they’d caught.”

    He passes me a plate of raw red shrimp with the heads still on, slices of Sicilian tuna, and some amberjack, all of it topped with only a spray of lemon juice and some thick grains of sea salt.

    Mattiucci has expanded his family business, which began as an outdoor fish stall in the Quartieri Spagnoli. (Everything artisanal in Naples seems to originate from there, probably because only a poor neighborhood like that could supply the child labor that was the foundation of old-school artisanal culture.) Mattiucci expanded from that original location into this store in posh Chiaia and also bought fishing boats in Sicily so they could eliminate the middleman. He serves me a dish of baby calamari stuffed with friarelli, a distinctively Neapolitan bitter green. Then he offers me a sample of a new dish: the same seafood stuffed with sprigs of spring vegetables, just now in season. Mattiucci, I realize, is someone who’s taking an artisanal approach to the very traditional, and non-artisanal trade of fishmongering. He’s already expanded his restaurant to London and Milan, but Naples is still where he cooks himself. “The fish is freshest here,” he says.

    Located next door to the extravagant Sun Valley Lodge, the intimate Sun Valley Inn provides a quieter, less flashy retreat. Don’t expect drab accommodations, however. All 97 rooms were refurbished for the 2018–19 winter season with irresistibly comfy beds and sumptuous carpeting. The iconic Ram restaurant and bar were also remodeled, while preserving their extensive woodwork (the building dates from 1937, when Sun Valley became one of the first ski resorts in North America). Amid antler chandeliers, Austrian cowbells, and velvet drapery, diners enjoy steaks and fondue—minus any canned Muzak. Come evening, a pianist tickles the ivories of the Ram’s baby grand. The restaurant also offers a rotating lineup of “heritage dinners,” which highlight the Ram’s historic favorites, such as Hungarian goulash (on Saturdays) and schnitzel (Wednesdays).

    The inn’s meeting spaces attract conventioneers, and the heated pool appeals to families with school-aged kids. Teens also enjoy roaming the resort campus, which extends beyond the Sun Valley Lodge to Dollar Mountain (Sun Valley’s original ski hill that now includes beginner slopes and a terrain park). Guests can also hop on the buses connecting the Sun Valley Inn to Ketchum’s downtown and to Bald Mountain, Sun Valley’s main ski area.

    The largest and most storied of the Sydney Harbour islands, Cockatoo was once an Aboriginal fishing ground, a naval shipyard, a girls’ reform school, and a gruesome prison. Today, it offers fascinating walking tours, a casual café, and a number of events such as the Biennale of Sydney. When most visitors line up in the evening to catch the ferry home, those staying on the island are just setting off on a leisurely sunset stroll. They can watch the city light up from what feels like another world and then retreat to their campsite, canvas “glamping” tent, heritage home, or modern apartment until they wake up to birds and boats the next morning.

    Welcome to the vagina island, no joke (the rough English translation of the word Huahine is vagina). And although no one knows exactly where the name originated, historians think it has to do with the important role women played in the island’s history. Comprised of two islands – the more developed Huahine Nui (Big Huahine) to the north, and Huahine Iti (Little Huahine) to the south – there isn’t a lot to do here, but the unpretentious and relatively sleepy vibe appeals to budget travelers and surfers, as Huahine has some of the cheapest beds and best breaks in all of French Polynesia. It is also home to untouched beaches, isolated coves, enchanted azure lagoons and the most extensive complex of pre-European marae in French Polynesia. It also has a noticeable lack of luxury resorts, making it still feel like a Robinson Crusoe style getaway. Some of the most consistent and best surf in French Polynesia is found off Huahine’s shores, but local surfers can be very possessive, so make sure you check with them before hitting up their turn. This is also not the place for novices, as the left and right reef breaks can chew you up pretty badly. Huahine is also home to some great dive spots, including a canyon where you can see barracuda, jackfish, rays and sharks. For snorkeling head to Fare, which has a pretty sand beach just north of town and a wide, translucent lagoon that drops off quickly for excellent snorkeling around coral and through schools of multi-hued fish.
