Buba’s own two daughters, nephews, cousins, and other miscellaneous family either host, help in the kitchen, play dj, man the bar, or simply greet visitors from their porches with welcoming, West Indian waves. This homegrown approach extends beyond hospitality to deliciously impact the food as well. Nearly every fruit, vegetable, and herb used in the dishes at Buba’s are all grown on the sloping overgrown gardens surrounding the restaurant. During its heyday, the medersa had room for up to 900 students; it was given over to the city as a museum in the 1960s and has remained so ever since.

Located close to Santa Fe, the Winsor Trail is a 10-mile (point-to-point) stretch, which appeals to hikers, runners, and mountain bikers. Jansky Very Large Array (VLA) is an impressive, stunning radio astronomy observatory located on the Plains of San Agustin. The massive dishes are arranged in rotating patterns and form the largest radio telescope in the world looking for complex solar system life. Los Osuna is an award-winning blue agave distillery that’s more than 100 years old. It’s located in the hills outside of Mazatlan. It has old wooden buildings, displays of traditional tequila-making processes, and has a quaint little bar under the canopy of an enormous tree. The tour shows both traditional and modern tequila-making techniques and, of course, ends with a drink of the distillery’s finest in the shade. Definitely a pleasant way to pass an afternoon.

A pioneer of the Hawaii Regional Cuisine movement, chef Mark Ellman showcases his thoughtful approach to cooking at Mala Ocean Tavern, a harbor-front eatery with dramatic sunset views. Come here for well-executed fusion fare like ahi bruschetta, whole wok-fried Hawaiian fish, and a vegan mushroom Bolognese pasta with local shiitakes, as well as signature cocktails like the Spa Day (cucumber, vodka, fresh watermelon juice) and the LBC (gin, passion fruit, basil simple syrup, fresh lime, and soda). A trip on Oahu’s windward side to the North Shore is not complete without a stop at the yellow Shrimp Shack. Two wonderful women operate this truck and serve up locally sourced fresh shrimp and other delicious food. As a warning, the meals are usually loaded with garlic and spice, but oh so wonderful. Instruction are painted on every yellow table top: “Suck, peel, dip, and EAT.” Drinks (and other convenience-store items) are available at Ching’s Store next door. The truck is bright yellow and impossible to miss on the North Shore. Be sure to stop in and say hi and indulge in some amazing spicy shrimp!
