    Hol Chan Marine Reserve, located just a few minutes’ boat ride from San Pedro, is the place to go for snorkeling in Northern Belize. This small, protected area (Hol Chan means “little channel” in Mayan) is home to part of Belize’s barrier reef, which is the second largest in the world (after Australia‘s reef), and the largest healthiest. There are many tour operators out of San Pedro that can take you out for a half-day of snorkeling the reef, and you’ll see colorful coral, rainbow fish, and manta rays, among other marine life. Make sure your guide brings you to Shark Alley, where nurse sharks come to feed on the fish scraps boats leave behind. There, you’ll be able to swim mere feet—or even inches, if you dare—from the creatures.

    What used to be a wool shed in the middle of a sheep farming area is now a youthful hotel that celebrates the Pyrmont district’s heritage while featuring the full suite of modern amenities. Opened in 2013, the hotel is an extravaganza of wool, which is found in the felted black lampshades attached to old pulleys in the lobby, in the lower wall panels in the hallways, and as carpeting throughout the building. The old Wool Brokers Arms is visible across the street from the heritage rooms on the west side of the hotel. Modern and cheeky touches also abound at this boutique property, known as the world’s first Instagram hotel. There’s an empty “Selfie Frame” hanging amid mismatched furniture in the lobby, and guests with at least 10,000 Instagram followers are offered a free night’s stay. (Mere Instagram mortals have a chance to win, too, by using the hashtag #1888hotel to be entered into a monthly photo contest.) 1888 is also a leader in sustainability; the hotel preserved the building’s original ironbark beams and built desks from recycled floorboards. The minibar is more conscious than usual, too, stocked with Alter Eco chocolates, Charlie’s juices, coconut water, and fresh milk. The best things about 1888 are the little surprises. Even the hotel’s name has a double meaning: 1888 was the year the building was constructed but was also the year that the Kodak camera debuted.

    Let me put the good news front and center: This is not your father’s Ritz-Carlton (nor your mother’s). For example take the infinity pool, which practically drops you in the Atlantic. Then, there’s the art deco décor, which comes alive with the Latin beat infused throughout the property. Finally, consider the location: the completely restored landmark hotel is literally steps from Lincoln Road, the epicenter of South Beach life – at least the part of life that’s off the beach. I, for one, could not have been happier reading in a poolside chaise or taking a soak in the Jacuzzi, unless it was when I headed up to the state-of-the-art spa, and then down to the beach, where attendants are standing by to cater to your (nearly) every whim. Sunrises are breathtaking — instead of taking photos to post online, I suggest you do what I did: Stand there and let the new day bathe you in its rays. But there is one important way that this Ritz-Carlton is like every Ritz-Carlton: The top-flight service. I barraged handsome Patrick, the day concierge, with a series of questions: “Where can I have dinner that is quiet and outside?” “Can you find me a yoga studio with ‘flow’ classes?” And so on. Let me say this: He knows his stuff and so does the rest of the staff. I was genuinely sad to leave, wanting more time at the pool, at Bistro One LR. Basically, more of everything, which is the ultimate compliment for any hotel. (A $28 resort fee is charged per night, per room)

    The Busselton Jetty is the longest timber-piled jetty in the Southern Hemisphere and it reaches out over the protected waters of Geographe Bay to the tune of 1.8 kilometres. Heritage-listed and well loved by residents and visitors alike, it’s more than a jetty. The structure itself also houses a train, interpretive center, shops and the underwater observatory which is a stunning feat of engineering that allows visitors to get closer to the ocean’s inhabitants than I’ve ever seen anywhere else without actually being in a submersible or diving. On a gloriously sunny day, the ocean around Busselton Jetty seems clearer than drinking water and schools of fish can be seen in an around all the timber pilons weaving in and out of the grasses which grow on parts of the sandy bottom. Whether swimming from shore or from any one of the access staircases that line the jetty, it’s difficult to actually avoid getting one’s feet or whole body wet. Busselton is a lovely seaside town but the jetty is a surprising draw. On first glance, it’s like any in the world but take a closer look and you’ll quickly understand why area residents are so proud of it!

    In the 1850s, a rugged hill overlooking Sydney Harbour was capped with the Sydney Observatory at the behest of English astronomer and clergyman William Scott. What started as a sandstone structure used primarily for time-keeping and navigation developed into an observatory that has been illuminating the southern sky for more than a century. Sydney has much more light pollution today, but the original retractable copper dome does a good job of blocking it out to bring distant constellations and nebulae into view. The resident astronomer will target planets such as Jupiter and Saturn as well as only-in-the-southern-hemisphere sights such as the Southern Cross constellation or the astronomer’s favorite: Jewel Box, a rare cluster of glimmering stars whose different colors reflect distinct ages.

Old menu favorites like the grilled Wagyu skirt steak and deep-fried Brussels sprouts can now be paired with a seafood cocktail, or wood-fired pumpkin tamales smothered in mole.
