The most exclusive lodge in New Zealand, having hosted everyone from Queen Elizabeth II to the late Robin Williams, Huka Lodge feels like a refined country getaway set on the banks of the Waikato River near the North Island resort town of Taupo. Founded in 1924 by a charismatic Irishman named Alan Pye, the property was later reimagined by entrepreneur Alex van Heeren with the help of interiors specialist Virginia Fisher and famed New Zealand landscape designer Suzanne Turley. The surrounding grounds are ranked as a ‘Garden of National Significance’ by the New Zealand Gardens Trust. Whether staying in the lodge suites—which feature French doors that open up to a wooden terrace just steps from the river—or the lofty private cottages, guests will feel like royalty here.

It is authentic, vegetarian, and very popular with the locals. Waits, especially on weekends, can be lengthy. Be sure and sample the Rava Masala Dosa, washed down with fresh lime juice.

Salamander Resort & Spa has one of the best equestrian facilities in the U.S. Horse lovers can book a stay in one of the hotel’s 168 rooms, but the facilities are also open to the public. The 340-acre resort has a 22-stall stable and nine paddocks. Professional riders and former Olympic horsemen are amongst some of the instructors who give lessons and hold clinics. Inside, books on business, history, art, travel, and more are crammed into every corner, with an entire room dedicated to children’s literature. The shop also stocks numerous regional titles as well as cards, journals, and gifts and regularly hosts events with local and visiting authors. When you’ve finished shopping, grab lunch on the second floor, where Pyramid Bistro serves healthy, veggie-forward fare.

Tucked away in the Belgian province of West Flanders is the small town (about 20,000 residents) of Poperinge, almost touching the French border. I went there to visit the Hop Museum and the area produces around 80% of Belgium’s hop crop. If you’re a beer lover, then you know this is a fact: no hops = no beer. Every September the town holds the annual Hop Festival to celebrate the harvest, just has they have done (celebrating hops, that is) for centuries. An interesting fact: Poperinge also the home to Belgium’s very first astronaut - Dirk Frimout.

If you’re visiting Nicaragua, you shouldn’t miss Matagalpa - a beautiful, mountainous, cool area where you can hike around the Selva Negra nature reserve and take coffee or cocoa tours. The Selva Negra also has an on-site restaurant with an outdoor deck overlooking a small lake, perfect for bird-watching. You can sit outside during your meal and enjoy the view, or take a walk around the lake to the special “birdwatching patch” to commune with some local geese.

The Friterie Pitta de la Chapelle is located just outside the church and near the Chapelle train station, which is a short distance from the Sablon. This friterie is like most friteries but they did add “Pitta” to the name. If you’re alive today and living anywhere in the world, you will know what a pitta is. The pitta, the fries/frites and everything else sold here is pretty tasty and greasy, as its meant to be. Friteries are the Belgian answer to McDonalds and fast food. They’re not that fast though (but neither is a McDonalds in Belgium).

You’ll get the most amazing treatment here from the moment you walk in. Granted you’ll be paying for it. They offer larger property options where you have access to your own private swimming pool. It’s really one of the most historic hotels in Phoenix.
