    With a great atmosphere and a packed room of locals, if you’re in the mood for Vietnamese food, you won’t go wrong here. Some swear by the pho and others by the gloriously crusty banh mi sub sandwiches, which come heaped high with grilled pork, herbs, salad, and a few slices of chili to add heat. And if you’re feeling greedy, I say do both.

    Flee the crowds in central Chinatown for an authentic and inexpensive Vietnamese or Thai meal on Baxter Street, which is lined with several eateries. Here on this quiet side street, no-frill restaurants are filled with locals enjoying flavorful “pho” beef noodle soup, summer rolls, barbecued pork and other specialties. The smell of mint, basil, and jasmine rice hits your senses when you walk in the door. Not much to say about the decor, but service is quick and a huge bowl of steaming pho noodle soup averages $6 or $7. Restaurants include Nha Trang One, Thai Son and Pho Pasteur. If you are looking for “xiao long bao” or savory “soup dumplings”, try Joe’s Ginger on nearby 25 Pell Street.

    The Mandarin Oriental was an early arrival to the Sanya beach boom, and their Sunset Bar is a fantastic place to have drinks in the evening. It has a huge open space with a stunning view of Dadong Bay; it really is the best place in town for sundowners. The cocktails are surprisingly good—try the mojito—though they hit the wallet pretty hard. For non-drinkers, they advertise a full high tea in the afternoons. I just love those little cucumber sandwiches with the crusts cut off.

    Jade Bar regularly tops the local “Best Of” lists for places to drink. It’s a modern, cocktail-focused bar with sips like the Old Fashioned Whiskey, bourbon, simple syrup, bitters and citrus oils, and the Honeydew Liverthump made from gin, fresh lemon and honeydew juice, and sliced cucumbers, among other things. It’s the kind of place where bartenders are called mixologists and it actually means something. For a drink with a view, take it outdoors to Edge, the fashion-forward patio bar that juts out just below Elements restaurant.

    Donald Link’s “swine shop” (part wine bar, part butcher, part sandwich spot) is a meaty addendum to the Cajun chef’s pork-centric Cochon (around the corner). You can’t go wrong with the always-on-the-menu muffaletta or the pork belly on white bread with cucumber-mint salad and chili-lime aioli, but, on my most recent visit, I opted for the Gambino. Link’s take on the classic Italian sub is a serious undertaking with three types of house-cured meats—coppa, cotta, and soppressata—plus arugula and a herby vinaigrette on perfectly crunchy ciabatta.

    Deer Park Monastery is tucked away in the hills of Escondido and is based on the Buddhist traditions of the famous Vietnamese Zen Buddhist monk, Thich Nhat Hanh. It is a sister monastery to Plum Village in France, where Thich Nhat Hanh resides. The monastery accepts visitors and has a variety of events, such as community work days, where you can come and donate physical time. There are different types of retreats, you can come for either a day or up to several weeks. Tip: Check the website to see when there are special events.

    Who has the best banh mi? That’s a question that could be debated endlessly - but Saigon Deli, in the International District, is a strong contender. For just $2.50, you get a fresh, crusty baguette stuffed with meat or tofu (the BBQ pork is especially good), pickled veggies, cilantro, and jalapeño peppers. The deli also offers hot Vietnamese food, pre-made spring rolls and hombao buns, and assorted Asian snacks and sweets. Great for picnics or an on-the-go meal while you’re exploring the neighborhood, and one of the best deals in town.

    Despite its sobering focus, this museum that looks at the devastating effects of the Vietnam War—known locally as the American War—is very popular. Displays of military equipment and defused ordnance outside the main building are reminders of the huge number of weapons employed during the conflict; they also prime visitors for the powerful exhibits inside. The most disturbing of these are the many graphic photos displayed in galleries that highlight seminal moments of those years (including the infamous My Lai Massacre) and the catastrophic effects of the chemical weapons that were used against the Vietnamese.

    There’s a pleasing bit of cognitive dissonance happening at Meliá Hanoi. Housed within a green-glass, part-cylindrical tower, the hotel tempers sleek European-style hospitality (think streamlined gray and cream furnishings and high-tech amenities like flat-screen TVs and satellite channels) with touches of local influence: depictions of pagodas and traditional gateways figure in giant murals along the walls and central column in the lobby, and lantern-inspired pendant lighting hangs in the guest rooms. The hotel sits in theHoan Kiem district, within walking distance of the lake and the Old Quarter, making it an ideal base for urban exploration, but there’s also plenty on site to keep you occupied, from the Mediterranean buffet and the palm-fringed outdoor swimming pool to the fitness center and Marquee Club, a nighttime haunt that attracts young Hanoians intent on drinking and dancing into the wee hours.

Once back in Hawaii, he opened the upscale Lineage in Wailea, where he’s earned a loyal fan base for dishes like kimchi dip, fried turkey tail adobo, and squid luau with creamed taro leaf. Cocktails here are equally creative, ranging from a mai tai made with banana milk punch, Earl Grey tea, raisins, and coconut to a cucumber vodka number garnished with huli huli chicken skin. Whatever you order, be sure to pair it with the chili pepper water, a condiment and digestive aid that’s served in a take-home flask.

    At this rooftop bar on the South Coast Highway, guests can pair breathtaking ocean views with well-made cocktails and delicious bites. There’s also nightly live music and plenty of high-def TVs throughout the space, making this the perfect place to party the night away or simply catch a game. Drinks range from craft beers and 22 wines by the glass to specialty cocktails like cucumber-jalapeño margaritas, while the food leans Southern, with options like gumbo, butter brisket, and jambalaya. Check the website before you go to see who’s playing that night; it could be anyone from a local DJ to a ’90s rock cover band.

That said, this is Prague, so although the food and presentation are comparable to other first-class dining experiences in Europe, the vibe and the service isn’t stuffy at all. At La Degustation Boheme Bourgeoise, the ingredients sourced from local producers, are based on the recipes penned by the famous 19th-century cookbook writer, Marie B. Svobodová, author of Cookery School. The eight-course menu is punctuated by interstitial amuse bouches and paired with Central European, French, and Italian wines, as well as cucumber, sour cherry, and red currant juice; recent menu courses include beetroot with licorice goat kefir, kohlrabi with whey and nutmeg, and duck with pear and cinnamon.
