This iconic bar sits on stilts above the sea at the Hotel Bakoua in the sultry resort area of Trois-Ilets, just across the Bay of Fort-de-France from the island’s capital city. People don’t come here for the drinks (stronger and better can easily be had elsewhere). They don’t come for the snackfood, or to ogle the topless beauties on the shore either (okay, perhaps a few are attracted by the latter). No, instead they come for the vibrant sunshine, the spectacular views across the Bay, and the soothing sea current that massages those who wade into the waters surrounding the bar.

In recent years, one restaurant has set the bar for cool in Cabo San Lucas. Bar Esquina, the Bahia Hotel & Beach House’s on-site bar and grill, features a chic casbah-like design aesthetic, a menu built on Mexican and Mediterranean flavors, and a commitment to organic, locally and responsibly sourced ingredients you taste in every bite. The menu is ever-evolving, but there are standouts you can always expect to find. The tuna tartare is a tiered, artistic creation, featuring tempura and an avocado-yuzu mousse. The Caesar is the signature Bar Esquina salad, here wrapped in a long, flat crouton and served with poached egg and prosciutto. Entrée selections include a generous filet mignon with potatoes au gratin and the short-rib pizza with blue cheese and arugula.

Comprised of just 10 suites with distinctly different designs, Palácio Belmonte feels more like a dream vacation home than a hotel. The vibe is spot on, given the backstory: A Frenchman traveled to Lisbon looking for a vacation home in the Portuguese capital. He first saw the building from a taxi and thought to himself, “It has nine windows, just like my home in France. I’ll buy it.” It wasn’t until after purchasing the property that he actually set foot inside and saw just how enormous it was—far too large for him and his family. Thus, he set about remodeling the building (which was originally owned by a noble family in the 1400s) with the notion of converting it into a space for visitors.

Less than an hour from Guadalajara, Lake Chapala—Mexico’s largest lake—offers a relaxing respite from the big city. Visitors can enjoy drinks or a meal at one of the many restaurants on the pier, watch the sunset from a sandy beach, or rent a boat to the Island of Scorpions for a different view. To get to Lake Chapala, catch a direct bus—they leave every 30 minutes from Guadalajara’s Old Bus Central. The air-conditioned ride through the mountains of Jalisco takes somewhere between 45 minutes and an hour, depending on traffic, and costs approximately US$5 for a round-trip ticket. Once you arrive at the Chapala bus station, the lake is about a 10-minute walk away on the main street.

Set tight in the jungles around Hotel Casa Chameleon, at Las Catalinas, the restaurant Sentido Norte is 45 minutes from the Guanacaste provincial capital, Liberia. It had been years since I visited my relatives in Tucson. And now I’m wondering why it took me so long. It’s the land where Sabre-toothed tigers and Mastodons roamed as recent as 10,000 years ago. It’s the land of cacti, cowboys, and tarantulas. Athens is an incredible city to visit but can feel busy and overwhelming, especially during peak tourist season. A visit to the sleepy town offers the chance to explore some of the island’s most historic buildings far from the bustle of Oranjestad. At the end of mazelike streets, you’ll find two small beaches lined with a handful of low-slung hotels and restaurants. Blissfully remote, both stretches of sand offer excellent fishing and snorkeling. For something more adventurous, sign up for a kayaking or ATV excursion.
