While dinner at this rustic, romantic spot is hardly the time to eat lightly, if you want to go vegetarian, opt for the indulgent raclette au gratin with fingerling potatoes, cornichons, and toast, along with a salad of poached and raw pears with mixed greens, pistachio pesto, and champagne vinaigrette. And as befits the restaurant’s caprine theme, the goat cheese cheesecake with poached peach and whipped cream is a favorite dessert.

    Calistoga Ranch sits in a private canyon of the ridge that makes up the eastern side of the Napa Valley. From this secluded spot, the entire valley floor unfolds. On windy nights, you might spot hawks surfing thermal winds just outside your balcony. But the views aren’t the only selling points of this ultra-luxurious 157-acre resort. Instead of traditional rooms, Calistoga Ranch is composed of 50 freestanding one- and two-bedroom guest lodges. Each upscale-yet-approachable lodge resembles a wooden cabin, with sweet-smelling cedar, indoor and outdoor showers, and a deck that opens to the mossy forest. The resort’s calendar is packed with activities, including bocce, wine-blending classes, and painting and photography workshops. Last year, the resort started offering guests a formal guided hike to Davis Estates Winery with a picnic lunch along the way. The pool area has earned numerous awards for its laid-back design. The on-site spa specializes in hydrotherapy with soaking treatments, while the property’s largest restaurant, dubbed The Lakehouse, overlooks Lake Lommel and serves a host of dishes made of all local produce. Try the halibut with piperade, carrot, fennel, and scallops.

    On the shoulders of Bali’s most sacred mountain is perched its Mother Temple, Pura Besakih, a complex of 23 sacred buildings. Several times annually, pilgrims flock here from around the island—on the backs of motorbikes, in buses and bemos, even crowded together, standing-room only, in the beds of trucks—to make offerings at the several clan temples (each family is part of a clan represented here) and at the largest and most important temple, Pura Penataran Agung, tiered and built into the mountain’s slope. Make sure to climb to the impressive second courtyard, which is as far as tourists are generally allowed to go. The complex is most alive during frequent festivals, when thousands descend, ceremonially dressed, and flow throughout the temple grounds. When the sky is clear, you can see from here down into the valley and out to sea.

Somewhat steep, this serious glute workout attracts a lot of trail runners, especially on the weekends. The ridge unfurls gorgeous views of Waimanalo and the Nā Mokulua Islands, as well as Rabbit Island and Koko Crater. Note: drivers have to park in a residential neighborhood, then walk up an access road. Start early to avoid the heat and crowds, and make sure to bring plenty of water.

    Le Bernardin, on 51st Street between Sixth and Seventh avenues, is one of the handful of New York restaurants that is regularly awarded four stars by the New York Times (it is also one of five restaurants in the city with three Michelin stars). Chef Eric Ripert’s specialty is fish, and the menu is divided into three categories: “almost raw,” “barely touched,” and “lightly cooked.” If you like your tuna cooked medium, this isn’t the right place for you. Ripert often finds his inspiration in Japanese cooking, with his sashimi and light broths, and adds some Latin American influences, in his ceviches and some other dishes. The fish is always allowed to take center stage, and typically any sauce is merely intended to accent its flavors. The dining room has an understated, contemporary style with light-wood walls and high ceilings. Unlike some celebrated chefs, Ripert has chosen not to build a restaurant empire, increasing the odds that on any visit he will be at Le Bernardin, presiding over its kitchen and dining room.

After some slouching in recent years, Brennan’s is back on culinary maps following a change in ownership (from one branch of Brennan descendants to another). Pro tip: It’s more famous for breakfast than dinner. Among the more noted dishes is eggs Hussarde, involving poached eggs and Canadian bacon served with both Marchand de Vin and hollandaise sauces.
