    A kitchen dynamo whose energy belies her age of 77, Supinya Junsuta, aka Jay Fai, is chef-owner of one of the Thai capital’s most renowned shophouse restaurants—the eponymous Jay Fai—and one of the city’s most recognizable foodie personalities. In her trademark heat-resistant goggles, essential protection from a searing inferno of hot oil, she cuts a distinctive figure. And her fame and the crowds have only grown since the Michelin Guide judges gave her eatery Thailand’s first and only Michelin star for street food in 2017 (so much so that she has expressed a wish to give the star back). Her lofty reputation is founded on the alchemy she produces from her scalding wok, with stir-fries such as pad kee mao talay (drunken noodles with seafood) and other dishes like fluffy khai jeaw poo (crab omelet) and a complex tom yum goong (hot and sour shrimp soup) more than justifying the (relatively) steep prices.

    Located on the left bank of the Chao Phraya River, the Peninsula is one of the most consistently high-ranked hotels in the city, in particular for its attention to service.     For 20 years now, the Spring Mountain corridor north of the Las Vegas Strip has been a hotbed of hot pots—and every other Asian dish under the desert sun. When celebs such as Anthony Bourdain and Penn Jillette raved about the real-deal northern Thai cuisine at Lotus of Siam, chowhounds followed. Tell your friends you’re finally making the trip out to the strip mall and they’ll tell you to avoid the items you can order from the takeout joint at home: no pad thai, no chicken satay. They’re right. Dive into the last page of the menu, the one about dishes from Northern Thailand, then entrust your tastebuds to the award-winning hands of Chef Saipin Chutima and try her larb or the jackfruit curry, anything with ground pork sausage, the khao soi (egg noodles and meat in a coconut curry sauce), the nam prik ong (a chunky mix of pork, tomato, and red chili, served with lettuce and raw vegetables), or the whole fish with chilis. The food is spicy, yes, and the afterburn is serious, but the depth of flavor is sublime enough to make you weep with regret the next time you have to call your local takeout place for delivery.

    Tucked away above Mikkeller, a craft beer bar on a leafy backstreet, Upstairs has quietly established itself as one of Bangkok’s most exciting restaurants. Recognition of Korean-American chef Dan Bark’s skill came when French fine-dining bible Michelin granted the restaurant a star. Although functional and pleasant, the minimalist dining room gives scant notice of the elevated gastronomic experience provided by Bark and his team. A ten-course tasting menu changes regularly depending on the whim of the chef, featuring creative, unfussy dishes that Bark labels “progressive American” cuisine. If you are feeling flush, the best way to enjoy the food is to go with the beer pairing, which involves specially selected craft brews, cider, and mead.

    When he sold his jewelry company in 2007, Canadian expat John Hardy and his wife reinvested much of the money into the Green School, an innovative K-12 school in Sibang Kaja, Bali. The curriculum is very experiential—the international and Balinese students learn everything from aquaculture to Balinese puppetry. Named greenest school of 2012 by the U.S. Green Building Council, the school is worth a visit if only to see the far-out architecture. Many of the complex buildings are constructed entirely of bamboo.

    If you only see one temple in Bangkok, make it Wat Pho: home of the largest reclining Buddha in Thailand. The 141-foot-long statue is an artistic masterpiece plated in gold leaf and inlaid with mother of pearl. You could easily spend all day wandering the grounds, looking at reliquaries, visiting the massage school, and admiring the 400 statues of Buddha in the outer cloister—each posed and sculpted slightly differently. Before you leave, drop some money in one of the 108 begging bowls (one bowl for each of the characters of Buddha). The money goes to maintaining the Wat and the gift will bring you good luck. That seems like a fair trade.
