    When Bouillon Bilk first opened in 2011, Montréal’s restaurant critics were intrigued. The chef, François Nadon, had worked at several of the city’s top restaurants but was largely unknown, and the restaurant was located on an undistinguished stretch of boulevard St-Laurent. But it soon became both a critical and popular favorite. The contemporary, minimal space is decidedly unstuffy compared with many of Montréal’s leading restaurants. Similarly, the menu may be gourmet but it’s also daring, with ingredients and preparations from Asia complementing French dishes and techniques. You can start with Japanese yellowtail, move on to a pasta dish, and end with a selection of Québecois cheeses, if you choose. There are also fresh oysters on the menu at both lunch and dinner.

    The most exclusive lodge in New Zealand, having hosted everyone from Queen Elizabeth II to the late Robin Williams, Huka Lodge feels like a refined country getaway set on the banks of the Waikato River near the North Island resort town of Taupo. Founded in 1924 by a charismatic Irishman named Alan Pye, the property was later reimagined by entrepreneur Alex van Heeren with the help of interiors specialist Virginia Fisher and famed New Zealand landscape designer Suzanne Turley. Marv & Ben aims for a relaxed feel which has, at times, been described as a gastro-pub ambience.

    Zum Franziskaner has a laid-back vibe that makes you feel like you’re dining in someone’s living room. The central location means it’s always full, and it’s a popular spot after the opera. There are two menus, a German one and an English one which doesn’t include all of the same dishes as the German ones, so if you want to try something *really* Bavarian ask for the German menu as well and see if your server can help you. Also worth noting is that the pretzels on the table are not free. They’re delicious, but you pay for each one that you eat.

    The very first restaurant that was recommended to me by the bellhop at my hotel was Mother’s Restaurant. Mother’s is one of the oldest and most successful restaurants in the NOLA. The line to get inside stretches down the sidewalk to the back of the building. The menu has all of the Nawlins classics like Po-Boy sandwiches and jambalaya. Breakfast is also amazing. Creations like the shrimp creole omelet with grits really popped out on the menu for me. Try it, try it all!

Reservations are essential to enjoy such delicious dishes as roast ginger sea bass with crab, and lamb loin in a sauce of mint, rosemary, currant, red wine, port, and brandy.

    The JW Marriott is internationally known for its luxury brand, and El Convento Cusco just might be one of the most impressive properties in its portfolio. Here, you don’t even have to travel to Machu Picchu for an archeology lesson, as the learning begins almost the minute you step through the hotel’s stunning brick arches—they were painstakingly rebuilt by hand from what remained of a 16th-century Augustinian convent, which was in turn built on Ican and pre-Incan ruins. Guests can wander downstairs through two exhibition rooms of excavated artifacts, or join free guided tours each evening at 6 p.m.

    Rooms are individually decorated with sleek, dark-wood furnishings and Peruvian travertine tabletops. A handful have small balconies with views, while some on the lower floor look out onto one of the many remaining Incan walls that thread through the city. You can request to have oxygenated air piped into your room to help combat the discomfort many feel at 11,000-plus feet of elevation and there’s even an EMT on staff just in case. When hunger strikes, head to the on-site Qespi Restaurant, considered one of the best in the city for its exquisite interpretations of Andean cuisine.

    In addition to providing a peaceful green space, this remarkable terraced garden near the Ponte Vecchio offers terrific views of the city. Its scale—much smaller than that of the Boboli Gardens—gives it a more intimate feel. In spite of its size, it includes an incredible diversity of garden styles. Climb the grand central staircase and wander from woodlands to an Anglo-Chinese garden, with fountains and sculptures in the mix, as well as visible fragments of the garden’s original medieval walls. The famed 19th-century art dealer Stefano Bardini lived in the Villa Mozzi (now the Villa Bardini) and it is his unique taste and vision that continues to shape this ornate attraction.

    The first luxury lodge to come to Chile’s second biggest island, Tierra Chiloé opened in 2012 and became a member of the Tierra hotel group in 2014. Designed by Chilean architect Patricio Browne, the hotel looks like a boat on stilts and was inspired by the homes of local fishermen, which take the same form and are known as palafitos. The exterior is made from picturesque larch wood shingles—a building technique that’s very typical on Chiloé and is seen on the famous UNESCO World Heritage churches that dot the islands.

    Inside, guests find more wood. The hotel’s wood walls and ceilings are made from indigenous species . The decorations are locally inspired with plenty of handicrafts such as wicker baskets, handwoven rugs, and wooden carvings. The focal point is the meadow and Reloncaví Sound below, where the hotel’s boat is harbored. Large windows line the building on both floors and provide excellent views. Guests can relax in a small spa, a winetasting room, or a book-filled upstairs studio upstairs. The living room with fireplace makes a perfect spot for an end-of-day pisco sour.

    Not many know that Matsuei was the first restaurant with the great Nobu of international sushi fame at the helm. Back when he had both a first and last name, he met a man while working in a sushi bar in Japan who offered to stake his solo business venture if he set up shop in Peru. And thanks to a large Japanese community in Lima, Matsuei was a success. On the menu you’ll find the original cream cheese, tempura, mango, and fusion rolls now loved the world over. But even purists will love the high quality local fish and seafood, especially the creamy sole and to-die-for scallops.
